Medu vada was my favourite in childhood too.😂 And I didn't used to enjoy idli much. But I had a Malayali friend in College, who used to bring idlis with different kinds of coconut chutneys and lentil ones ( called podi)- which eventually converted me to enjoying idlis, and being less fried it is healthier, if cooked well and rhe sambar and other sides are well made too. With idli, try dahi idli, sweet one, you will enjoy that I feel ( and dahi wada too). In Mumbai sometimes the medu vadas aren't fried in good oil, so can make the vadas taste a bit off, especially the street food ones. You must also try some fried idli too in south Indian cities or other places of India where South Indian food are found. They usually serve that with the powdered lentil chutney called podi- and fry it with butter or ghee.

Are you sure you two don't have a Bengali ancestor, ghughni is my favourite from there too...😅 In Mumbai, you get ghughni too-in spicier form called ragda pattice, the ragda being the ghughni with some additional chutneys or spices and pattice- is usually potato based fried and flat dumplings.
For something different but still very much a part of Calcutta food culture try Nahoum's bakery in New Market. The oldest Jewish bakery in the city. Their plum cake is the best in the world. Their cheese samosas, jam tarts, and brownies are the best! While in New Market look for Bondel cheese. It is the only indigenous cheese made in India (other than paneer). It's a soft smoked cheese, delicious!

Place 8: Smell wise the biriyani chaat one is only slightly different from jhal muri, probably by one spice mix. And I feel the simple jhal muri ( simialr to bhelpuri of Mumbai, but different too slightly due to some different ingredients like mustard oil)- too you might enjoy in Bengal.

Wish you had bought two rolls and tried two different kinds of egg rolls too with some veg or non veg additionally added, to it. Before going veg, in recent times, I would have double egg rolls or egg chicken ones in Kolkata, when visiting. And after turning veg, I tried paneer rolls, though it's not the same as egg rolls.😅😢

You should have tried hazi rolls in Bhawanipur they put special green chatni which makes their roll totally different from others in Kolkata

That egg roll of Kolkata is just simply not the same anywhere else in the world! Wish you had bought two rolls and tried two different kinds of egg rolls too with some veg or non veg additionally added, to it.
Before going veg, in recent times, I would have double egg rolls or egg chicken ones in Kolkata, when visiting.
And after turning veg, I tried paneer rolls, though it's not the same as egg rolls.😅😢

You should actually throw the cloves, 32:08 cardmom, & cinamon, while eating, it just adds fragrance and flavour to the rice, otherwise if you eat those , you will get very strong flavour kick,
Btw, that "Mattar is unique bengali Ghugni" nothing like in your face punjabi cholay bhutura. Bengali dishes has a slight sweetness after taste and a pleasantly mild sutle curry flavour.
