Carrot Cake Cups

    Ingredients:
    Cake:
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 1 1/2 cups sugar
    • 4 large eggs
    • 1 cup vegetable oil
    • 2 teaspoons vanilla extract
    • 2 cups finely shredded carrots (apx 3 medium carrots)
    • 1 cup coarsely chopped walnuts
    • ½ cup crushed pineapples
    Cream Cheese Frosting:
    • 1/4 cup (1/2 stick or 50 gr) of butter, soft at room temperature
    • 1 pack Philadelphia cream cheese (200 gr), soft at room temperature
    • 2 ½ - 3 cups powder sugar, sifted
    • 1 teaspoon vanilla extract
    Directions: Cake:
    • Preheat oven to 180 C (or 350 F)
    • Grease two large pans and line the bottom of the pans with wax or parchment paper. Set them aside
    • Whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set them aside. • In a large bowl beat the eggs for 1 minute using a stand mixer or hand mixer
    • Add the sugar and beat until the batter is fluffy and pale
    • Add the oil and beat for 1 minute.
    • Add the vanilla extract.
    • Add the flour mixture gradually and beat just until incorporated (which means just until the flour disappears into the batter). Do not over mix
    • Using a wooden spoon or spatula, fold in the shredded carrots and chopped walnuts. Stir in the shredded pineapples.
    • Evenly divide the batter in the two pans and bake until a toothpick comes out clean (apx 35 minutes)
    • Remove from oven and let pans cool completely.
    Cream Cheese Frosting:
    • In the bowl of the stand mixer (or with a hand mixer), cream together the cheese and butter
    • Gradually add 2 ½ cups of the sifted powdered sugar and beat on low speed, until the frosting becomes smooth
    • If you find your frosting too runny, add more powdered sugar, 1 tablespoon at a time, until it thickens to the spreadable consistency
    • Add the vanilla extract and beat for 1 more minute
