  • Thank you all for being so patient with the delay of my video editing while I had been helping take care of my parents. I am also incredibly grateful for all your prayers and well wishes after the passing of my Mom. You are the best online community!
    This is one of several stored videos that I'm getting to. Obviously, it's now October and my garden is not as lush and the weather is not nearly as warm. I try to use as much from my garden as I possibly can, so instead of just composting my onion greens, this year I decided to dehydrate and powder them.
    You can add them to soup, pasta, eggs-just about anything you're cooking! I hope to enjoy this all winter long!

    If you want to do dehydrated green onions, I would suggest you plant some perennial Egyptian Walking Onions. They have great flavor and produce a ton of greens. They will grow back year after year. Their flavor is incredible.

    You are exactly right. When cutting the tops you do allow not only water, but bugs and bacteria to get inside the onions. I have found worms inside broken leaves in the garden before. But it is a great idea to save and use the green tops.

    This is a late comment. This is what I do. I do not cut the onion leaves at the tops. I cut them from the stem just above the bulb. I make use of the stem and the leaves. The onions grow back rapidly. My way of cutting allows the onion to grow fresh new leaves. So whenever i harvest, I always harvest fresh new leaves.

    I have TONS of these onion tops. I have two dehydrators going. Cant wait to put these up!! Great to have for a sour cream dip or mix in on baked potatoes and pasta with butter. 😋

    I did the same thing this year and water got into my onions and caused a lot of them to rot. That was the first time that has ever happened. I always cut my onions to get bigger bulbs, but this time it rained for a couple of days after I cut them and the water sitting inside the open stalks caused the rotting. In the future I will be sure to check the weather forecast before cutting them back. I finally went ahead and pulled them all up because they all started to produce multiple small bulbs rather than one big onion. I'm going to turn most of them into onion powder. ❤

      Sounds good. Many people said that rain will not affect them with the trimmed leaves, but like you said, I've found the opposite.

    So it’s been 3+ years since you’ve made this video. I’m glad I went looking for your videos because this was very helpful. The coffee grinder tip is perfect.

      You should be able to, in the way you would any other powder. Just don’t want to get it over 105 degrees though, or it’ll lose nutrients.

    My parents never cut the tops, to get large bulbs they would bend the tops over so they lay on the ground.

    Nice video. We have lots of extra onion tops this year. We have a video of "onion top pesto" that is delicious if you are looking for another recipe for the onion tops. But we will still have extra onion tops, so again thanks for the idea to powder the onion tops. We will be making onion powder this week.

      Yes, the onion tops are huge and plentiful and it would really be a waste to just toss them into the compost pile when I can make delicious Onion Powder, Onion Salt, Minced Onion and Green Onion Pesto to add to my Homemade Spices Rack. It is so fresh and delicious!! I have all three of my dehydrators going right now drying my Garlic for the same spices. But I'll also add Granulated Garlic and Minced Garlic in oil or water to store in my fridge and use as I would fresh garlic.♥️🥰

    Thank you for sharing this. I cut my onions back last year for the first time too. Like you I had the biggest onions I ever grew, but a lot of rot too So, I am going to see what happens if I do half.

      When you cut the tops the rain gets into the hollow tops and makes the onion rot faster. I never cut mine and I have huge onions and never had a problem with rot.

    You could bend the greens downward so water doesnt collect in the tube. After you cut the tops off.

    I enjoyed this very much. I am considering doing this..... I think if you pre- crumbled the onion leaves and packed them down tighter, you may not have to use the coffee grinder at all. I wonder- Can you do the ENTIRE onion that way? I am also shopping for dehydrators.
    Yeah I get it with the editing, I have a channel too (Gorilla Crew War Thunder). It's a lot of hard, time consuming work.

    Maybe you could tie your onion greens into a knot then cut above that? Thanks for the green onion powder idea, I’m with your other viewer who wants to try leeks. Wish you had tasted it to heads up how the pungency compares to regular onion powder.

    Good info. Liked the background music too. I’ve got a dozen white onions growing but no bulbs forming. When I try to dig around the base to give a little room to grow the bulbs, the plant starts to tip oven. Any suggestions?

      Onions require a lot of nitrogen, so you may need to give them a good boost and add compost to the soil around the plants, of course not packing it in and leaving some room to grow. There are short day (south) and long day (north) onions according to where you are located. Perhaps you don't have the right kind? Water frequently and mulch.     I topped mine at harvest before hanging the bulbs to dry (not too short; I left plenty for the neck to tighten and dry) and have them in the dehydrator now. Did you try a half and half experiment this year to compare size and rot?

    Can you cook green onion tops in an iron skillet with olive oil?

      Yes, they will cook very quickly, so put them in at the last minute.

    Could a person cut the greens into chives after dehydrating? And then maybe vacuum seal and freeze? I wonder if that would work. And use as needed.

      They're very brittle after dehydrating. You could break them into pieces, but cutting would kind of pulverize them. Once dehydrated, no need to take up freezer space; you could still vacuum seal in a mylar bag for long-term storage (10-20 yrs) or in a jar for shorter term (5-10 yrs).

    I would try cutting 50% and see which ones get rot. if just the cut one get rot then you know if both get rot then it sound like the source bulbs.

    Are the green leafs edible on a regular onion?

      Yes, they are!! Delicious using them in salads or dishes like you would green onions.

    My dehydrator is set on 105 for all veggies and fruits....anything over 115 destroys the enzymes. Why not eat them still raw?

      You certainly can eat them raw, but if you want to have them through the winter, drying is the way to go.
