Tutorial on how to make the softest wholemeal bread rolls. I take the opportunity to share as many tips as possible with you to ensure your bread is as soft, light and tender as possible.

I had a huge success in baking these. Oh My the Flavour and Texture wow, way better than anything from the shop.
Due to my Overn took a bit longer. Kept them light. Smell taste and texture amazing.
Got a bit Crusty second part of the next day.

Thanks Andrew. Glad these came out well for you...you can't go wrong when there's butter in it! 😜 You can always refresh the rolls in the oven for a few minutes for that just baked feel if they start to get a bit hard. Keep watching...and baking! Cheers Jo
Nice to see your personality come through. Nice to see your oven. In all the videos that I have watched, I had never seen where you bake all this wonderful bread. Can I freeze the dough before baking?
Can I add a filling by rolling the dough and folding in the filling, eg mozzarella cheese?

Here are them snatched from video:
Ingredients: 1:00
500g wholemeal flour
500g strong white flour
15g instant yeast
20g salt
30g butter
650g milk 3:56
plus some extra if needed: 5:09
Timing:
All mixed together for 5-10min 3:40
Proofing 1-1,5h 5:30
2nd proofing 30-45(60)min 11:44
Baking 15-20min 12:27
Shaping: 9:25
Oven heated at 200°C 12:20

can I use non dairy milk?
Hi Joelle, it's the fat in the milk that helps with the softer crumb. You obviously can use non dairy milk as the liquid, but I don't know I'd it'll have the same softening effect? You could always add a splash of oil or some kind of fat to compensate. Cheers Jo

Made them today! they were amazing, but mine were so big but they're so soft, moist and light, they're perfect. I took a picture but I didn't know how to send them. Thanks again!

I started making this and my kitchen aid started to smoke. It was way too much dough for it to handle. I think I'll do half at a time.
I notice you are using Waitrose whole wheat white flour, it’s not strong white flour

If using fresh yeast, how much do you need ?
Hi, In general I use at least double the weight of fresh yeast to instant. So if it's 10g instant yeast, use 20-30g fresh yeast. 👍
