Leisa, get a pair of the BBQ gloves, they have silicone grip stripes on both sides, and you can grip the hot jars without burning yourself. They're also great for protecting your hands from any "lava bombs" as you're stirring jams, jellies, tomato sauce, etc. Right now I've just got 1 set, but I'm going to grab another when I'm back in Lowe's, so I've got 1 set dedicated for my canning equipment. They're machine wash & dry.
I was about to post the same thing. Birds eating peppers then pooping out the seeds bc they don't fully digest are one of the main ways chilies / hot pepper seeds get spread in the wild.
I also add jalapeno to some jams, did not know it was not an approved method, never thought twice about it, I am still here. I also add crystalized ginger to jams, it especially goes good in cherry and blueberry jams, adds a nice kick, just a few tablespoons.
Ooh, I have two sandwich baggies of habaneros from last summer. Normally I use them for hot pepper jelly but they might be a zippy substitute for the jalapeno in this recipe. Strawberries are just ripening here too.

We have strawberry season in april in California. As i watch you cut those strawberries, i cant help but think you would save a step by holding the top of each one and cut from the bottom up then after the last cut you are left with the stem which you throw out.
Chickens can’t taste your hot peppers. They lack heat receptors. My chickens gobble them up! It helps with natural worming, too. Also, washing your hands with soap and baking soda will neutralize the capsaicin that can burn your eyes, etc. Great video thanks!
This is great! I have not seen making jam with pectin. So much easier and quicker! With no pectin you cook forever to reduce and use the cold spoon test to tell when it’s ready. Did low sugar with just 2 cups and you are spot on with it darkening. Still tastes good but not so pretty. Did peach jam the same. I am sure going to be a pectin fan from now on! Thank you!

I made strawberry jam for the fridge with a lot less sugar. I will be enjoying it for the next few weeks. My main complaint about store bought jams and preserves is that it's waaay too much sugar for my taste. I understand though that there is a reason for the amounts when canning. My theory and thinking behind adding peppers to jams or jellies, is there is an approved pepper jelly recipe. Depending on the flavor of jam depends what size we use, everything from half pint to pint. Some we like in the 12 oz jars. My apple butter goes in half pints because I'm the only one who likes it.

I’m allergic to strawberries. Any suggestions for substitutions? Birds are not susceptible to the ill effects of capsaicin, which is the stuff that makes peppers taste and feel hot to mammals like humans and dogs. They love peppers, hot or not,and benefit from the high nutrient content. 👍
I had 8 cups no matter how I tried to measure. They were halved and some quartered. lol So I used 8 cups of strawberries, 8 cups of sugar, 8 TBs of pectin, and a splash extra of lemon juice. I hope this is ok. I'm steam canning as I write this. I hope it sets!

Allo! I cannned strawberries in syrup ball recipe. The strawberries pushed against the jar lid, some siphoned out, and they are stuck to the top of the jar. When I tilt the jars, there is barely any strawberries moving the remain stuck squished. The seals seems to be there but wondering if they are safe. Top ones are a little pale. I may not to do this again. My jam is fabulous though.

I made strawberry jam and the sugar didn't completely dissolve. Should I dump them out and cook it longer or will it get too stiff because of the pectin? I hate to waste the lids, but there are gobs of sugar in it.

I use my Presto 16 quart pressure canner as a steam canner. Follow all instructions for pressure canning but you don't add the weight. Once I have vented with steady stream of steam for 10 minutes, I start the timer.

Steam canners don’t need a lot of water and are great for everything you usually water bath, as long the processing time is under 40/45 min. After that you risk the canner to run out of water. . Said that, you can water bath can this recipe in your regular water bath canner anytime.
My daughter and I went to a (you pick) farm and I paid $30 a gallon!!! We got 3 gallons!! The gal dumped them all in a plastic bag and after our hour drive home,we had a bunch of mush!! Nooooo!!!! 😆🍓🍓🍓
We got them home,quickly cleaned them and stuck what was usable into the freezer. They'll be used for jam and dessert. I was pretty steamed but whatcha gonna do? Make jam!!!😊

I never debubble jams, honestly it doesnt seem necessary to me because it is essentially a thick liquid.

The water needs to be 150-180 degrees depending on what you're processing prior to adding the jars.
