Marvelous Mediterranean Lentil Salad--gluten & oil free

- Loaded with Mediterranean flavors this tabbouleh-like salad is perfect served with pita chips, as a main course with pita pockets & roasted tofu, as a side dish, or topping a green salad.
The smaller the dice of the vegetables, the more like tabbouleh will be the outcome. I prepared it with this Tahini Mustard Dressing below. Feel free to use your favorite lemon/garlic vinaigrette-type salad dressing.
I used the dressing recipe below, but used only 1/2 cup water to make it thicker.

Hi Nan I just wanted to tell you that the first time that I heard your washing machine play that little tune I thought it was my washer or dryer which plays that same tune. And I started to get up and check the machine’s although i didn’t think that I was doing laundry. I had my EarPods in and asked my husband if he heard the tune. Thank you Nan for the wonderful recipe. Of course, such a vegetable salad is always in my fridge for breakfast and dinner. The addition of the lentils greatly upgrades it with healthy protein and the addition of a divine tahini dressing.😍

Hi Nan! Thanks for sharing the recipe! Super delicious! Sometimes l like to swap the lemon zest with sumac. It has a real nice citrusy zest flavor to it as well.
Sumac has a long list of health benefits. Some include, being rich in antioxidants, high in vitamin C and anti-inflammatory properties.
Sumac is also found in the Lebanese spice blend called Za'atar. I like sprinkling it on my hummus before serving. It also adds a nice flavor to pita breads.

I have sumac in my spice cupboard, and use it once in a while. You have inspired me to use it more often, like on my daily hummus. My McCormick brand organic Za’atar doesn’t have sumac in the blend. I’m going to look at other brands. Thanks!🌻🥰🌻
2:17 hello, I’m making this today. I soaked the lentils overnight, but I’m wondering if I should rinse them again before cooking them? Thanks in advance 😊
I’m sorry for my delay, yes rinsing them again is a good idea. if you didn’t, removes starch. I hope you enjoyed them as much as I do!🌻🥰🌻
