The combination of Liz and Uncle Roger was perfect. Liz has a genuine knowledge and expertise in the culinary industry but most specifically in her heritages’ dishes and the ingredients involved and Uncle Roger is a comedic genius with a natural camera presence by tapping into the stereotypes that he is proud of and has made a career from using those things to create an online personality with a large following and be comfortable enough to make jokes about those things and adopt these stereotypes which could be considered offensive and inappropriate in this day and age to provide humour and entertainment as well as having a decent level of knowledge in the kitchen as well. They’re a special guest combo that we didn’t know would ever happen but it is one that we needed after their chemistry together and with the guys took this video from a typically chaotic yet as normal entertaining video to a quality, energetic banger
That and Liz knows Roger well enough to help keep him from wanting to give what-for to them too. Throwing out the rice cooker and using packet rice were two cardinal sins against Roger’s “rice purist” tendencies (you can see his pain).

i think all the criticism they got could all be resolved by one thing : to NOT saying their food is authentic

Authentic or not that's not gonna save the rice
Not really. Western people like to westernize Eastern food according to preference. Nothing wrong with that. More is not always better. These 2 guys are doing pretty well.

As a Malaysian, I must say I'm impressed with Barry's & Jamie's first attempt in creating these dishes. I find the nasi lemak is the trickiest type of rice to cook, as the coconut milk(santan) gets burnt easily under fire, or it may stop the rice cooker from cooking leading to undercook rice. My family's trick is to steam the nasi lemak, which gives a more fluffy texture, and each grain of rice will not stick. Pickled vegetables to pair with nasi lemak is called Achar.
As for laksa, personally it's a very subjective dish to judge, just because in Malaysia, each state will have their own method of cooking laksa. Uncle Roger is comparing it to laksa that has a layer of oil on top, I presume he's comparing it to Kuala Lumpur's style of laksa.
All in all great job Sorted Food!!! Always love to watch kitchen gadget reviews & pretentious or not ingredient reviews from you guys!!! :D
For the nasi lemak, I always just use the rice cooker, and once it's cooked, check the rice if it's undercooked, and if it it, press cook again.
A rice cooker is brilliant in that it checks when the rice is done by checking the pot's temperature, which would be higher if no water is in it as water is a bad heat conductor. Although in the case of nasi lemak, the boiling point for the mixture might have changed due to using coconut milk, so the rice cooker might have turned itself off prematurely.
@@anasazmi8554 It's not that water is a bad heat conductor but water boils at 100°C. As long as there's water you can be sure that it's not more than 100°C. Once all the water has converted to steam (steam is also 100°C) and the steam disperses in air the contents of the pot can go higher than 100°C. This is why you can boil water in a paper cup

@@iluvdissheet well, in asia especially, "chicken rice" is consider a dish that has minimal wastage. The water use to boil the chicken will often be use to cook the rice together with excess fats removed from the chicken prior cooking. With that you get a flavoured rice. We usually serve the chicken boneless so that the remaining carcass can be boiled into a light soup to be serve on the sides. On by the way, this dish does not originate from China. Not a collab I expected, but definitely an enjoyable one!
Honestly, I enjoyed watching this a lot but simultaneously I felt so so sorry for Barry and Jamie XD They must have been under an immense pressure, absolutely no doubt. Proud of you guys!
they lost a lot of respect here. I want authenticity, not memes. What a bunch of dicks.
I can see the fear in their eyes lol
Responsibles taken when you claib 'traditional' and 'authentic'
@@dizzydazed8055 gonna cry lad?
Jamie "I put paella in a burrito" Spafford when told nobody puts dressing on cucumbers at 9:45..."So for my dressing" 😂😂
and then being surprised when noone touched it
I didn't understand the objection to that - just because its not exactly how Nigel Ng's family make it doesn't make it any less of an ok thing to put on the plate.
@@mordecai2005 my family and a million others too
@@yomama8212 Ok so some folk do it that way, but that doesn't mean its any less valid to make the dish SLIGHTLY differently.

3 dishes were prepared here:

