    Steam for 1 hour and 30 minutes! I said 1 hour but it takes 1 hour and 30 minutes! Have fun and make all those tamales with your family and friends seriously the best! If your masa don’t float add more water don’t add more lard since this it already has enough for all 8lbs, if it don’t float it either needs more air or more liquid! Your masa should always be airy, fluffy and smooth! If not your masa will be dry!!!!! Love you guys and this will be the last tamal recipe for the year! I shared with you small batches but this one was the only one missing! ❤ ☺️

    I use to buy my masa prepared, but 3 years or so ago I started making it myself. I followed the directions on the package and few Pinterest recipes, they came out good, but my masa NEVER floated in the water when I was done making it. Today I followed your recipe and it floated!! You don’t know how happy this made me. 😂 Thank you for this video! ❤

    Looks delicious! My Mom and my Tia would always add some of the chili sauce to the masa so that a bite with no meat was just as good. I miss those days of helping them in the kitchen.

    Halved Recipe (for 100 Tamales):
    1 large bag of cornhusks (soaked)
    10 lbs of meat (7.5 lbs beef chuck and 2.5 lbs pork shoulder)
    1/4 lb (about 22-25) dried Chile pods (hot and extra hot New Mexico varieties)
    3 oz (6) dried chile ancho
    Chile árbol (optional, adjust to your preference)
    1/2 head of garlic (6 garlic cloves)
    1 lb (10) tomatillos
    1/2 tbsp cumin seeds
    Salt to taste (about 1 tbsp)
    For the masa:
    4 lbs Maseca for tamales
    1 3/4 lbs (3.5 cups) lard
    2.5 tbsp baking powder
    Salt to taste (about 2 tbsp)
    7 1/4 cups broth from meat
    6-7 1/4 cups water (adjust to ensure the masa is well hydrated and not crumbly)

      when your recipe is 1/3 lard its easy to get it to float. I suggest using a mixer whip the lard first and then to aerate the masa (you cant overwork corn masa) Your tamales will be less dense and greasy. Of course it's all to taste. i only use 1/5 lard in my recipe.

    I am sure that Claudia has said this in other recipes, but you can totally use a Kitchen aid mixer to get the masa all incorporated and that saves a ton of time and energy, too, if you have access to one. Of course, doing it by hand is a great workout, so both options have their pros and cons!

    I’m probably never going to make them but I’d love to find a street seller that makes jumbo full tamales like yours. The skimpy ones are really expensive now and not to my liking. I am accustomed to generous portions.

    This is a request and I’am not sure if you already have a video on this but at one Mexican restaurant they have chili relleno burritos….just another awesome Mexican dish.     Have you ever made the red sauce tamales with chicken if so how does it taste or do you not recommend it. Most of my family doesn’t like pork so I want to see if you have a video besides the green sauce tamales with chicken ❤

      It's just meat, use chicken if you want. I mean chicken is the least flavorful. pork and beef which are stronger flavors.

      I freeze mine for months, just take them out the night before if you can, heat on toaster over (cut pointy side that doesn’t have any masa dough so it doesn’t burn), microwave or on a griddle (low heat so they can get warm in middle and not burn the outside) you will know that are hot in temperature when you open them up and they steam, cold tamales are a no-no 👎🏻

      I don’t see why not. Just cut everything in half. But once you start making it you’ll end up adjusting things to your liking. Everything isn’t always precise.

      It’s my moms 😭 she had it for I would say 20 years it’s been a mixing bowl that she had it strictly for masa . I remember she bought it at a dollar stir in downtown Phoenix 😭

    I wish you would have shown how to place them in the pot. How you stack them from the start and how much water to put in. My first attempt many years ago was a disaster. The insides of the tamales were a big puddle of burning mush. It took me another 5 years before I attempted them again.
