I separate the eggs and beat the whites until they are somewhat stiff and fold them in skipping the baking powder. Same taste with the discard but a bit fluffier.

I had some discard and decided to give this recipe a try. It is DELICIOUS. I threw in chocolate chips on a few for breakfast and hubs used 2 plain ones to make a ham and mozzarella sandwich. Definitely a keeper. I also use discard to make crumpets, which we all love.

I used the batter for pancakes, and I can say these are possibly the best I have ever made. Like you, for this mix I had just under a 1/2 cup of starter, so I backed off a little on the other ingredients - I think I got it just about right. As for rising, discard is almost fully fermented and very sour. That means that the yeast is mostly gone and bacteria content is high. Not much lift no matter how you cut it
I've been baking sourdough bread for a couple of years now and am now waiting for my waffle iron to arrive. Since I use sourdough starter which brings its own acid with it, I dont find that I need the acid tang of buttermilk. That said, give it a try and see how you like it! I'm always up for experimenting. ;)
Why doesn't my dough in the morning look like yours? Mines got bubbles but yours looks fed, mine looks runnier. I took the batter outside, I live in Florida, the heat worked wonders. Just made 16, 9 left. Great success. Thank you for recipe.

Buttermilk is great! I just dont keep it on hand as often as I do regular milk, and I haven't seen a significant difference between using one over the other.

Hi Nicole. I’ve been making waffles & pancakes since my Granddad taught me when I was a boy (I’m 56 now). It’s never even occurred to me to use starter discards, so thanks so much for that. For waffles, I separate the eggs and fold in the fluffed up whites. Do you think it might make them a bit to airy with all the extra bubbles going on?
How is your sddiscard so thick? Mine is a lot runnier taken straight from fridge. Did you feed starter and then discarded at peak, and then using discard asap? Waffles look so amazing, will have to try :)
I'm certainly not food scientist but I'd guess, and personally wouldn't worry, that all the lactic acid in the starter would inhibit any nasty bacteria from growing 🤔
I just tried the recipe this morning as stated. I was very surprised by the volume that this produces. The flavor however is not what I thought, it's not terrible but there are better recipes. the only other thing I could say positively about your waffle is its light and airy.

Yes, I add cinnamon when I do my cocoa variation: 2-4 tablespoons of cocoa powder, 1/2 tsp cinnamon, 2 TBSP of maple syrup.

I think they would taste delicious, just probably a bit denser than with wheat flour which make quite a fluffy/crisp waffle.

Instead of using milk I use buttermilk in my waffles. I took a sourdough pancake recipe and changed it to my own taste.
Buttermilk is great! I just dont keep it on hand as often as I do regular milk, and I haven't seen a significant difference between using one over the other.

About a quarter cup. But you might need to counter that bitterness with a bit of sweetness -- like a hearty glug of maple syrup.
