56g breadcrumbs
120g fat-free milk
1 egg
15g soy sauce
14g gelatin
10g avocado oil
300g onion, grated
100g carrot, grated
15g garlic, minced
5g smoked paprika
112g cremini mushrooms, chopped
15g fresh parsley, chopped
448g 93% lean ground beef
448g 90% lean ground pork
10g salt
4g black pepper
Glaze
100g ketchup, no sugar added
30g Worcestershire sauce
15g sriracha
40g brown sugar erythritol

What temperatur is the oven in the first baking step when you put the Meatloaf under the Broiler??
@@Felix9111993 if your oven has a broiler then their will be a button labeled as such; it sets the oven to as hot as it can go (mines 550F) but I've seen other ones that are only 500f

Quick oats cooked to a thick consistency to replace the bread crumbs, this makes the meat much softer and moist, careful not to add too much but it works wonders in meat loaf, meat balls, burgers. Never have dry meat blocks again.

I made this and it came out amazing! your portion sizes seemed a bit small, but they turned out to be very filling. Served with a side of mashed potatoes, steamed broccoli and cauliflower.

Next up for you should be a veggie stock recipe with all the scraps you’re throwing out. Pretty sure a slow cooker or stock pot would work and veggie stock and replace water to add some extra depth to any savory dishes
Shortcut: instead of gelatin, use a meat mix of 2/3rds whatever red meats you usually use + 1/3rd ground chicken (not uber-lean, but basic chicken ground that has the chicken fats, skins and gnarly bits). Mix the meats well and the chicken (fat/skin/gristle/etc) will serve as the gelatinizing element.
Never seen this, but do what it does! Gelatin is super cheap and easy so ill stick with the current regimen.
Just made this tonight and this is a new staple meal for sure! It's so good.
I was especially impressed by the volume of it. A 10x6 brick is actually really big. I got to eat a pretty big bowl of meatloaf for 550 calories and I'm full!

Have you done a version with ground turkey in the mix (like 1/3)? I usually only add onion to my meatloaf but next time I will try adding veggies for max volume. The gelatin was interesting and I'm curious to see how it would affect my normal recipe.

For the mushrooms, I would recommend sauteeing them til they are very dry and a little browned and then deglaze with a little red wine or beef stock before mixing them in.
I like the suggestion! However , the mushrooms are there to maintain moisture. While I know sautéing them would add flavor their only purpose is for silky smooth mouthfeel from all the juicyness.

Worked with a guy that told me what his wife does for meatloaf (they have 5 kids) and it feeds them all.
Take 1 big roll of ground beef and 1 jar of sasla.
So easy and so fast and simple. The salsa has all the sodium and seasonings. I think they used a bread loaf pan.
Never done it so far but hope it helps someone 👍

Alton Brown also did a meatloaf that I really enjoy and I plan to modify this using some of his techniques. Namely:
Using Chipotles in adobo and ground cumin as well as adding a portion of the glaze to the meat mixture. I'm expecting great things!

Awesome recipe Nick another great addition to the cookbook would be Carrot cake , you would nail this because, unlike 2 years ago you are now the best anabolic baker on youtube. And, I think you can easily make the best one. Shockingly not many people are using brown swerve in their recipes, I think non anabolicly speaking I think claire saffitz x baker, bon apetit's chris morocco, joshua wiessman, and not to mention one your favourite's brian lagerstrom's and his carrot cake. Only you find the perfect balance of calories protein, flavour and texture, and you always nail it on the condiments and mix ins. A cream cheese frosting in it would be great especially since you already have a recipe for that frosting on the dime. ik this is a repeat comment but over 60 people liked the comment.

I am not an expert in health, nutrition, etc. but what I do know is that the options you're suggesting, like what I've been seeing in your videos, low-fat anything is terrible for you. They chemically process it so much that they have to put in additives that are known carcinogens.
I think these videos are good, but you need to do more research into the massive food conglomerates, they're poisoning everyone and anyone they can.

Meat loaf is better with turkey. And never use pork it is unclean.

@Words-of-encouragement.-. I used to eat pork when i was a pagan like you. I always hated pork and loved turkey alternatives like turkey bacon. I love beef but I don't think it is the right meat for meat load. The lord of hosts will utterly destroy your family if you eat unclean animals and worship idols
