But being a local from Delhi, I would suggest you to roam around less chaotic, tourist attractions first. After gaining some experience, you can land up in this mess😅
Id suggest you to be prepared for hell lot of vehicle horn, noise and chaos. haha. Dont be afraid of the looks people will give you bcz that's a common practice indians have. hahaha staring at people. Beware of scammers, don't trust people easily. And make sure you look prices on internet before paying blindly. And try to enjoy the crowd as much as you can.

12:22 Hey max! The mango powder also called "aamchur" is added to give A slight sour taste in food. It's not sour like lemon which is slightly bitter. Slightly different but difficult to explain in words. It's used in samosa filling, in making chutnies and in chole.. next time also get anardana powder ( it's also often present in chole masala) which adds the flavour that you taste in Delhi chole. Another masala that I'd recommend you get is stone flower spice/ dagad phool... It has a very distinct rich fragrance and mild flavour but makes quite a difference when making paneer butter masala, pav bhaji etc..

Just suggesting, for spices just get only as much as you would really use.humid weather or if you accidently use a wet spoon or wet fingers, if it's not stored in clean sterile glass bottles,these powders go bad really fast. Store every spice individually in very dry and clean glass jars tightly closed. Use dry spoon to take only as much as you need for ur cooking. Also keep these jars in a dry space in your kitchen. Honestly if you are cooking just for urself you won't need more than a 100 gms to last for approximately a month. 250 gms is a lot for the powdered spices. For the whole spices, since you are buying them during the monsoons, please dry roast them in a pan on low flame constantly stirring for about 5 to 10 mins. Let cool then store them in air tight containers. Else they will develop molds and fungus very soon. Ideally peak summers are the right time to get spices. In Indian homes, the women buy all their spices in April or May for the whole year. They sun dry them after buying roast them, grind them and store them in sterile glass jars.

You need only basic masala to cook good tasty indian food 1. Mustered seed fine one 2. Cumin seed 3. Fennel seed 4. Turmeric 5. Red chilli powder 6. Basic garam masala 7. Fenugreek leaves or kasuri methi We don't use much garam masala everyday. The above masala with very little garam masala will make wonder

Max! Mango power is golld! If you love Indian chaats , the taste comes from chaat masala in which mango powder is the main ingredient! You can make your own chaat masala, look it up and add it to anything to give that sweet and sour taste distinctive of the chaat in India.

You should have checked the requirements for spices for different recipes you wanna cook, then make a list & get all those spices... If 2-3 spices or the one main spice for a particular recipe is missing, it won't taste same as u tried in India... Ohh man, u have taken up a challenging task because Indian food is very complex to cook, especially when a foreigner wants to try hands on ... I wish you have Indian friend to guide you through..❤

You should have checked the requirements for spices for different recipes you wanna cook, then make a list & get all those spices... If 2-3 spices or the one main spice for a particular recipe is missing, it won't taste same as u tried in India... Ohh man, u have taken up a challenging task because Indian food is very complex to cook, especially when a foreigner wants to try hands on ... I wish you have Indian friend to guide you through..❤
