I recently made hot dog chili and I think I made about the same as you. I went online to YT and found many recipe's and mixed and matched and did some omitting here and there, etc. I've eaten it twice this week and froze 6 individual baggies for future use. In all honesty, I thought mine was just a tad too sweet. Next time I will omit small can of tomato sauce and omit the brown sugar. I will rely on a couple of TBSN of ketchup and 2 TBSN chili powder to provide a little coloring. In the end, select a hotdog with a casing. I had to visit 3 grocery stores to find them. The label will clearly state "natural casing". Sabrett's have casings and they have national distribution. . The casings will offer that snap that literally all hot dog stands offer. Buns must be extra fresh. Onions must be chopped pretty small (at least ensure onions aren't chopped large). If serving grated cheddar, it needs to be grated pretty fine. I bought a 60 cent can of sauerkraut and it was a good change of pace to have kraut and mustard on one of my dogs. I may try mixing meats on my next batch. half beef half pork.

Does the grease ever get drained out or is it left in? I thought she put the raw meat in with the water and broth and cooked it. I didn't see her drain it.
Is that quarter teaspoon of cayenne pepper really going to have any kind of influence on five friggin pounds of beef? Or any of those. 1/2 tablespoon garlic powder?
I just read the reviews and I am amazed how rude people can be. They demean only themselves with their rude comments. The first thing should have been congratulations on your daughter's 21st birthday. The second thing should have been appreciation for the recipe because I am 68 and haven't ever been able to find anything close to the smell and taste of the chilli. Every trip home to Roanoke from Utah had a first stop to the Roanoke Weiner Stand. I personally knew the great-great grandparents and family. On the last visit the current generation didn't seem to appreciate what sacrifices their past generations made to give them the life they have. They even moved the location. I have not been to the new location downtown. You keep your head up and know that your efforts are greatly appreciated by those with good manners.

To get your ground meat in smaller pieces, I recommend that you put it in the cold water and cold beef broth and stir it into a kind of slurry before you even turn on the heat. Once the heat is on it clumps together. I'll have to cut the recipe down some, since it's just my wife and me, although I suppose I could turn it into "eatin'" chili after I've made weenies.

I had hog chili when I went to college in Virginia but couldn't figure out how it was so different than regular chili. Now I know... it's cooked in the water! I can't wait to try this recipe.
All spices were "heaping" meaning the measurement was a bit more than stated. 5 pounds of ground beef (half ground chuck and half hamburger) 1 can of Swanson Beef Broth 1 Bottle of drinking water (12 oz ? 16 oz?) 1 tablespoon Worchester Sauce 2 tablespoons French's Yellow Mustard 1/2 tablespoon tomato paste 1 tablespoon onion powder 1/2 to 1 tablespoon cumin 2 to 3 tablespoons chili powder 1/2 tablespoon smoked paprika 1/2 tablespoon powdered garlic 1/8 teaspoon cinnamon 1/2 tablespoon ground mustard 1/2 tablespoon salt 1/2 tablespoon ground black pepper 1 teaspoon splenda brown sugar blend (can use regular brown sugar) 1/4 teaspoon cayenne pepper ground 1 whole onion grated fine 2 tablespoon ketchup Put all the ingredients into a large stock pot. Mix together. Put heat on med high and stir and mix constantly. When it comes to a boil, turn the heat down to low, and simmer, until the mixture is as thick as you wish - it may take an hour or several hours. Stir every few minutes to ensure it does not burn.

Very nice video and a great recipe! I found that if I heat the water a little so it will melt the fat good I can then put in the ground beef and then get in with my hands and break up the meat really well, then add the other ingredients. Thank you!

I have traveled all over the world and I mean that literally northern Alabama, Tennessee,all over the Appalachian mountain Range has the best food it is World Class as far as taste goes. The recipe I made was for one pound of meat and cooked in my pressure cooker 18mins with natural release (10min). The video was copycat Tommy’s chili. Yours seems better not so spicy. Fabrizio This is a standard hotdog chili sauce recipe. Not browning the meat first but cooking it in water then reducing by half keeps the meat wet and soft. There are many other similar recipes on UA-cam. It’s an old fashioned diner recipe. Use lean ground chuck.

' hi debbie... i cut hot roll weiner many pieces and put on the pan... low heat until fatty / greaseey / oilly out from the pan... put hot roll weiners on the paper towel and squeeze until yellow fatty / greaseey / oilly out... that is a good healthly without yellow fatty / greaseey / oilly... never never need hot boiling water

Herbs work well but Spices don't work well in boiling water spices should be seared for a couple of minutes to bring out the rich flavor and aroma of the spices, I put a little oil in my sauce pan and sear the spices careful not to burn then add my meat, doing this you can use less spices, searing brings out the flavor much better. Going to follow your recipe looks great.

I have traveled all over the world and I mean that literally northern Alabama, Tennessee,all over the Appalachian mountain Range has the best food it is World Class as far as taste goes. It must be the mountain air or the polite People but what ever it is it works out for them

Before I saw your video I had made another chili recipe tonight. The only hint that might help some viewers. The recipe I made was for one pound of meat and cooked in my pressure cooker 18mins with natural release (10min). The video was copycat Tommy’s chili. Yours seems better not so spicy.

That's a great trick with the micro grater and the onion! Looks some what similar to Cincinnati chilidog sauce, with the cinnamon.

Fabrizio This is a standard hotdog chili sauce recipe. Not browning the meat first but cooking it in water then reducing by half keeps the meat wet and soft. There are many other similar recipes on UA-cam. It’s an old fashioned diner recipe. Use lean ground chuck.

Mary Montalvo It’s a basic ole fashioned diner chili “sauce” recipe. Covering the raw meat with water and reducing by half keeps the meat wet and soft. It is never browned first. Use very lean ground meat if you don’t want a lot of grease. There are many similar recipes on UA-cam.

low heat until fatty / greaseey / oilly out from the pan...
put hot roll weiners on the paper towel and squeeze until yellow fatty / greaseey / oilly out...
that is a good healthly without yellow fatty / greaseey / oilly...
never never need hot boiling water

Happy belated birthday 8yrs later and Oh my goodness thats a LOT of ingredients in a chili. Do you happen to have an ingredient list because unfortunately I didn't write it all down if not thanks anyways great video
Herbs work well but Spices don't work well in boiling water spices should be seared for a couple of minutes to bring out the rich flavor and aroma of the spices, I put a little oil in my sauce pan and sear the spices careful not to burn then add my meat, doing this you can use less spices, searing brings out the flavor much better. Going to follow your recipe looks great.

That’s why she used half lean chuck. Use very lean beef. Personally, I cover with water and reduce by half. This keeps the meat wet and soft. Then pour the water off if the meat wasn’t lean enough. Add the same amount of fresh water you poured off and the rest of the ingredients to simmer.
