for xmas eve i made an 8.5lb prime rib roast. i coated the thing with a mixture of 1 stick soft butter-1/4c olive oil, and 1/4 rosemary salt (all creamed together). it was the best roast i've ever made. the rosemary salt is a game-changer.

Great point! He could probably make a few extra grand a year selling it, but he just shows us how to make it! I asked for a food processor for Xmas this year. My wife asked me “what for??” Told her I needed to make rosemary salt! Wish I took a picture of her blank stare. Guess she doesn’t know what we know! 😂
In a review of our Underrated cuts uploads so far I would say the Flap steak is more tender however the Denver steak has more flavor and also gets a better sear due to the shape and intermuscular fat. Both are amazing cuts for sure. Upload 23/30 COMPLETE!! LG LG LG!!

Two cuts of beef I love that not a lot of people seem to talk about are chuck eye steaks and flatiron steaks I would love to see what you can do with them

Boneless chuck eye. Do it right and it eats like a ribeye.

My butcher calls these “Mckinney” cuts. Best yet, sells them in American wagyu with the most amazing marbling for cheap. We use these as appetizers to our ribeyes (who needed side dishes when you can have more meat!)

Denver cut is amazing where I am from no one has heard of it!
That’s because it’s regional. Learn different regional cuts and offer them as “specials”. When I cut for my market I would introduce cuts from other regions during major holidays and would always sell out.
I live in Denver and I have never heard of the Denver cut. LOL!

Great video! Growing up poor these were the kinds of cuts that I had at home when we had steak. Now I realize that you really need to be a good cook to make them tasty. Geesh, it's hard to mess up a rib eye! Anyway, thanks for reminding me that there are other cuts out there.

How about a Kangaroo steak episode? VERY underrated meat, full of flavour, super healthy and also one of the most sustainable meats and better for environment than most meats. Great show man! I love your channel and kids keep kicking our fridge after helping me cooking hahaha Now Let's go!

I think the London Broil doesn't get enough love sometimes. Give it a hard sear in a good steel or cast iron baste with what you like and finish roasting in the oven. Let rest and slice to your liking. I do it this for sandwiches or thicker for family dinner with Mash and Veg and make a little pan Gravy with the love from the pan, WOOYAY! I like it with fresh garlic, thyme and rosemary with the basting butter oh yea! Lol. Love your videos Sonny keep them rolling my friend!

Beautiful... i love doing this technique on a Chuck or Chuck eye. So flavorful and very tender if done well! Garlic, shallots, Tyme and vegan butter for the lactose sensitive folk is how i handle my meats.

Chuckeyes are my favorite underrated cut - would love to see your take! They're so juicy and flavorful and usually cheaper than ribeyes - just have to navigate through some interesting fat usually, but fat = flavor!
I'd like to see what you do with pork steaks, I run across them all the time and they are fairly inexpensive. They can be a little thin,so I put dehydrated onions in water and then dip the onions,along with the water on top of them near the end of the cook. They turn out tender & juicy. Great content, love this channel ! 👍🔥

@@Panama_Red you gotta try it, just season em up however you like & use the dehydrated onions with plenty of water to spoon over. I have grilled them and pan fried them both ways. I think the onions and water help keep them tender. 👍

Tri tip! We grill ours. Beautiful piece of meat that has to be cut on a diagonal. Butchers here do tri tip whole and in steaks. I would love to see your take on them!
Love Denver steaks. I salt them and stick them on an open wire rack in the fridge for 24-36 hours to dry age a little the day before cooking them. So good!!

Very underrated cut (well, at least in USA, in my country it's quite popular) is silverside (in USA it's called bottom rump, or something like that). It's not a cut for steaks, but after You braise it... OMG... My tummy aches with hunger just when reminded ;)
