    Every year, around early Spring, we go out to the strawberry fields & pick a mess of strawberries so we can make strawberry jam. Strawberry Jam has become, hands down, our favorite jam or jelly, & as a matter of fact, we no longer even make any other type of jam or jelly, bc we always found ourselves eating only the strawberry jam.
    So here is the strawberry jam recipe we use on Cog Hill. It is from the book, "Saving the Season: A Cook's Guide to Home Canning, Pickling, and Preserving", by author Kevin West. We just absolutely LOVE this book! By far, my favorite canning or preserving book out there. Here is Kevin West's Basic Strawberry Jam Recipe:

    RECIPE: Basic Strawberry Jam
    Yields 2 pints
    2 pounds ripe strawberries
    2 1/2 cups sugar
    1 tablespoon freshly squeezed lemon juice
    Optional: a few scrapings of lemon zest
    To get started, go shopping at a farmers market or roadside farm stand if at all possible, and seek out the smallest, reddest berries. Fragrance is a good indicator of quality, but tasting is better still. The giant strawberries favored by supermarket produce managers are not a good choice. I call them "Pamela Anderson fruit," artificially enhanced & tasteless.
    Briefly rinse the berries & remove their caps. Combine with the sugar, lemon juice, and zest, if using, in a large bowl, & crush with a potato masher or your hands.
    Turn the fruit-sugar mixture into a preserving pan or pot, and bring to a boil over high heat, stirring regularly. Reduce at a full rolling boil, stirring all the while, to the gel point, 8 to 10 minutes, depending on the size of your pan and the strength of the heat source.
    Once a gel set has been achieved, skim if necessary, & ladle the hot jam into four prepared 1/2-pint jars, leaving 1/4 inch head space. Seal, and process in a boiling-water bath for 10 minutes.
    The sugar content in this recipe is lower than in many traditional farmhouse recipes, but there's still enough for a soft-set consistency & to ensure a reasonably long shelf life once opened.
    Also, do not double the quantities, at least not initially. A small batch is cheaper, faster, more manageable, & better suited to the size of standard household equipment. If you want more jars, make two small batches. I can assure you from personal experience that you'll be happier with the outcome. In fact, the more experienced I get, the more I'm inclined to do three or four jars at a time - a nice little job to knock off in an hour, rather than a labor that wrings the fun out of the afternoon.

    Oh my, a trip down memory lane .. l was proud when ''old enough'' to stand on a chair and stir ....Mom used to seal with melted paraffin. You're right, Strawberry is tops. Orange marmalade might be second. BTW this week l have had to sit with feet elevated, and your videos have been such an UPBEAT blessing. Thank you, my dear.

    A teaspoon of butter in that rolling boil, will keep the foam from happening, and add some richness to your jam! And I would cut the sugar to less than half what you used. After putting the jam in the jars, you can forego the boiling of the full jars, by turning them upside down for only 5 minutes, then turning them back upright, and you’ll hear them seal themself!

    nice work when i make mine i have found you dont need to premash they breakdown naturally as heated and i mash with wooden spoon while stirring.

    Since it's getting a little cooler (frigid 58 degree here in Northern Alabama they may close the schools!) I thought I'd make some strawberry jam from the strawberries we grew and froze this last spring. thought I'd watch this first. I sure hope you licked your fingers and hand after you crushed up those strawberries! Waste not want not, the homesteaders way. different than what I was gonna do I think we'll give you're recipe a try. I always have to go by peoples review of a recipe more than a book recipe on it's own merit. Thanks so much. Older video but very helpful this fall.

    Thx for the recipe and the good instructions ! Just a tip: it works great to push a straw thru the pointed end of a strawberry to the green stem. It pushes it right out and doesn't take very much of the strawberry. :)

    Cut up a good grab of fresh mint stalks (with leaves) and add it two minutes before the end of the strawberry boil time... Enjoy!

    Your videos kept showing up on my Facebook feed, so I started watching them. They are so much fun, that I subscribed and have gone back to the beginning and am watching them in order!
    When I make strawberry jam, I use Pomona pectin because you don't need to cook it as long or add as much sugar. You can adjust to your taste. It tastes a lot more like fresh strawberries that way. (Not that cooked jam tastes bad.) My favorite jam is blackberry. Here in the Pacific Northwest, blackberries invade everywhere and are not hard to find. The strawberry jam always gets eaten first, though!

