  • Making gyoza wrappers from scratch is easy and fun, just need salt, water, and flour!

    Ingredients:
    2 cups (240 g) all-purpose flour (or 120 g bread flour + 120 g cake flour)
    1/2 tsp. salt
    1/2 cup (120 ml) just-boiled water plus more if necessary (should be around 120 - 150 ml)
    You will also need:
    Potato starch (corn starch) for dusting
    3" (8 cm) cookie cutter

    As a kid my mom and dad would commit us kids for an entire Saturday to make gyozas in mass and from scratch. Yes the wrappers and the filling were all "processed" in mom's kitchen.
    We used an old hand meat grinder to grind the pork (ground pork wasn't available in our local grocery stores) and Chinese (napa) cabbage into a large bowl then add minced garlic, shiitake mushrooms, nira (garlic chives), minced green onions, soy sauce, sesame oil and ginger. Then mixed together.
    In the mean time, my younger brothers with my mom were busy making the dough for the wrappers then roll the dough out in thin layers and cut with a large round cookie cutter.
    After everything was ready, we'd form an assembly line where the first person would grab a wrapper and apply a water and corn starch mixture to the perimeter. The prepared wrapper skin would be passed to the next person to have a tablespoon of meat filling placed inside, the third person's job was to fold and crimp the wrapper edges together and place on a cookie tray. This got monotonous, so we'd swap out positions.
    After we've made a couple of hundred (yes at least 200), my mom would freeze most of them for later but we'd have a wonderful fresh made gyoza dinner that night.
    My mom being Japanese preferred the gyoza's lightly pan fried while my dad being from China loved them boiled, so we'd always have them both ways at dinner time.
    I recently lost my dear mom but every time my wife and I have store bought gyozas or other Japanese food for dinner, they help bring back some wonderful memories from my childhood and especially of my mom.

Hope one day they will remember my cooking and learn from me before I go... Your mom's homemade gyoza should pass onto the next generation! You have such a wonderful memory with your mom. Food memory is so strong and stays inside us. The taste, smell, the look... all stays in a very special place in our heart!

    I was thinking how different could it be between handmade and store bought wrappers and why waste so much muscle and effort to make them. But then I actually tried making it from scratch and OMG, I've stopped buying store bought wrappers since then.
    Handmade wrappers are truly life changing 👍

    Made the round dough pieces a little thinner and ended up with more than 40 pieces.
    Was worried the thin dough won't hold up the filling but they turned out great and delicious, this is my 2nd time making them, thank you for sharing the recipe!

    Really awesome! I just started making my own gyoza and siomai but was using store bought wrappers which are 'iffy' sometimes they are dried out and the store is far from my house. I thought I'd learn to make the wrappers and this is the first video I came across. I figured there wasn't much to making them and I was right. Thank you for presenting a great instructional video and also for the pleasant music. ))

    I followed these steps, the instructions were easy but for a first timer gyoza maker it was hella not easy! It was very strenous! But after tasting my cooked gyoza oh boy it was so good even my picky family who'll gordon ramsey any cooking approves! My dad even had seconds for my taste test! It was all worth it!!

    I am in love with this recipe ! i tried it the other day and omg it was just amazing! i did have to add a little more water as suggested. They where so good, i couldnt believe i made them. hahaha so simple !
    And i tired boiling them with some wonton filling and they worked ! :D

    Hi Nami san! Just made gyozas using your wrapper and filling recipes. It's hard work but worth it I would recommend making the wrappers thinner.

    I have no access to asian shops anywhere near me, so gyoza wrappers are something I can never buy. I have to go several hundred kilometers if I want to shop asian ingredients. Some things like oils, spices and sauces can handle the way home but the frozen section is off limits because of the distance. So I make my own gyoza/wonton wrappers. This recipe is really good, makes a really good dough and when kneaded enough it’s really smooth and elastic. I use a pasta machine to get it thin.

    This taste delicious and quite easy enough to make. I do have a problem with storing my already pre-cut dough in the fridge. I find that in the morning the wrapper sticks together because of moisture. I don't understand why since it's place in a tight container. I just cut the dough again in the morning which takes effort.

      I'll try your suggestion and store them in the freezer. And, yes, you're super right that they stick together even when I placed a bunch of potato starch in between. But really delicious though. It's so moist and tasty that even though it takes effort, I keep making them. Thanks for sharing. ^_^
