Keith Baar is a professor at UC Davis and renowned tendon training researcher and expert. Over the last 15 years, Professor Baar has worked with elite athletes, as the scientific advisor to sports organizations including Chelsea Football Club, USA Track and Field and the Denver Broncos. Professor Baar’s Lab’s research interests are Muscle hypertrophy, Muscular endurance and Ligament engineering.

By the way, keto diet and other low-carb diets aren't necessarily hard to maintain. Particularly once in ketosis and fat-adapted, cravings for starches and sugar go away for most people. Plus, most people feel so much better in ketosis that they are motivated to continue doing so. Research has also shown that it's the easiest way to lose and maintain weight, as people are more likely to stay on the diet.
I did various low-carb diets over the past few years and I was amazed how my food addictions disappeared. I'm now on a carnivore diet and I honestly don't miss carbs. Animal foods are so delicious and satiating. I occasionally will eat some plant foods when around family, but it's pretty rare and it doesn't elicit any cravings as it used to. So, I don't need to be absolutely dogmatic about it. Still, my desire for such foods is gone and so it's a non-issue.