    The jar lid ping is the most satisfying sound ever, well besides that first babies cry! Love this, was this the first actual beginnings of the dancing farmer? I have been binge watching this weekend, LOL I do believe it is except that little bebop you threw in a few videos ago. LOL

      @@angelatapia3813 No I did'nt. The Stevia I use is made by Pyure, it dosn't have any fillers. Just 100% pure stevia. I sweetened it to taste. Comes with a itty bitty spoon. The 0.9oz purple and white container has 1000 servings. Has only 1 (one) ingredient, Stevia.

    I use the same 4 ingredients but use my Pampered Chef Deluxe Cooking Blender! So i don't have to stir all that time!! And it cleans it self with just a drop of soap! But can make all kinds of things in it! And multi-task instead of stirring! But love your video!

    I'd like to see some more cooking videos if possible. I mean, if you're gonna grow some of these wonderful vegetables and fruits, I want to make sure that I get the best recipes. I know you can do it. How about some homemade dilly bread? OMG! My mom had a recipe for this, and you would have thought you went to Heaven when you eat this. I think Mary Carl and your wife would love this bread. The only thin is, my mom passed away in 2011, and all her recipes are gone! I'm sure you could come up with a good recipe. You make three bread dough parts, stuff each one with the onion and dill mixture, then braid all three twists together, and put some more onion and dill mixture on top. If that were the only bread we had to eat, I wouldn't complain. LOL

    1) First of all the first (out of 2) times I watched this video you made me laugh plenty of times.
    2nd) You kind of look like the entrepreneur Tai Lopez.
    3rd) I made the jam yesterday with about a handful of strawberries (since I didn't need the amount you enlisted in the description) & added 1 table spoon of lemon juice and about a half a teaspoon of lemon zest; almost half a cup of pure granulated sugar, the result: MmmMmm good! It was so tasty sweet with the perfect amount of lemon juice that it was like eating candy! The good kind.. ;) I also added a pinch of mint flakes in the the jam as I was stirring. Wow this recipe is sooooo easy and very TASTY! :)) I recommend to who ever is reading this. Thanks so much @CogHillFarms&Homestead! Your natural humor in this first video I've ever watch from your channel definitely sold me a subscription to you!

    I think it's really cool you make jam -so is your shirt!- you can add all your ingredients in a blender by the way 😊
    I have a large enamel stockpot only for making jam, also a dedicated wood spoon. make my jam in winter from the fruit I froze over the year. that way I can mix the sweet and tart fruit together, gives a better flavor, I think. I never can my jam, never had one spoil! they sometimes sit 3 years, totally sealed tight. just turn them upside down after you fill and seal the jars. once they cool I turn them right side up and do not touch them again til the next day.

    My sister was canning green beans this week and put a hot jar directly onto a cold counter. She usually uses a towel on the counter, but didn’t this time. The jar exploded and she has 2nd degree burns on her side. Please put a towel on the counters for your hot jars to sit on while they cool.

    I forgot to add lemon zest. Instead of the full amount of sugar I do half honey. It sweetens without tasting like honey.
    P.S. you are entertaining to watch.

    In years gone by, gooseberries were used to help set strawberry jam. My grandmother used to comment that her mother had more gooseberries than strawberries in her jam because gooseberries were cheaper. (The woman had a dozen children to feed.)

    we usually use pectin so I can't wait to try this version. We make a lot of hot pepper jelly so I'll throw in some some Trinidad Scorpions or Ghost peppers. Thanks for the recipe.

      Oooo ... hot pepper jelly!!!!! LOVE hot pepper jelly! I spread cream cheese on a Ritz cracker, then spread on hot pepper jelly!!

    Hi. Can I cut any of the sugar in this recipe? Thanks. Looking for a lower sugar recipe without pectin, but this one is not bad, I have seen it with 4 cups of sugar and 2 cups of strawberries-holy cow! Thank you!!!
