Hi! This looks great, thanks! I'll have to wait till April or May to try this as I'm doing a personal dairy free and meat free (with exception of fish) experiment as a food elimination thing due to inflammation issues. I wanted to say a couple things though: 1. Turkey would have been more traditional pre-hispanic times. So that's a great choice. 2. Poblanos are great. I'd like to suggest you roast them first on a comal (Don't cut them yet) until they are blacked and then put them in a container with lid for 20 minutes to steam. Then peel the skin off. It will be DELICIOUS when you add it to your mixture!😍 Plus, that's how you prep them for chile rellenos (which can converted and made keto as well). 3. I suggest getting a comal to heat up the tortillas. If those are the Mission Low Carb ones (which I use since I can't find lupin flour anywhere), then they'll heat up well as a regular flour tortilla would. I use the stovetop in general (but its a flat surface and not gas powered). Its best to heat on one side until it starts to get dark and turn around and do it that way as well. It will be done when it puffs a little but don't burn yourself! Plus, the little bits of blackened char makes flour tortillas taste even more delicious. This is how my dad taught me to heat tortillas. Yiu could try it straight on your stovetop but be careful. I've never done it on that kind of burner which is why I suggest the comal. If you get a traditional comal you'll have to cure it. If you do the Mission Low Carb ones this way, it should even be softer afterwards. 4. A comal is great to have. You can roast chiles, tomato, garlic, etc and make your tortillas on them. 5. Have you heard of Tlapique? Its like a tamale, but has no masa. Tlapique de Pescado is with fish. I ask because that's what I'm making today.😍 Instead of steaming, you cook on the comal. It also creates a lot of smoke when making this so keep that in mind..
I love how easy pickled red onion is, and I agree that salsa verde with poultry is really..really good. I have that exact salsa in my frig right now waiting for marinated chicken thigh taco with cotija cheese and cilantro, and Banderita street taco tortillas.... do they screw with your blood sugar? I've been searching for comments, the ingredients on those tortillas are a lil sus.
Tacos itself isn’t much of a time taker, the meat or meat replacement really is the one that needs to take a good while to cook, while building doesn’t take but a min to do. Also a good budget meal to make, especially turkey Only issue is my family, They like beef instead. As someone who wanna be healthier, it is hard to motivate them to switch to a better cheaper source of meat. And if time is willing, I would fold up some foil and bake those smaller shell tortillas in the oven for like 20 or so mins around a low temp, can’t remember which temp, and make them crunchy like a hard taco. Granted, not like a good ole corn shell taco, but it does have that satisfying crunch I do miss. I even oiled up the outside and season it with garlic or what ever seasonings you desire for it. (I was craving Doritos locos tacos that night) Regardless, another good suggestion to keeping it around a time saving low carb meal, always a delight to seeing this. Peeks my modivation go go back on it as I realize it is best fit for eating needs.

I'm not a fan of using ground turkey in place of ground beef, but in this recipe that does not seem to be the case. The turkey is used because it is what is wanted. I will try this the next time I have some ground turkey in my kitchen. Thanks.
I’m not a huge fan of turkey for tacos, it’s always a bit dry but if that’s what you have in a pinch it’s workable. I would try to add moisture to it. I make my own mayonnaise and ranch dressing I would mix that with some hot sauce and maybe mash some avocado up in it to make a very wet type of salsa. When you mix the hot sauce with the ranch it doesn’t really taste like ranch anymore it’s almost the same effect of sour cream and salsa. Not beef but it still looks pretty good. Making the tortillas is OK but I’ve been buying these zero and low carb tortillas that are 3 g and it’s been kind of a lifesaver I can replace bread with it for the most part. They have keto bread now that’s pretty cheap and easily available and a couple different brand even at Walmart but they still kind of triggered my insulin I guess even though they’re technically zero net carbs and after eating it I get really hungry but the tortillas are fine they don’t do this to me. I don’t eat a ton of them but it’s nice once a week or so to just make tacos or a wrap and there’s so much better than any of the keto stuff in the egg life and those types of wraps. I try not to eat too much of them to avoid the inflammatory‘s but I’m glad they’re there and I love it.
As Tuco says, "There are two kinds of people, my friend, Those who make turkey tacos and those who are friends with a bushwhacking chicken." After the tortilla video, I wouldn't trust that chicken! Always love your content! Thanks for what you do!

Dried tear inducer, LOLz! I HATE cutting onions, they make my eyes water like a mother on prom night! I ONLY buy the dried variety, to avoid the induction of tears!
A good tip when cutting onions is to run them under water for a few seconds. That pretty much eliminates the reaction it will have with the moisture in your eyes!

Ahh yes, a comal! I did want to blacken the ancho chiles, but that requires some time, so I left it out. But that with some cheese is 💯

I dont monitor my blood glucose - so I cant say for sure. I usually track my macros and timing and determine how I feel based on that!
