    My mother-in-law years ago taught me and if you put a little, honey sugar or syrup and your pancake mix your pancakes a better browning effect, which would taste better. Food for thought.❤❤

      😂true my mom is the same way she puts vanille and sugga in it. So im the same with one different i use sourdough. She dont like the bread 😢

    First time viewer here. This video popped into my feed likely because I’ve been watching a lot of sourdough focused videos. Not one of them mentioned the rye flour as a way to get a starter going. I am definitely going to give it a try. I am not always good about keeping up with a starter and then am discouraged by the time it takes to develop a new one. I’m also very intrigued by your once a month sourdough baking plan! Anyway, thank you so much for sharing. I will be checking out your other videos as well as the recipes and books you mentioned today. AND might I add, your stove is amazing. ❤️

    Thank you for showing and explaining your sourdough process. Too many people skip over the starter phase. I love rye sourdough bread from Germany and the Middle East. I hope to invest in the Austrian mill for my birthday !

    I've been searching for someone who uses only wheat berries to make sourdough. I have not tried it yet as I am intimidated by this process. Thank you for sharing.       I've heard whole wheat is scratchy and doesn't allow for great rising in starter. Something about it cuts the gluten? Maybe research this.

    I feel blessed to be inspired by you! I love home routines, and have been wanting to get into monthly baking again. Usually I do weekly, but maybe monthly would be less work in a way and free up some time! I’m loving how you and your husband make a date night out of this. My husband wants to learn to make bread, so I think we will give this a try! ❤

    Rye is the only grain to feed a starter! Goes ballistic, keeps starter well fed longer. I rarely see hooch when i feed and store starter in fridge in-between uses.

    Yeeeaaaasss!!!! This! This is exactly what I need. I had a 2 year old starter that I was tired of maintaining and then it finally grew too much mold and I couldn't salvage it. It was a relief to get a break from it. Honestly, it's really not that hard to maintain, but we've been decreasing the amount of bread products we consume, so the system I had going just wasn't working anymore. So thank you for this look into your sourdough life!

      You can freeze the starter. It comes back to life when you thaw it and feed it with a whole wheat or rye flour.

    I use my starter from every week to every month & it always comes back just fine. I only keep a few scrapings on the sides of the jar so the day before I'm going to bake I feed it exactly what I need for my recipe. Never a problem. Video was great!

    Sourdough waffles are really delicious and simple to make if you have a waffle iron for your cooktop. I make them once a month between batches of bread. They freeze really well too.
    I like how you divide your labour for this task. I could refine my baking schedule to do it all once a month too.

      @FromScratchFarmstead both the manual (on a hot element/fire) with long handles, and the electric waffle maker I have were from second hand shops for next to nothing. I didn't know how much I'd like sourdough waffles until I tried them.

    Thank you for this simple routine video. I am hoping to start my sourdough bread journey soon and have always felt so intimidated to do so. Also, because we are a big family always feel like I have to make SO much of everything ( I am amazed 2 loaves of bread is enough for a month for your family....feeling like this routine would be good for us on a bi-weekly schedule once I get the hang of it).

    I've had the same success with my starter using regular all-purpose unbleached flour. I keep it in the refrigerator for months at a time before I use it again. I just stir in the hooch that's on the top and feed it and I'm back in business.

    OK sweetheart I’ve just found your videos watch several and enjoyed each and everyone. Hats off to you that you’re doing everything possible yourselves to provide for your family a healthier life. I couldn’t help but notice that you pack your baby on your back a lot. Your baby won’t be able to develop properly without crawling pulling up and walking. His muscles won’t develop properly. If you can’t keep your trial at bay. It feel a good idea if you get a plague pan that way at least he’ll be able to play entertain yourself not the things around him besides your back and pull up and set up. I hope you don’t take offense to what I’m saying no offense intended, but I’m older and I’ll feel like what I’m saying deserves some food for thought at least. Please consider I think you find it very enjoyable and safe for you and your baby both.❤❤❤❤ty

      Thanks for sharing! I totally agree. Babies being on the floor is so good for them! Filming really is only a small part of our everyday life, but it gets tricky at her age with tripods and equipment that we don't want her to knock over. She gets lots of time on the floor and is super active and strong! :)

    Blond Brownies! I grew up with a mom who spoiled us with those wonderful chocolate chip treats!
    Mom cooked and baked ... I was not interested - - well, guess what! I am FINALLY interested. LOL Life works out that way sometimes. It only took sixty years, but when one is beyond horses and cattle, cooking it is!

    FYI, For bread freezing, I lay the slices out flat on a sheet pan and freeze individually, then pack into a freezer bag for storage. The slices don’t stick that way.
    At the time of this video, you obviously had very young children, bc when we had 4 kids, there was no way that one 12” pizza would have been enough for all of us. When our 4th was born, our other kids were 11, 6, and 1-1/2. Even our toddler ate a full slice of pizza at that age!

