I made these for the first time and doubled the recipe. They are amazingly delicious and smell so good! A double batch made about 50 waffles in my mini round waffle maker. We froze them. So happy to find this recipe. No sugar needed. They have a sweet taste without it.

I had some discard and decided to give this recipe a try. It is DELICIOUS. I threw in chocolate chips on a few for breakfast and hubs used 2 plain ones to make a ham and mozzarella sandwich. Definitely a keeper. I also use discard to make crumpets, which we all love.

Well, it has taken me about a year (since I discovered your recipe) to make these. Never too late, I always say. I used the batter for pancakes, and I can say these are possibly the best I have ever made. Like you, for this mix I had just under a 1/2 cup of starter, so I backed off a little on the other ingredients - I think I got it just about right. I had two big ones, and now there is a short stack going into the freezer! Toaster Pancakes.. Mmm. Thanks for sharing.

Hello! When you add Cocoa powder, how much do you use?

About a quarter cup. But you might need to counter that bitterness with a bit of sweetness -- like a hearty glug of maple syrup.

For the first 5 times, I made unbelievably crispy waffles with this recipe, then the last 2 times the waffles were dense and just like a normal waffle. My discard didn’t change. I think I over mixed the time before so last time I under mixed and it was still dense. Please help!!!

I noticed you didn’t add sugar. Would it be wrong to ad a couple of tablespoons or does it not need it?

You can absolutely add sugar! If my discard is a little on the sour side, I do this too -- maybe a TBSP or two.

Is that discarded flour, unfed? Or do you feed it first? I am so confused and stifled by fear. 😮 And with 3 separate sourdough experiments going on simultaneously, I am totally lost and spinning out!😂😢. Help!

Wont the milk in it go bad from sitting out all night?

I'm certainly not food scientist but I'd guess, and personally wouldn't worry, that all the lactic acid in the starter would inhibit any nasty bacteria from growing 🤔
