Steam for 1 hour and 30 minutes! I said 1 hour but it takes 1 hour and 30 minutes! Have fun and make all those tamales with your family and friends seriously the best! If your masa don’t float add more water don’t add more lard since this it already has enough for all 8lbs, if it don’t float it either needs more air or more liquid! Your masa should always be airy, fluffy and smooth! If not your masa will be dry!!!!! Love you guys and this will be the last tamal recipe for the year! I shared with you small batches but this one was the only one missing! ❤ ☺️
Thank you for this! Claudia I cannot find a large mixing bowl like yours! I’ve gone to Mexican markets, swapmeet looked online nothing! Where did you get yours?
I use to buy my masa prepared, but 3 years or so ago I started making it myself. I followed the directions on the package and few Pinterest recipes, they came out good, but my masa NEVER floated in the water when I was done making it. Today I followed your recipe and it floated!! You don’t know how happy this made me. 😂 Thank you for this video! ❤
Looks delicious! My Mom and my Tia would always add some of the chili sauce to the masa so that a bite with no meat was just as good. I miss those days of helping them in the kitchen. Have a blessed and Merry Christmas!
Halved Recipe (for 100 Tamales): 1 large bag of cornhusks (soaked) 10 lbs of meat (7.5 lbs beef chuck and 2.5 lbs pork shoulder) 1/4 lb (about 22-25) dried Chile pods (hot and extra hot New Mexico varieties) 3 oz (6) dried chile ancho Chile árbol (optional, adjust to your preference) 1/2 head of garlic (6 garlic cloves) 1 lb (10) tomatillos 1/2 tbsp cumin seeds Salt to taste (about 1 tbsp) For the masa: 4 lbs Maseca for tamales 1 3/4 lbs (3.5 cups) lard 2.5 tbsp baking powder Salt to taste (about 2 tbsp) 7 1/4 cups broth from meat 6-7 1/4 cups water (adjust to ensure the masa is well hydrated and not crumbly)
I just used your masa recipe, never made it before, and struggled to get it to float, but persisted and broke out into a celebration dance when it finally did 🎉 thank you!!
when your recipe is 1/3 lard its easy to get it to float. I suggest using a mixer whip the lard first and then to aerate the masa (you cant overwork corn masa) Your tamales will be less dense and greasy. Of course it's all to taste. i only use 1/5 lard in my recipe.
I am sure that Claudia has said this in other recipes, but you can totally use a Kitchen aid mixer to get the masa all incorporated and that saves a ton of time and energy, too, if you have access to one. Of course, doing it by hand is a great workout, so both options have their pros and cons!
I’m going to make tamales for Christmas!! I can’t wait! Im so grateful for you Claudia! 💕 Could you share the instructions on how to cook the meat, please! 🙏🏽
They look wonderful! I used to make tamales- they were great-yours look as mine used to look. They were great and everyone that ate them said they were great! Since my stroke I don’t cook or bake😂! Keep on cooking young lady! Merry Christmas and bless you!
Hi Claudia! I like very much your presentations of kitchen. I want to learn with you to MasterChef. All my love and all my admiration for you from Mexico City 🙏 🇲🇽 💚 🇲🇽 💚 🇲🇽 🙏
Ever since I learned your masa recipe from last year, I just refuse to buy prepared masa from the bakery. Your masa recipe is so so so delicious!!! My family loved it so much my mom asked for it. So, I just sent her your video lol
I’m probably never going to make them but I’d love to find a street seller that makes jumbo full tamales like yours. The skimpy ones are really expensive now and not to my liking. I am accustomed to generous portions.
Thank you!!! How do you know when the steamer need more water or not with layers of tamales covering it ? And when pour more water do you just pour over the tamales? Thanks
This is a request and I’am not sure if you already have a video on this but at one Mexican restaurant they have chili relleno burritos….just another awesome Mexican dish. Also black bean tamales with roha red sausage and cheese, nummy. I actually order 1 pork and 1 black bean tamales so good. Your channel is absolutely the 💣 You and your content is ahhhmazing💐🥁😎
Have you ever made the red sauce tamales with chicken if so how does it taste or do you not recommend it. Most of my family doesn’t like pork so I want to see if you have a video besides the green sauce tamales with chicken ❤
I freeze mine for months, just take them out the night before if you can, heat on toaster over (cut pointy side that doesn’t have any masa dough so it doesn’t burn), microwave or on a griddle (low heat so they can get warm in middle and not burn the outside) you will know that are hot in temperature when you open them up and they steam, cold tamales are a no-no 👎🏻
I don’t see why not. Just cut everything in half. But once you start making it you’ll end up adjusting things to your liking. Everything isn’t always precise.
It’s my moms 😭 she had it for I would say 20 years it’s been a mixing bowl that she had it strictly for masa . I remember she bought it at a dollar stir in downtown Phoenix 😭

