**Super EASY** Dill Pickles || Summer Canning || Large Family Food Storage

- Looking for a super easy dill pickle recipe? This is one I've been using for our family for years. I love canning in the summer and working to fill up our large family food storage! I hope you find this helpful! Here are the directions below as well as a few links to canning equipment through my amazon links. Happy Canning!
Super Easy Dill Pickles
*Fresh Dill (sprigs and heads)
*cucumbers
*garlic cloves
For the Brine:
*8 1/2 cups of water
*2 1/4 cups vinegar
*1/2 cup of pickling salt
Fill your water bath canner with water and set on the stove to start bringing to a boil.
Also combine the ingredients for the brine into a large pot set on medium heat to use later when filling the jars.
After cucumbers are washed begin slicing them lengthwise into spears. Place a garlic clove and dill in the bottom of each sanitized jar, then begin pack the cucumber spears tightly. once they are packed fill each one with brine leaving only 1/2 inch of head space at the top.
Follow proper canning protocol by placing a new lid on top (that has been sitting in a warm pot on the stove) and screw on rings to finger tip tight.
After all jars have been filled place them in your canner on your jar rack and lower them down into the water making sure there is enough water to cover them by 1 inch. Place lid on top and process for 15 minutes at a boil.
Place jars on a towel on the countertop for 24 hours. Your lids should pop to sound they are done. If some don't seal then place them in the refrigerator.
Let pickles sit for at least 2 weeks to ensure good flavor and ENJOY!

I just put a dish towel at the bottom of the pot. Or a pot holder. The idea is to make sure u don't allow the jars to touch the bottom of the pot... blessings ❤️
I've even seen 3 bricks covered in foil & placed in the bottom of the pot. Either way, u can save money by doing it this way & u can use it over & over again!

first time pickling ever and followed this recipe's every step. so freaking good. not only was the explanation through and comprehensive from having no supplies to having batches of pickles, the flavor is insane. our first batch was pickled on June 13th and today is June 27th, the first time trying it after waiting the required 2 weeks. we were excited and this morning ate the first one and it was amazing we ate a bunch immediately and will repeat this recipe forever! thank you!!!

I have taken rings and placed in the bottom of a pot then put my jars into the pot to keep them off the bottom. This is because I might no have to many jars to cann, so this has worked for me.
I used your recipe last year and our pickles were great! Back this year to watch video and use again.

Great video loved the tip at the end. I started canning without all the equipment I needed also. I used the rings at the bottom of my pot to create the air flow. We do what we must until we can do better

I used to use this silicone thing that went in the bottom of a stock pot to lift my jars before I invested in an actual canning pot. I think I got it from either Walmart or Amazon.

If you have to can on a bon fire, in an old wash tub, an old towel or rag, will make a great bottom to can with, use the tin foil to make a tent over the wash tub, and it works great, I've done it many time
The girls in my garden club showed me to put a few towels in the bottom to lift it. I’ve been doing that way forever and haven’t had any issues. Nice video. Very to the point and informative. The most important part to any canning is keeping that jar top clean so we ain’t canning botulism. Glad you mentioned that to remind people. ❤️
Wiping the rim in this case is important mostly to ensure you have a good seal. Botulism is an issue for canning low-acid foods. Pickles have so much vinegar and salt that botulism is never a concern (as long as the vinegar and salt concentration is correct).

Just use some extra lid rings to keep the jars off the bottom. Save the foil.

Always cut 1/4 inch off the bloom end of the cucumber, then they will stay crisp. Otherwise if you don't, the bloom end releases an enzyme into the jar that makes them go limp/soft.

You should cut the blossom end off to keep the pickles crispy.
You could have put together a bunch of canning rings & put in pot. Will raise up off bottom too.

I used to can pickles with my mom when I was a kid! I LOVE dill pickles and they aren't sold in this country, at all, if you ever find pickles for sale, they are always sweet. I do make "refrigerator pickles" from time to time but I don't have actual canning equipment. Aren't dill pickles the best?

Thank you for the video, how long would these be good for after canning? We did our first batch very similar to your recipe, but after more research for a bread and butter recipe, im seeing alot of places saying to use a minimum of 1:1 water vinegar mix. So that has me wondering how long these pickles will last since we did not match that ratio. Thanks for any input

Before I had all the equipment I used a stock pot and I would put a pie pan in the bottom upside down with holes in it this with the pie pan on top would work great too

To lift jas from the bottom of he pot,you can put 1 or 2 thick clean towels on the bottom of your pot. Place jars on top and proceed! Done the many of times without incident!
I'm rewatching now because I am trying to figure out how many 32 oz jars of pickles your recipe in the description will make?
Is that 4:1 water to vinegar ratio to low for long shelf life? Most recipes I see for non refrigerated storage ask for equal parts vinegar to water.
This is a recipe I’ve always used and never had an issue with. However, I do have a disclaimer that you should always can at your own risk and if you have any doubts seek them currently canning guidelines. Guidelines are constantly changing. I have two Ball canning books and the recipes aren’t even the same on some of the things because of the changing guidelines.
I still use this recipe, but feel free to use one of the others if you don’t feel comfortable with it. 💜
I had this concern as well … I ordered in a digital ph meter from Amazon and tested the acidity after 2weeks …a ph of 4.6 or below is considered safe for non fridge picking… mine are reading a ph of 3.36 . …. So it appears that this ratio/recipe is safe 👍… pickles are great too 🤓
Another way of doing it if you do not have a canning pot, you can cut a pop can in half and pierce holes in the can to allow the boiling water to escape the can. Then just put the jar on top of the pop can.

You can also just put a folded dish towel on the bottom of the stock pot
You forgot to add that the jars need to be immersed in a pot of gradually heating water so they can be hot before adding boiling water and putting them in a hot water bath or else the jars could break. (Putting hot in cold glass containers can break). Unless you have found that you have not had to do that?
I don't know if this is a dumb question but I have quart jars. Can you stack the cucumbers on top to fill my jar? First time canning pickles.

My grandma used to just fold a towel up and lay it in the bottom. I do it when I only have a couple jars.
