Biscoff Cupcakes| With Lotus Biscoff Spread Filling!

Biscoff cupcakes filled with Biscoff spread and topped with Biscoff cream.
Biscoff cupcakes:
Ingredients: Makes approx. 24 cupcakes, 12 muffins
Biscuit Base:
100g Lotus Biscoff Biscuits
20g Melted Salted Butter
Cake Sponge:
200g Salted Butter
200g Caster Sugar
4 Large Eggs
200g Self Raising Flour
½ Tsp Baking Powder
2 Tbsps Milk
Filling:
12 Tbsps Biscoff Spread (Can be adjusted according to taste)
Biscoff Cream:
284ml Double Cream
1 Tbsp Biscoff Spread
1 Tsp Icing Sugar
Optional For Decoration:
Melted Biscoff spread
Biscoff biscuits halved
Method:
1. Preheat the oven to gas mark 4.
2. Line a tray with cupcake cases.
3. Place the Biscoff biscuits into a clear bag and smash into tiny pieces.
4. Transfer the crumbs into a bowl and add in the melted butter. Mix well and place 1 Tbsp into each cup case. Press down well with a back of a spoon and leave aside.
5. In a separate bowl beat the butter and sugar together for 5 mins.
6. Add in half the eggs and beat well, add in the remaining eggs and beat for 1 min.
7. Add in the flour and baking powder and beat for 1 min.
8. Next add in the milk and beat the mixture for 2 mins.
9. Add the cake mixture evenly into each case and bake for 20 mins.
10. Take out of the oven and leave to cool for a few mins.
11. Using an apple corer create a small hole in the middle of each cupcake.
12. Fill in with Biscoff spread and leave to fully cool down.
13. In a bowl beat the cream, add in the Biscoff spread and icing sugar and beat until thick peaks form.
14. Pipe cream on to cupcakes and drizzle with melted Biscoff. To finish off place a Biscoff biscuit on to each side of the cupcakes.