I love the authenticity of your cooking. Everything is better when it's off than it. Love you girl merry christmas❤

The Tamale Queen 👑
I’m probably never going to make them but I’d love to find a street seller that makes jumbo full tamales like yours. The skimpy ones are really expensive now and not to my liking. I am accustomed to generous portions.
Wow, you should incorporate that tray of tamale's into the picture of your Christmas card this year. take care.

Claudia...yummy..I love this recipe...thanks😊
Gotta love tamales, yum.
It's been a minute since I had Christmas tamales!
Y el guante negro?!
They look so delicious! I love tamales especially the green ones, but the red ones are also tasty. I wish I knew how to cook lol!
Girl, you have muscles. I did that, and I was so sweaty.
Just sell them. Lol. I'll buy.
At this point I should 😅
You’re the best cook!!!❤❤❤❤
those are some niiice pots❤
Hey Claudia!
Question...
Is it absolutely necessary to remove the seeds of the chiles?
There you go. The real deal!
Have you ever made the red sauce tamales with chicken if so how does it taste or do you not recommend it. Most of my family doesn’t like pork so I want to see if you have a video besides the green sauce tamales with chicken ❤
It's just meat, use chicken if you want. I mean chicken is the least flavorful. pork and beef which are stronger flavors.
Looks delicious!!!!
Thank you so much for sharing ❤
Let me tell you your hubby is so luck to have you mija💖💖💖💖💖
Yummy 😋😋😋😋
Any left 😅
WOW! Amazing job ❤
The best as always 🎉
Kitchen aid works great to prepare the lard
Yuuuum chef Claudia😋
How do u know how to make this? My God you do a amazing job
Did the whole family help today Claudia? That's allot of tamales!! I'll probably make 50 next week
Do they freeze well?
Absolutely!
I freeze mine for months, just take them out the night before if you can, heat on toaster over (cut pointy side that doesn’t have any masa dough so it doesn’t burn), microwave or on a griddle (low heat so they can get warm in middle and not burn the outside) you will know that are hot in temperature when you open them up and they steam, cold tamales are a no-no 👎🏻
great video once again
Excellent video
I've seen it both ways but do you need to dry the husk or just shake off the water before putting the masa? Looks yummy by the way.
Just shake it off
When you cook the dried chili peppers do you remove the seeds? If so, is there an easy way to do this?
Looks delicious! Can I cut the recipe in half if I only need about 100 or do you recommend doubling up your recipe that makes 40? @CookingConClaudia
That’s my question too! I only need about 100. Thanks for asking!
I don’t see why not. Just cut everything in half. But once you start making it you’ll end up adjusting things to your liking. Everything isn’t always precise.
@@prettyyoungthing1008 That's what I was thinking! Thank you for responding! 😀
How to you store prepared masa ? and how do you prepare it to use it on day?
Our family usually season the masa with some chili sauce 😊
❤❤❤❤you are the best. And beautiful everytime. A d I noticed pass few videos you have a glove on? Why?
Where did you get your masa mixing bowl? I need one that size.
It’s my moms 😭 she had it for I would say 20 years it’s been a mixing bowl that she had it strictly for masa . I remember she bought it at a dollar stir in downtown Phoenix 😭
hi claudia i have a question we dont eat lard any substitute thanks
Hi Claudia! About how many bags of leaves should I buy for 200 tamales? Thank you!
I wish you would have shown how to place them in the pot. How you stack them from the start and how much water to put in. My first attempt many years ago was a disaster. The insides of the tamales were a big puddle of burning mush. It took me another 5 years before I attempted them again.
Is there a way to make tamales without lard when making the masa?
👍👍👏👏👏👌👌🖐
Where can i find a huge bowl and pot?!
Can you freeze the masa if you don't use it all?
Can you show how you stack them, my keep coming out deformed.
How did I convert your recipe if I'm only cooking 3 pounds of pork?
@CookingConClaudia
Que pasa si la masa no flota?
Well, whatever floats your masa, right? 😁
How much lard was that?
Can I make this a day in advance ?
Hola
Where did you get the ollas to cook tamales?
Mexican grocery stores. Or Walmart has some, just not as big
Me gusta que me hagan ojitos😊
