For those wondering why it is not Pad Thai:
- you need to use palm sugar instead of granulated sugar. Also need lime to add the sourness supporting tamarind sauce.
- missing ingredients are: dried shrimp, chili flakes, banana blossom, chives, sweet takuan (kinda optional)
- you need to cook the Pad Thai sauce (tamarind sauce, palm sugar, fish sauce) separately. Cook the noodles first with the ingredients, then add the sauce.
Dried shrimp is actually optional but yes i agree with the Palm Sugar,chili flakes,chives and banana blossoms
I wonder if the wok needs to be a bit hotter to get that kinda smoky flavor.

The thing is, Gordon is a master of cooking high class western food. Their seasoning, cooking technique, the way they plate the dish are completely different to other traditional Asian food. The Thai chef is completely right, nothing wrong with his comment on Gordon's Pad Thai. I mean Gordon's Pad Thai probably tastes very good, but cannot call that Pad Thai. Just like people complain about someone else's pizza is not pizza, because it is not a traditional pizza.

Well he did say he made his pad thai dish for his family even though it suited his taste-bud. I do have to say some people or the people of Italy do complain nor like pineapple on a pizza. Since they believe it doesn't belong on a pizza. If you give a pineapple pizza to an Italian person. It's like a huge insult.
You know for spanish people gordon ramsey make a sacrilege cause he made a chorizo paella and spanish ppl would never put a chorizo into a paella. So the asian chef face will look like mine when he present the chorizo paella by gordom ramsey.. so its not about asian or european skills is just about to follow at 100% traditional recipes and you will not get an angry face like that.

As a Thai, trust me that Thai chef was right. We have so many style of stir-fried noodles here in Thailand. Many are very close: such that pad thai, Pad Sen Chan, and Pad Mi Korat, which these three are all sweet, salty and sour at different degree uniquely to each one. And the main difference in these three dish is in what ingredients you put in them like chili(dry/fresh/paste) and other things e.g. pad thai usually has shrimp and tofu, Pad Sen Chan has crab but rarely shrimp and not tofu, or Pad Mi Korat has pork and sometimes tofu.
Also, we do have more fried noodle like Pad Mi Kathi, Pad Si-ew, Pad Mi Sua, Yakisoba, etc.

Our cuisine is one of the best. Definitely up there with Italian, and French cuisine. Cooking is an art, and each culture has honed their own take on it to near perfection.

If you closely watch his reactions; facial microexpressions if you will, I think all would see that he has what looks like a disgust reaction, that he then tries to supress. However the corners of his mouth stay down until he starts to talk.
It is normal to react this way when food tastes different then expected. The food probably doesn't taste bad, but since he expects what he calls pad thai=> disgust reaction.
This is my 2nd favorite dish in the world, and it's very hard or impossible to find some key ingredients fresh in Europe. I've tried like all Thai restaurants in my city and nowhere does it taste like a random street restaurant anywhere in Thailand.

Even still, most Americans would find it hard to recite one line of the constitution. Even things that are considered common knowledge about the country some residents have no clue about. Nice honest reaction from the Thai Chef. Yeah, but I don't get how Gordon fans can't see that he was adamant on his own version being correct when he goes around SEAsia doing their dishes. Yes, he did get some of them right, but he also makes the mistake of 'personalizing' it from the getgo which loses the essence of the dish that he is making.
Part of why I think Kitchen Nightmare wasn't exactly gonna succeed because he basically converts them into mini Gordon Franchise chain of each dishes without turning them into the best of their own supposed essence and flavours.
Don't get me wrong, Gordon Ramsay is a great chef. Each chef has their own speciality and limits too. His pride is at that level that he didn't exactly seem to understand what the Thai chef is trying to say. Putting pride aside, he would have asked about what or how did he go wrong instead of insisting that he did fine.
It's like maybe that one ____ aunt (insert nationality other than Japanese) that cooks really delicious 'Japanese Gyoza' for the past 20 years, you head out and actually finally had real Japanese Gyoza which turned out completely different. Then you realize yeah, my aunt doesn't cook Japanese Gyoza but it's a delicious piece no doubt and the name's gonna be XY Aunt's Japanese Gyoza forever. Instead of insisting that the Japanese doesn't know their stuff, they don't know Gyoza like my aunt.

You haven't seen any Kitchen Nightmares, do you? It's always the same: Gordon gets called to a shitty restaurant, that is going down due to shitty cookery (most of the times). Gordon then orders some samples, tastes it and most of the time it is bland, raw, etc. Gordon tells the chefs about it, they don't get it, because they think, that their cookery is fine. (Which it isn't, otherwise these restaurants wouldn't go down, so...). Just watch some of those episodes. You'd be entertained, disgusted and scarred for life. xD
Actually, it’s not the first time he’s been criticized on his cooking so this was an exception. He didn’t act like this when he was trying to make sushi, noodle pulling or the like so I think he honestly thought it was good.

Mauger Nicolas the color is too bright, which means not enough tamarin pest so it's probably not sour enough. I don't know how he made that tamarin pest, but it looks too thick. He also puts too many sugar in it. The sweet and sour in pad thai mostly comes from tamarin mixture. It provides different kind of sweetness, so his pad thai might taste a bit weird to thai people. I agree that it might taste ok, but it looks very different from authentic pad thai. I think that's what the thai chef means.

I like that the Thai chef was authentic to his roots and didn’t buckle under Gordon Ramsay’s pressure.
The Thai's are masters with food-they somehow transform basic, yet high quality ingredients into something magical. They have a lot of respect for food over there.

The chef said it's not Pad Thai, it doesn't mean that it's bad. It's probably good food, but maybe the flavours aren't strong enough for it to be deemed as "Pad Thai" by the chef's standards.
I love watching Ramsay and I think he's a great chef but he was way too cocky. He was making an excuse by saying it's good and the chef was being nice to him but he failed on the dish.

He puts too much sugar in it. The sweetness of pad tai comes from tamarin pest as well as sour. I can see the color is too bright, so it has not enough taste for thai people. Don't blame him tho, people from different region have different taste. His pad tai might be better in british opinion.

His character in them is to be an asshole, he is very good act acting like one. In this show though, he is going around and LEARNING how to cook new dishes. He is not very good at Asian dishes, it's probably his worst skill set. He is very humble about it when they say it's bad though.