    Thank you for this video.
    My biggest concern had been waste if I go to sourdough starter.
    I love your Mill. I was hoping to choose a Komo or NutriMill for not just the wood exterior, but for the ceramic grind stones, but we just bought a WonderMill (which has steel and crushes versus grinds) to start milling due to lesser cost, but I hope eventually for a hand grinder from Lehman’s. It will be an investment.

    p.s. I forgot I wanted to make a comment about your Aga stove. I noticed that many who choose to live a more relaxing and wholesome lifestyle, choose the Aga.

    I’ve left my sourdough in the fridge for over a year and drain the hooch off and feed a few times and it’s good to go and I’ve never used rye flour.

    I have also found rye Tobe the easiest and most forgiving starter.
    I love no discarding.
    It is just my husband and I at home now.
    This sounds like a great way to get back into making sourdough after hurricane Laura 3 years ago sidetracked our lives❤

    An extra step but you can slip a piece of parchment between the bread slices and they separate very easily.

      We go between 4 and 12 hours depending on if we are feeding during the day or overnight but anywhere in that window should be fine!

      For the cookie bars I did
      1 cup sourdough starter
      2 cups flour
      1 1/2 tsp baking soda
      1/2 tsp salt
      1 cup butter
      3/4 cup brown sugar
      3/4 cup cane sugar
      1 tsp vanilla
      2 eggs
      1/2 cup oats
      1.5 cups choc chips
      Cream butter and sugars, then add eggs and vanilla. Add in dry ingredients. Then add oats and choc. chips. Spread into a greased 9x13 pan. Bake at 350 for 30 ish minutes.

      It was more of an experiment but they turned out really yummy!

    @FromScratchFarmstead I have a burning question for you: How do you keep weevils and other grain pests from consuming your grain or getting loose in the house or ending up as part of your ground flour?
    A few years back, I had a bag of beans from a CSA. I had to have a serious surgery and wasn't in my kitchen for the better part of two months. During that time, something hatched among the beans and invaded every corner of my kitchen. It was a hideous mess.
    I love backing and have considered Azure Standard. I just don't want weevils running the show in my house.

      We've always gotten it from Janie's Mill because they are local to us. I'm thinking about trying it from Azure standard next time though, they do have better prices.

    Maybe every other week have a different dish instead of pizza so you can guilt free enjoy 2 pizzas on pizza night but maybe breakfast for dinner or something easy on the opposite week! 8x batch of pizza dough does sound intimidating!!

    Did you like the cookie bar recipe? If it turned out can you share? Also what wheat berries do you use for the deep dish pizza? And for your bread?

      Hi! We did like them! For bread and pizza crusts we do a 50/50 blend of Glenn (a hard spring wheat) and einkorn.
      For the cookie bars I did
      1 cup sourdough starter
      2 cups flour
      1 1/2 tsp baking soda
      1/2 tsp salt
      1 cup butter
      3/4 cup brown sugar
      3/4 cup cane sugar
      1 tsp vanilla
      2 eggs
      1/2 cup oats
      1.5 cups choc chips
      Cream butter and sugars, then add eggs and vanilla. Add in dry ingredients. Then add oats and choc. chips. Spread into a greased 9x13 pan. Bake at 350 for 30 ish minutes
      It was more of an experiment but they turned out really yummy!

    Do you ever use white flour to make your sourdough? If so, what grain would you use?

      We haven't used a white flour. Always a mixture of a hard red spring wheat with einkorn or sometimes spelt flour. Thanks for watching!

    When you say you feed your starter three times before using do you feed it three times all at the same time or throughout the day? Thank you for all the information! I'm looking forward to using my sourdough starter.

      Good question. Throughout the day. So if we start it on Friday night, we'll feed it that night then again on Saturday morning, and a third time after lunch on Saturday. It will be ready to use by Saturday evening. Hope that makes sense! Happy baking! :)

      We typically end up using about 7 cups total, but I always like to have some extra on hand. Start with 4 in the bowl with the rest of the ingredients and mix in about a half cup at a time until you hit the right consistency. Thanks so much for watching!

    When you say you pull it out of the refrigerator and feed it three times, does that mean you have to wait three days before you start using it?

      Hi! Nope, we let it ferment for around 4-8 hours each time. So, I'll pull it out and feed it at night. The next morning I'll feed it a second time. At lunch time, I'll feed it a third time and then we are ready to use it that evening. For us it's usually about 24 hours from when we pull it out.

    How do you start the starter for the first time with the rye flour?

      Just use equal parts rye flour and water and keep adding. It would be the same as starting any sourdough starter except using rye flour instead of wheat or all purpose. I followed the directions in the book The Art of Fermentation and it worked perfectly!

    Great video! i have a hand crank mill but now I want to get an electric one. I'm going to start freezing my bread now. What's the best way to thaw it or what do you do?

      Thanks you! We freeze it in slices and just pull out the slices as needed. They thaw quickly that way and perfect for making toast or sandwiches. We've never tried freezing a whole loaf.

      ​@@FromScratchFarmsteadI freeze whole loaves. Pull out, thaw, slice and refreeze. This allows me to bake less during hot summers. If you wrap it really well it lasts at least 3 months in freezer.

      Good question! With using freshly ground whole wheat, we've always gotten more of a dense sandwich bread. I wouldn't call us sourdough experts at all but we don't mind the more dense loaf. Thanks for watching!
