At 5:17 when he told Gordon “everyone said the food is excellent” and he responded “did they?” And he went on to say yes and you see Gordon wipe away tears of happiness and gratitude. You can tell where ever he travels and cooks local foods and when he serves it to the locals he wants to please but also to do justice not just to the food but to the locals. He really cares and that short moment made me smile. Thanks Gordon no matter where you go the fact your willing to learn and serve the locals of each region you travel to I’m sure is greatly appreciated.

I love how Gordon is a Michelin Star Chef and is still ready to learn. The way he looks for people's judgement on his food shows how humble he is. There is no reason for him to prove himself or wait for anyone's judgement on his food, he has made it yet he is ready to improve and learn.
i can swear to you as someone who worked at michelin star level cooking, he felt no pressure like this before
I think when it comes to presenting regional dishes, most professional chefs are willing to learn. Making regional dishes for the local isnt only just cooking but also to appreciate the culture, the place and the people where the dishes are coming from.

Congratulations for the success. It's really difficult to beat street food taste. Though it's not healthy, but it's surely tempting. Also curries, as street food, are more part of North so you must challenge yourself for other region street food also.
If youre an outsider/foreigner, and local people praise your interpretation of local food, thats one of the highest things a cook can achieve and one of the biggest compliments he/she can get.

I’m so glad that one of the greatest chefs in the world is giving shoutout to North-east cuisine of India which I feel is kind of overlooked in the country itself. Thanks Gordon for your Kolkata street cafe and I hope people in India even though sometimes do not bond because of languages and other barriers, they bond over food in our country and appreciate the gift of having several unique cuisines within the nation
I would previously have said that I term that east-Indian, but, I'm Euro and really just go to places that are specialized in regional dishes.
A big favorite of mine there is Behari Boti Kebab, which I would call North Eastern. That dish done well... marinated for nearly a day, slow cooked for about half a day, so many layers of spices.. is just. bliss.
