  • This is a must try Biscoff cupcake recipe for all the Lotus Biscoff lovers. It’s so delicious without doubt. Layered with butter biscoff cookie base, moist cake, biscoff spread, biscoff cream, biscoff SMBC, drizzled with biscoff and topped with crushed biscoff cookies and half of a biscoff cookie. It's all Biscoff and yet the Biscoff taste is not too overwhelming.

    \\ Ingredients (yield about 15 cupcakes) (cupcake size 5cm diameter)
    (for cake)
    175g self raising flour
    140g castor sugar
    35g brown sugar
    1/4tsp baking soda
    1/4tsp salt
    175g butter
    2 whole eggs
    1 egg yolk
    30ml full cream milk
    (for butter biscuits - base)
    120g lotus biscoff cookies - crush
    30g butter - melted
    (for filling)
    70ml heavy cream
    50g lotus spread
    (for buttercream)
    120g egg whites
    135g castor sugar
    270g butter (cold)
    1 1/2tsp vanilla essence
    100g lotus spread

    this is by far the best biscoff swiss meringue recipe ever. used this recipe for the cupcake too for the last 3 years and it always turns out so perfect!

    if i dont have STAND MIXER to do swiss meringue buttercream , can use hand mixer ?

      I never tried hand mixer bt im sure can bt it wld probably take longer as long as u know the right texture as in when to add butter and how long to continue mixing.

      Plain flour or cake flour + 2tsp baking powder.

    These looks yummy! Does the buttercream taste more sweet with the biscoff spread?

      The buttercream sweetness level is moderate but if u want, u cn reduce sugar slightly or omit the filling of the cupcake so it will be less sweet.

      Try 135g castor and 30g brown. Im nt sure how it goes tho but i think this shld still be ok 😊

      Kalau kek biasanya mmg manis ape lagi kalau dgn krim dan toppings. Budak2 biasa suka tp kalau yg berumur sikit kalau mkn, mcm sy, slalu buang krim 🤣🤣 Tp kalau awak nak kurangkan manis sikit pun boleh. Dari resepi kek kurangkan gula dlm 10-15 peratus. Dr resepi buttercream pun boleh kurangkan. Atasnya jgn taruk spread lagi kalau dlm da ade filling. Atau kalau awak tk nak buat filling, boleh jg 😊👍

      In room temp, as long as its not under direct heat or direct sunlight then its ok. If put in chiller keep in cake box or container.

      After u made and decorate the cake, keep in chiller first to cool. Before serving, its ok to keep in room temperature for the day.

      @@Abc-lk6zy im not sure if can leave it in room temp tt long, 12 hours so long, but if like leave it for few hours for party or smthg like tt during the day it shld still be good. I think like 4-5 hrs or so shld be ok coz may affect the taste.
