wow he made everything from scratch by himself, 100% man power with no machine involved at all. he is so dedicated with his recipe even know the best ratio for his dumpling. i hope he is not retire soon.

Getting old, tired, and quite possibly even in pain at some point during the long day, he refuses to lower his highest standards, delivering the best of his art/craft time and again with an unflinching persistence. As long as he goes on, civilization will not crumble down and chaos will not reign supreme. I dream of tasting his gyoza...

that s exactly how my parents would make the dumpling, using cabbage, leek, and pork, their secret is to add some fish or bone soup for the inside instead of water, even not pan fry but boiling these dumplings come with the yummy taste