Loved this episode!
As a Malaysian my heart is breaking into pieces everytime they do wrong steps
I fell in love with Liz at 12:40 when she said that usually the banana leaf is heated to make it more pliable and also adds to aroma of the dish. I am from interior Tamil Nadu in India and for all our long journeys we used to pack food in heated banana leaves. It tastes delicious!
banana and pandan leaves are the best fragrant leaves
nice tips, thank you
I remember travelling in trains for holidays where my mom use to pack iddlies and chilli powder in banana leaf. Elai sapadu is nostalgic
Wow, feeling great for someone to mention from south indian , especially tamil nadu side😭👌🏻
Correctu
Amazed that Barry didn’t lose within the first few minutes after demonstrating he knows nothing about Laksa 😂
Ben being all "Pickles ain't right here" is priceless when you realize that Sorted's own Nasi Lemak recipe includes quickpickled cucumber ribbons :P
Nephew Ben, Nephew Ben - first the rice cooker now this :P
Hiyaaaa why everyone in comments making memes of me laaaa 😭
@@ben-hn2ek ben.
Loved the repartee and sincere desire to be authentic in approach! Even though there were some misguided attempts to be authentic (or improve on the authenticity - which is really an oxymoronic concept), I really appreciate your efforts to raise awareness of Singapore and SE Asian food to your audience. Thank you for sharing and honouring my culture! 👍🏼🙇🏻♂️👏🏼
I laughed so hard when barry pulled out 'coriander oil'.
So you guys have all sorts of fancy gadgets you test but you never tested the things you can cook in a rice cooker?!?!
THIS!!!!!
So true! I make things other than rice in my rice cooker all the time.
Salmon is my go to.

OMG Uncle Robert is a hoot!! You need to bring him back to judge some future battles
the whole faucet thing reminds me last year they were going to build an actual working cooking studio- what ever happened to that other than covid lol
I mean, I feel like covid is a pretty legit explanation lol
Future video prediction: Ben does “A Chef Tests: Rice Maker” and all the different things you can do with it.
That's actually a GREAT suggestion since not all rice cookers are the same.
cook rice, steam veggies, make black garlic...
@@gozerthegozarian9500 I have a very fancy Zojirushi model, and it says you can make cake in it!

🤣🤣🤣
Jamie is doing a "traditional" meal and I'm sitting here, just waiting to read about the inevitable diplomatic protest from Singapore.
Aren’t we all? 😬
With the White Shirt Mafia that banned public protest and the ONLY bloody country where you have to apply thru them to even have a protest? Pfft. Yea right...
@@SortedFood Last time I learned some colourful phrases in Spanish.
You guys are a food and language studies channel!
Singaporean here. Rice wasn't ideal but overall looked pretty good to me 🤣
It’s Barry who should worry. Noodles in a rice challenge - and rice noodles in Laksa!?!
bruh if uncle roger and liz were not there they would never have used shallots
bruh, uncle Roger lowkey knows so much about Asian food in general, I've seen him comfortably talk about cuisines from so many different Asian countries, he's kinda like an expert honestly
really enjoyed the video! Great vid guys
Good thing Barry didn't really go the authentic route for his Laksa and didn't use candlenuts. Cause knowing Barry he'd probably end up poisoning everyone in the studio.
My family usually buy malay style kway teow but when my mom tried making it for the first time with candlenuts, I could tell she added too much by me throwing up the next morning D:
Barry's done a laksa with candlenuts before.

I'm so happy someone finally called them out for constantly using metal utensils with nonstick pans
1:41 watching Jamie laugh at Barry being told he's already fucked up before he started cooking is part of my daily ritual now
Omg. One of my absolute favorite sorted videos!
Barry: if this wasn't fancy enough, I'm going to top it off with some coriander oil.
Both guest judges: immediate groan.
I imagine Mike was glad he missed this challenge
Well sad too, because he not there to defend himself after getting roasted on Uncle Roger's channel.
I imagine it was by choice... I dunno why but I get the feeling of a real rift in the team with James leaving and whatnot... Not to mention they have left Jamie in charge of the social media. Shame all around.
@@MrStehooper Not sure if I would read too much into it. James got an opportunity, Mike has often preferred being behind the camera - also, with 2 guests, they can't ALL be there. And Jamie has always been the voice of their social media and communication - literally his job, as they've mentioned in the past. Considering how long they've been friends, a 'rift' to tear them apart would need to be huge.
@@chosethebluepill You can have a rift and still be mates, no? The key point here is this video was a HUGE change of direction and for people who pride themselves on sustainability, equality and a host of other positive issues... Releasing this video is like a slap in the face. I don't tend to share the same views as people who deny or defend the genocidal policies of their home nation and I don't expect that to change anytime soon. As far as we're aware, Mike wasn't there and that would tally with the absolute destruction that Ng poured on him on his channel.
The James thing however, I'm still not convinced by... Opportunities aside, why would you leg it from a thriving channel after months of various excuses of why he wasn't in the studio?.. 3 eps back and he's gone. There's more to it but we'll never know... It is what it is.
I'm just here to say that please remember Jamie's recent IG post about the changing community vibes, please keep it non negative, non confrontational, and non accusatory. PLEASE let's not descend into speculation and cheap gossip. Sorted deserves better. Let's not create drama where there is none.
To be fair, Uncle Roger could have gifted two rice cookers at start of this episode, one to each team.
Imagine the funsies?!?
I LOVEEEEE this episode! The roasting level is beyonddddd. Hi Uncle Roger! Niece from Singapore here!
