John thank you for the videos and recipes for wholemeal rolls and bread. Once I mix everything into the flour and add the water, I leave for 20 minutes to let the water sink into the wholemeal before starting to knead the dough and find it is much easier to knead.

I think a lot of those "thumbs downs" are probably thumb slips. When I am on youtube on my phone, sometimes I pick up my phone, and my thumb or finger hits a like (or dislike) button that I didn't intend to hit.

My Dad had a bakery cafe for a while and I loved the bread but we had to close it during the start of the GFC and I never got to learn the recipes he used. I've missed those breads ever since but I think looking at the bread you bake, I think its quite possibly the same as my Dad made. Just made those: delicious, hard to believe they're 100% whole wheat. I used strong whole wheat flour and the results are gorgeous.
When they come out of the oven they look and feel like hockey pucks but they do get softer when cooled and super delicious. The process is so easy and straight forward. Another Hit! Thanks, Mr. K :)

Made the whole wheat sandwich rolls and they turned out very well. I had no idea that I could make entirely whole wheat bread that didn't turn out like a brick. I noticed in one of the comments that the person's didn't rise well and you said it could be because of the possibility of the level of chlorine in the water. I also noticed that happened to me to an extent. I keep distilled water on hand for a different use, I will try that next time. Very nice that you answer all the comments. I have found out that all flour is not the same. At the height of the lockdown bread flour disappeared from the supermarket shelves so I sourced a 16kg sack from a catering supplier which was excellent (Strong white).
Second sack from the same supplier not such good results.
I got some wholewheat from the supermarket and tried this recipe which turned out well but the family seem to have lost the ability to chew their food so I went for 50/50 and slightly more water in the mix and got a really light textured tasty roll which they love.

Snap! I did the same. Got Canadian flour in 16kg sack which was brilliant. Second lot was 16kg Organic, good but not quite up to the standard of the Canadian flour. Expecting my flour today, Canadian again! It saves traipsing around to get it and makes life easy. We won't starve! 🤣🤣👍

Go through my 4 main bread making rules below, especially 2 and 3.
1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ua-cam.com/video/HWpSbYV96_c/v-deo.html

I have not been able to get good results using active dry yeast just mixed in the flour. Proofing the active dry yeast first has given me good results though. I made the bloomer loaf twice first using the mix in with flour (bad result) and proofing the yeast the second time gave excellent results. Thanks for the outstanding videos. Your experience and wisdom combine for some of the most edifying food videos on the internet. Cheers!

Hello again John, I have tried your recipe using Alison's strong wholemeal bread flour at £2.00 for 1.5 Kilos, also ALDI's wholemeal flour at 59p for 1.5kilos and LIDL's at 59p - same price as ALDI and taste no difference in the rolls. Also the quality and weight of the baked rolls are very similar. Thank you again for this super recipe!

Cheers! I am happy you have a nice blender, I too have a 25 years old blender like yours so that will tell you how long the one you have will last. This is a form of chabata bread with a twist of whole wheat. Good Job. I make it very similar with polish, and half white and whole wheat, it is delicious if you add Fresh onions and garlic, but must be careful with the water you add. Peace, Love, lazaro

I've tried this recipe twice so far with the same results as John Kress. The first rise is good, but no second rise. I've read comments here and your replies, and I'm trying to figure out where I'm going wrong.
For my first try, I used an old 2 lb. analog scale, which gives inconsistent readings and is probably inaccurate. So my measurements may have been off.
For my second try, I got an 11 lb. digital scale and measured everything precisely. So it was frustrating that I still got no second rise.
Now I'm questioning my yeast, purchased at Costco 6-12 months ago. Next I'll pick up a 7g packet of instant yeast and retry.
I prefer your approach for its exactitude over others which measure approximately and make adjustments on the fly. That why I'm determined to make this work.
I watched your other video where you demonstrate the rolling technique for the 8 dough pieces. So far, I haven't been able to get the hang of it. There are still creases in the dough when I'm done, so they're not really balls.
The only other thing I can think of is that I'm lining baking pans with silicone sheets instead of greasing them. Could that be a problem?

