    I watched this video the other day and immediately went to store to get all ingredients…as it is August, watermelon was plentiful. I made the salad for dinner. We loved it. The next day, my husband asked it we could have it again for dinner (side dish).

    I'm so excited because we planted serranos instead of jalapeños this year and have a thousand peppers and this a fun way to use them

    In my watermelon 🍉 salad I first soak red onions 🌰 (in cold water approx 10 minutes) to rid the sharp taste. I use chopped mint, crumbled Feta Cheese, & balsamic glaze as a dressing. The sweet of the watermelon, the salty of the feta, the tang of the onions & the brightness of the Chopped mint 😋 brings it all together. It's refreshing on a summer's ☀️ day.

      I’m definitely trying your version, it sounds amazing! Once I had a pomegranate seed, chopped mint leaves and kosher salt salad that was amazing

      I know, right? My gran would have used the watermelon rinds for watermelon pickle, such great childhood memories around watermelon and this a new memory eh?

      Not as hot as some chili peppers, but they vary with the season and the growing conditions. Even if you try a little bit and decide that the ones you have are too hot for this salad, you can roast them a bit to mellow them out. Letting them rest in the dressing like they do also helps.

    This dish was really quite good. Had to drain a good amount of the dressing off before serving and so the toppings would stick instead of float in the marinade, but otherwise I would thoroughly recommend to anyone. Will definitely be a part of our summer rotation

      yes, I tried draining off the excess watermelon juice before adding lime juice mixture, but still had too much "soup" at the bottom.

    You could substitute Follow Your Heart vegan feta for the cotiija to make it 100% vegan. Looks amazing!

    cotiya (actually cotilla) in Spanish is a rarely used word for the nosy person that likes to gossip
    thanks for the recipe Lan, i can almost taste it! the sweet watermelon with the salty cotija and is orange spicy rind plus the serrano

    Time for Americans to start using their watermelon rinds. Peel off the skin, segment and slice away the red from the green rind, and also put rind portions into the watermelon salad (!). The rind potentially has more healthy and nutritious minerals, amino acids, especially citrulline, and should start being eaten and used from now on. Leave nothing to waste - no wonder the pigs eating the watermelon scraps are so healthy and fit !!!

      If you want, get out a scraper and scrape the melon rind making watermelon spaghetti - like broccoli and califlower stem spaghetti

    Yikes! Always wash your hands well after you handle hot chili peppers like Serranos, Jalepenos, Poblanos, Anchos... take it from me. I forgot once and I will never forget again. I hope. I wish that they had mentioned that.

    No a fan of this combo way to oniony the cilantro over powers it too .
    Next time Im going to try basil or Mint .
    Can you grill the melon as wonder if grilled Halloumi would good on the grilled watermelon steak ??
