Sourdough Discard Waffles Recipe! No Wait!

  • Learn how to make sourdough discard waffles with my easy recipe! If you have excess sourdough starter sitting around, don't throw it away! Transform it into some delicious waffles. I've got 2 methods for you: one that uses extra flour and buttermilk, and the other that uses ONLY sourdough discard for the base!
    If your starter has gone quite a bit too long, I would recommend the first method. If your starter is a little more fresh, the second method will work wonderfully!

    INGREDIENTS:
    Method 1:
    1 cup or 240 grams of sourdough discard
    1 cup or 230 grams of buttermilk (quick tip - you can mix together ¾ cup of plain yogurt with ¼ cup of milk to make a buttermilk substitute)
    1 cup or 120 grams of all purpose flour
    2 tablespoons of sugar, maple syrup, honey, or sweetener of choice
    6 tablespoons of salted butter, melted
    1 large egg
    1 teaspoon of pure vanilla extract
    ½ teaspoon unrefined sea salt
    1 teaspoon of baking soda
    Method 2:
    2 ½ cups or 600 grams of sourdough starter
    2 tablespoons of sugar, maple syrup, honey, or sweetener of choice,
    6 tablespoons of butter, melted
    2 large eggs
    1 teaspoon of vanilla extract
    ½ teaspoon of unrefined sea salt
    1 teaspoon of baking soda

    Delicious waffles! I didn’t end up fluffing the egg whites separately and they were still crispy and light! Made 5 Belgian waffles total. Next time we’ll probably double the recipe ☺️

      Yes, I totally forgot that step and mixed. I wanted to fluffy the egg whites, too. These came out soooo good. Fluffy and crispy! Thank you.

    On the first method you rested the batter for 30 minutes. Do you do the same thing on the second method? Thank you for making this video very instructed.

      You don’t need to for the second method since the starter has already “rested” for hours/days!

    It’s nice to melt the butter and maple syrup together and then pour them both on the waffle to keep everything hot.

      I just made waffles last night and thought that melting the butter would be nice. Genius idea to add the maple syrup as well!

      @@ButteredSideUp …it’s easy to heat them in the microwave but be careful to do it only like 10 seconds because things with sugar like syrups and jams boil almost instantly. Enjoy.

    So confused. I tried method 2 and it’s pretty much all discard. No flour? Unfortunately it was awful and wouldn’t even fluff into a waffle.

    A bit misleading saying it’s “No Wait” in the title. I was following the first method and you instruct to “wait for 30 minutes” my kid is hungry lol I don’t have 30 minutes