@@JohnKirkwoodProFoodHomemade Thanks, John, I appreciate the response. The video shows a hydration ratio of 57% but these whole wheat sandwich rolls are using 64% (320g water for 500g flour). Is the ratio different for whole wheat?
My whole wheat flour comes from a bulk bin. I'll have to ask my grocer for the info that would normally be on a nutritional label, because I have no idea what percent protein it has.
For my next try, I won't concern myself with the water/chlorine level (I don't taste chlorine). But I will buy packets of yeast within the use-by date and I'll make sure I have whole wheat flour with sufficient protein. I'll let you know how that goes. I'd love to report success!
Yes it's a different hydration.
The chlorine level has nothing to do with taste, it kills the yeast, that's why it's in the tap water, to kill bacteria, yeast is a bacteria..
@@JohnKirkwoodProFoodHomemade My point about taste is , if I can't taste it, is the chlorine PPM so low that it doesn't affect yeast rising. I'll ask a local bakery about their water source.
The temperature of the whole wheat flour may be more important. For home use, refrigeration is typically recommended here, and I do refrigerate mine. Commercial bakers have high turnover and no need to refrigerate. So for today's attempt, I've weighed 500g of whole wheat flour and I'm leaving it at room temperature for a few hours before using it.
I did ask a local bakery. They use the same tap water I do.
Made these this morning - added the extra 20g water compared to the white rolls recipe.. worked beautifully.
I'm close to getting the sourdough starter ready now...3rd day.
I was wondering...if I put a tray of water in the oven, and sprayed the white sandwich rolls with water....would I get crusty rolls ?

So delicious! I’ve been looking for a recipe for whole wheat sandwich bread, and I just haven’t been happy with the loaves that I have made. I’m still pretty new to bread baking, so that may be on me. But these rolls came out perfectly! So soft and light, not at all dense and the crust isn’t too crunchy. John! Absolutely love your videos! I did have a question for you. I lived in Germany when I was a kid. I used to walk to a bakery to pick up “Brötchen” (which means “little breads”.) We ate them at breakfast w butter and jelly or lunch w lunch meats and cheese. They were not made w whole wheat flour, but could or would you have a recipe for these little breads? They were a little crispy on the outside and soft on the inside-any ideas? I’m sure you have something in your extensive collection! Can you help me? Again, thanks so much for your great videos!

2. The yeast was from the same package that make previous rolls raise two days before.
3. I stuck to the recipe.
4. I used digital scales.
5. The whole wheat flour has 13% protein.
So... I'll make some other recipes or your 50x50 whole wheat and white flour 😘

Might be the temperature? I leave the tray close to the stove because dining-room is 19ºC and kitchen is cooler
I'm following the recipe and got my measurements right but I'm using whole grain, store-bought spelt flour instead. I feel like my dough ends up a little more tacky but also more gooey, so during the second rising, there's more horizontal than vertical expansion (the first rising is all dandy.) I tried leaving my rolls more ball-like, instead of turning them into discs this time and I'll see how it goes. I wonder if it's really about the flour - everything else is the same though. If I only want 4 rolls at a time can I freeze the remaining dough or will that kill the yeast ? love your channel and have made many of your dishes and feel somewhat elevated as a home cook, at least the wife is not complaining for a change.

Go through my 4 main bread making rules below Dan, especially 2 and 3. Could well be the water you use.
1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ua-cam.com/video/HWpSbYV96_c/v-deo.html

It’s weird- when I first mixed the dough and put it in a bowl, it rose nicely in an hour. After I made disks out of it and put them on the cooking tray, they barely rose. I waited an hour and 45 minutes, but they didn’t get near the size they appeared in this video. They got up to about 150% of their original size. Any ideas on what could cause this? It was all done in my kitchen at 74 degrees Fahrenheit
Some extra advice my friend.
Go through my 4 main bread making rules below, especially 2 and 3.

Oh, John, these look amazing! Do you think they'd benefit at all from a pan of water in the oven while baking, like the crusty rolls you shared? I've never tried steaming whole-wheat rolls for a crisper crust before, and I'm curious to hear your thoughts on it, if you're game to share them.
