THAT VEGAN CHEESE WITH HERBS AND GARLIC TO LIVE FOR!

  • This vegan cheese is so easy to make, requires only staple simple ingredients, and takes little time and zero effort to make, it's unbelievable! It also melts beautifully so it can be used for pizzas, pasta, cheese sauces, and grilled cheese sandwiches!
    INGREDIENTS:
    1 cup of raw peanuts, without the skin
    3 tablespoons of Provenzal (2 cloves of minced garlic, parsley, and 2 tablespoons of olive oil)
    1 cup of unsweetened vegan milk
    1 cup of water
    a pinch of turmeric
    2 teaspoons of salt
    2 green olives or 1 1/2 tablespoons of nutritional yeast
    1/4 teaspoon ground white pepper
    3 tablespoons of sour starch (cassava) or potato starch
    METHOD:
    Add the peanuts to a bowl and cover them with water, cover and allow them to rest in the fridge overnight, or, simmer them in water for about 6-7 minutes.
    Once the peanuts are soft, add them to a blender along with the water or unsweetened vegan milk, turmeric, salt, starch, nutritional yeast or olives, and white pepper and blend very well.
    Meanwhile, make the herbs mix by chopping fresh parsley and mincing the garlic, then add to a bowl along with the olive oil, then mix until combined. Set aside.
    Once the cheese is blended, add it to a medium-sized pot and stir it under medium-low heat for about 6 minutes or until you see that the cheese thickened up considerably.
    Grease the mold with olive oil or place a cling film on it, and add about one tablespoon of the Provenzale sauce all around the mold. Reserve.
    Turn off the heat and add the cheese to the mold, cover it, and put it in the fridge for at least 6 hours, but for better results, allow it to be in the fridge overnight.
    Remove the cheese from the mold, place it on a plate, and keep refrigerated. Lasts for up to 5 days.
    The mold I used is 12 cm in diameter and 6 cm in height
    CUPS CONVERSION:
    1 cup = 250 ml / 8.45 oz
    1/2 cup = 125 ml / 4.22 oz
    1/3 cup = 85 ml / 2.87 oz
    1/4 cup = 60 ml / 2.02 oz

    I'm so excited to try this one. I've been making peanut milk for about a year (because all other nuts have increased so much in price). It is a rich and creamy milk, so I'll bet the cheese will be great.

    Very interesting recipe, and I have everything except for the sour starch. May I know how do you ferment your starch or is it available in the stores already that way?

      I forgot to mention this part in the video, you can buy sour starch online , or in your local Latino shop, I also have a link for it in my Amazon shop in the videos description. It is possible to ferment the cassava at home but it is a very lengthy and laborious task, takes a few days and the portions are too small for the work so I never done it before 😣

    Sorry to ask this but were your peanuts actually raw or were they dry roasted? because of the colour, they look roasted??

    I read in the comments that cashews can be substituted. Do I use raw or roasted cashews? Also I love hazelnuts. Can I substitute raw hazelnuts?

    I made this with roasted and salted peanuts from a tin 😄, and put the olive oil and garlic into the cheese, no parsley at hand. Soaked overnight. Doubled the nooch. Turned out like a firm pudding (which it is😄), but spreadable. It was delicious!

    I am 10000% doing this for my next charcuterie board. Thank you for yet another amazing recipe!! 1 thing I might add is some sauerkraut liquid. I find it adds a certain flavour that really hits my pallet just right. The olives is an amazing idea as well, I'll definitely try it.

    I made this and I've only made 2 homemade vegan cheeses so far. This one is my favorite! Love the taste! 😊 such a good recipe. I haven't chilled it yet. It's on the stove now. I used unsalted peanuts from wegmans and I didn't think I'd like it so much. Better I love the flavor! Awe❤

    Thank you!!! This is an amazing cheeze, I made it yesterday. Those green olives and the white pepper are the game changers, I love it ❤ But it‘s quite a big portion, so I‘m thinking about freezing half of it - hope this will work out.

    This is the most accessible recipe for me that I've ever seen for vegan cheese. Peanuts are all around the corner here while cashews are expensive and specialty. I don't find nutritional yeast at all but olives are sold here.

    Love you Chef, I look forward to trying this. For All you animal lovers out there, I love my animals but they are Not Allowed in my kitchen or dining room. They lick, they smell each other, including each other's feces & urine, they walk on everything including feces & urine & then, you let them walk on your cutting board & kitchen counters. & My friends will say, but they are inside cats; they still have litter boxes that they walk thru.

      I feed them regular cat food as cats are fully carnivores and cannot have vegan food 😰😻

But you never find in a store what constitute the natural diet of cats which would be birds, lézards, mice, rodents, snakes....In the store, they sell animal foods chicken, beef, pork, and fish that cats would mostly never eat in the wild and that come from factory farms.

    I just made this and licked the pot and the whisk afterwards 😄 I had no turmeric (I don't like handling it) and I can't use olives or olive oil because my cat goes absolutely insane around anything from an olive tree, but it's delicious with sunflower oil and nutritional yeast too.

    Jana, is your cat VEGAN? What do you feed her? I have a cat since a few month, that came to my house and stayed on my porch. Three weeks ago she gave birth to 3 kittens in my bedroom. I can't give them to a shelter, I love the cat and her kittens. Can you advice me on what to feed the cat.

      Feed the babiez goats cheeze & tuna in water for Mona.
      Cats are carnivorez & DO NOT HAVE THE BODY TYPE FOR VEG.
      Avocado or fresh coconut meat - sure.. but stick to grain free food if You buy in packagez

    Very grateful to you for introducing me to Sour Starch. Cassava flour on steroids! Can only purchase it online, and it ships from Brazil, which is fine as long as nothing is in lockdown, but it does make me wonder, just in general, if one could make it at home. Couldn't find any useful info online. Do you know?

      Almonds, cashews, sunflower seeds are the ones I have tried, I imagine that walnuts would be too oily?… 🤔
