It's a hot little flavour bomb full of umami and the pinnacle of cultural crossover.
Bite into the thin crispeh moch moch and get ready for an explosive punch in your pretty little face with a chew.

Dis' whatcha gonna need
Mochi Dough Mix -
50g Glutinous rice flour
25g Plain flour (or Wheat Starch)
25g Sugar
110g Boiling water
Pinch of Salt
70g Glutinous rice flour + extra for dusting
Potato Cheese Filling-
250g Kipfler potato
300g Cream
50g Brown butter
100g Parmesan cheese
Fry at 180C
Condiments -
Beef fat (Rendering out beef fat) Or Truffle oil
Truffle (Optional)
Iberico ham (Sliced)
You can replace the condiments with any other fats/garnishes you want, or not have any and have them on it's own
Equipment:
- 2cm Diameter spherical silicone mould (Culinary FX)
- 4cm Diameter hemisphere silicone mould (Pavoni)
- Deep fryer
- Tea strainer for dusting

I went to to KOI in Ryde with my boys last month to try out beautiful refined looking desserts. Everything which we bought is just so darn good. My boys were looking forward to meet you in person but you were not there obviously😣we enjoyed watching you on Masterchef and very happy with your UA-cam channels!!!! Hopefully we get to meet you in person at KOI someday😁
I love this format, Reynold. It's a nice personal touch to see you walk around the shops for "research". You remind me of myself when I walk into an Asian grocery store... I get super excited about so much in there every time.
