It's the lecithin in soymilk that creates mayo emulsion. Can measure out oil and soya in beaker; start with stick blender at bottom. Raise while wizzing just til floating oil gets pulled down slowly. I've also had luck with bullet type blender by adding pinch of guar gum. Any big difference in temp between oil and liquid can cause failure. Boiling potato in skin prevents sogginess. Halve immediately after draining. Peel asap. Acid and flavor can now be absorbed: chili in vinegar for example. Then the mayo will be creamy binding once well cooled.

(: You’ve got me thinking about using a little maple syrup & an apple wood smoker on this recipe, maybe a touch of smoked paprika for color? I use refined coconut oil, maple syrup & liquid smoke & a sprinkle of salt to make a really delicious bacon fat replacement & roll it into tortillas (: if you haven’t tried you must! And I have to add I adore your accent jana it’s so soothing & you are so beautiful & vibrant!! Your videos always put me in a good mood & you never cease to inspire
