  • In today's video I am sharing with you 4 meals I make for special occasions.
    For me sustainable living is always about cooking from scratch where possible, valuing what you own, introducing minimalist ideals by keeping our space free of unwanted items and lowering our waste wherever possible. Zero waste living is something I strive for. Meal prepping for autumn, learning new skills and minimising wherever I can. I hope you enjoy this calm cooking video!

    » Enoki mushrooms with Jerk Sauce:
    • INSANE VEGAN JERK TACO...
    » Jerk Seasoning:
    1 tablespoon onion powder
    1 tablespoon garlic powder
    2 teaspoons cayenne pepper
    2 teaspoons salt
    2 teaspoons ground black pepper
    2 teaspoons dried thyme (or use 1 teaspoon ground thyme)
    2 teaspoons sugar (or use brown sugar)
    1 teaspoon ground allspice
    1 teaspoon dried parsley
    1 teaspoon paprika
    1/2 teaspoon hot pepper flakes
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground clove
    1/4 teaspoon ground cumin
    » For the fried mushrooms:
    Put out two bowls. In one bowl add 1 cup of all purpose flour, and 5 teaspoons of jerk seasoning. To the other bowl add 1 & 1/2 cups all purpose flour and 3/4 cups plant milk. Mix the milk into the flour. You will coat your mushrooms in the dry mix, then the wet, then again in the dry and put aside. Add about an inch of high heat oil (I use avocado) to a pan and wait until the oil is hot. Place your mushrooms in and fry for 3-4 minutes on each side. Place on kitchen towel to soak up excess oil. Then create your tacos.

    ► Thai Green Curry Paste
    1 shallot
    1 thumb sized piece gallangal
    stems of one bunch coriander
    1 tsp white pepper
    1 tsp yondu
    1 tsp white miso paste
    40g green Thai chillies (seeds removed)
    2 stalks lemon grass
    1 whole head garlic
    1 tsp cumin seeds (toasted)
    1 tsp coriander seeds (toasted)
    Peel of one makrut lime (or regular lime if you can’t find it)
    Pound everything together, or place in a food processor! When you're ready to make your curry, fry the paste in 1 tbsp coconut oil for 3-4 minutes. Add one block of 16oz tofu to the pan and fry for 3 minutes. Add 3 cups of coconut cream, 20 lime leaves, 1 tsp of vegetable stock and cook for 10 minutes. Add in your vegetables of choice, and cook until they're soft. Add in lots of Thai basil then serve over rice.

    Well, Cheffy Chef Immy, since you asked… one thing that I loved about this video (and all your cooking videos) is the emphasis on home cooked meals that range from the simple to the elegant. We all know that some days we feel like cooking a dish that is unique, creative, and full of interesting ingredients, and on other days we look for a low energy meal that can be made all in one pot or one baking sheet. D’ya know what I mean? I also love your creativity and boldness with trying new recipes and making scratch “components”. So many of the unique ingredients that you use would not be available to me because I am a wilderness dweller from northern 🇨🇦, and yet I often feel inspired to try new recipes and source out an interesting ingredient (or DIY it) that I can try in a variety of different dishes. Plus… let’s be real here… those dumplings are a plateful of pleasure!! TYSM, Ⓜary💕👩🏻‍🍳

    Dumplings… they are little packages of homemade goodness bundled up with love. Ya just never know what flavours will burst from within. Dumplings are like a little hug on a plate. Even the humble drop dumpling (I know you love those too, Immy) is comfort and heartiness in a bowl. Thank-you for spreading the dumpling love!! I can never get enough, and I love that we share this passion and joy for dumplings. Ⓜary💕🥟🥟

    I love you videos, I especially like the ones where you are YOU. It's hard to explain, but when you are being totally authentic and making little jokes about things. I like your 'normal' voice more than your 'whisper' voice, and I love the way you keep the language easy to understand. I love the way you make things seem doable and explain things.     My spouse recently bought that Korean Vegan Cookbook but we have not yet made anything from it. Seeing the delicious looking food that you made has made me feel less intimidated about giving it a go!

    I really enjoyed this video! Your tip to keep notes on recipes is going to be a game-changer for me. It seems so simple - why didn't I think of it before!?     I enjoy your cooking segments, especially the dumplings. I had a great vegan veggie potstickers I use to purchase at a local grocery store, but now they only offer meat and veg so this recipe will let me experiment. Plus, watching you make them even though time consuming they are not as hard as I thought they would me to make. Thanks again for being sustainable and creative in all that you do. ❤❤❤

    I really enjoy this style of videos. I am currently folding potstickers (mushroom/veggie) for a Super Bowl party tonight. I want to try the vegan cacio recipe and will look into the cookbook. I love collecting beautiful cookbooks with great tasting recipes.
    FYI for xmas my mother gave me the most beautiful spice cookbook called "The Spice Companion" and it breaks down virtually any spice you could think of. Highly recommend.

    Love and Lemons first cookbook has a wonderful cashew fettuccine recipe that reminds me of the cacio e pepe you made. But the sauce comes together in a blender (and can be made in advance!). Similar ingredients - cashews, miso, nutritional yeast, garlic, lemon. Their recipe is with roasted brussels. I use any roasted veggie I'm in the mood for or peas! I've made for many non-vegans that enjoyed it. I really want to try the mushroom tacos!

    Not sure where you live in the US but I'm in a little town in Southeast Ohio and I can get Scotch Bonnets and jerk seasoning in the regular grocery store year-round.
