But in some example scenes the object looks drawn but its in 3d, i mean i can tell by the changing geometry that its a solid 3d object. How is that done in grease pencil ?

If you draw in a anime style you can do that with grease pencil!
And you can blend 2d and 3d for complicated things to draw like for example car or house or Mecha robot
There's a lot of tutorial about how to do non photorealistic things in blender I have some of these tutorial in my playlist called blender
