INGREDIENTS:
🔹 2 cups packed fresh basil leaves
🔹 1 to 2 clove garlic roughly chopped
🔹 1/3 cup pine nuts or walnuts, toasted
🔹 Juice of ½ lemon
🔹 1/2 cup extra virgin olive oil plus more for storing
🔹 1/2 cup finely grated Parmesan cheese
🔹 Kosher salt and black pepper to taste
While blanching is great for storing basil. If you are going to use the pesto right away its best to make it without blanching because the flavour of the basil is a lot better without blanching
I have never blanched my basil, but have always used the juice of a key lime or two - or a lemon. My pesto has always held the bright green of fresh basil, even for a month in the fridg.
I love this fresh flavor and it’s super delish on boiled / or saute’d shrimp. I now skip the red sauce and go for the green.
I’ll try the blanching, too.

I'm so glad you posted this recipe! I told my husband last night that I was planning on making pesto soon. Our basil is going wild and it is the perfect time to harvest. A couple of years ago, I made a huge batch of pesto and wanted to freeze some. The recipe I used said to not add the cheese if you wanted to freeze it. When ready to use it, thaw and add cheese. I think it was a texture thing. Anyway, it worked! Thanks again!

I have a sever nut allergy, so needless to say I don't use nuts in my pesto. I actually use sunflower seeds! It really is good. So many people have tried my pesto and can't believe how good it is with sunflower seeds! I'm definitely going to try your method this weekend by blanching the basil!

TY Suzy for all you do! Great idea for blanching. I'll definitely make this. Another tip I learned to store basil pesto for a long time.. You can put them in ice trays. Just make sure to lightly grease the ice trays before you poor the pesto in so that way it's easier to slip out the pesto cubes for any recipes you'll need to make that calls for it.

I've heard it can stay in the fridge for 6 months? When you use some you just cover with a bit more oil
Can you use this pesto for pasta. I'm looking for alternatives to use for pasta that are healthier besides the typical tomato sauce marinara sauce Alfredo sauce etc
