A little tip if you want a perfect egg with a runny yolk. When you're frying the egg, add a few tablespoonsnof water and put a lid on it. The water will evaporate and the steam will help cook the eggwhite faster. After 30 seconds, you take the egg out of the pan. Perfectly cook egg with a runny yolk. Just remember that before putting the egg on the pan. the pan needs to be very hot for the water to quickly evaporate.

And eventually I would get it assembled but not without alot of anxiety and unneeded stress
Problem with those types of breakfast is that they're always made with stuff you don't regularly have on hand (feta cheese and avocado go bad quite fast), even if they do look easy to make and tasty
You can do this with pretty much any shredded cheese it doesn't need to be feta. Not that hard to keep avocados on stock either, buy a few ripe and a few unripe and you're good for a week plus. You could easily replace the avocado with (or just add) some kind of deli meat and it would cook just as fast.

as a mexican, that's my everyday breakfast. over easy eggs on top of a tortilla and eat it as a taco. goes harder with a strip of bacon, fried beans, sausage, and/or if you're feeling fancy, strips of avocado or guac. Pro tip: have an extra tortilla on the plate to catch the yolk that drips from your taco, and eat it at the end
