Can You Turn Tofu Into Vegan Ground Beef?

  • Do you think you can turn tofu into an amazing ground beef substitute? And the answer is yes!! YES, you can, with the right method and the right ingredients you can transform a simple block of tofu into this versatile and delicious ground beef that’s gonna get you hooked and you won’t want any other type of vegan meat, guaranteed.
    And what is more amazing is that from these meat you can make several other recipes, such as lasagna, meatballs, burgers, Bolognese pasta sauce, and pot pies!
    INGREDIENTS:
    550 g extra firm tofu
    2 tablespoons olive oil
    1/2 medium onion, minced
    600 ml of veggie broth
    FOR THE MARINADE:
    1 cube of Veggie Broth
    1 tablespoon soy sauce
    1 teaspoon Marmite
    1/2 tsp liquid smoke or 1 teaspoon smoked paprika
    1 tsp browning sauce
    1/4 teaspoon instant coffee
    1 tsp vegan Worcestershire sauce
    1/2 teaspoon onion powder
    1 teaspoon garlic powder
    2 tablespoons olive oil or neutral oil
    2 tablespoons water
    1 tablespoon of tomato paste
    1/2 teaspoon dried oregano
    METHOD:
    Crumble the tofu into a bowl, reserve.
    In a medium jug, add all ingredients for the marinade, mix to combine the ingredients, add it to the crumbled tofu and mix the tofu and the marinated very well so all of the crumbs are coated evenly.
    Spread the marinated tofu into a baking sheet in one single layer
    Put the baking sheet in a preheated oven for 25 minutes at 180°C. This time can vary depending on your oven and the tofu you’re using. The crumbs should be dry and a bit hard to the touch, as opposed to soft and moist.
    Open the oven once or twice and with the help of a fork, move the tofu around so it browns evenly
    In a pot, over medium-heat, add olive oil, when hot add the onions turn into a golden color, add the tofu meat and stir for a minute, then add the veggie broth.
    Stir to combine and allow it to cook until the veggie broth has reduced and you see none left in the pot
    if you wish to freeze it wait until it’s cold, then separate into smaller portions if desired and put them into freezing bags
    The vegan tofu meat can be frozen for up to three months.

    An easy way to add more savoriness to the meat is to use dashi instead of veggie broth. Traditional dashi uses kombu (seaweed) and katsuobushi (bonito fish or tuna that has been dried/smoked and sometimes fermented.) The kombu adds glutamate which is the amino acid (protein) that triggers the umami (savory) flavor in your mouth. Katsuobushi contains an umami enhancer that amplifies the glutamate affect and adds a little complexity to the broth.
    A vegan version of this uses kombu and dried shiitake mushrooms (there are two glutamate enhancers - one in meat and one in veggies.) Shiitake is a wonderful replacement for katsuobushi. Often companies will also make packets of dried pellet dashi as this is much more convenient for everyday cooking. So you can buy some of the dried vegan version which would make it very convenient.
    This should make this vegan ground beef taste more meaty since the primary focus of dashi is umami.

    I love tofu. I lived in Asia and it’s highly regarded as one of the seven sacred grains (which includes beans). I think all the tofu-bashing is a dairy and beef industry narrative. I saw this happen when I first turned vegetarian in the 1980’s - same arguments, different generation. Anyway, thank you, Jana, for all the wonderful vegan recipes.

    Hello my sweet Zana, thank you for your videos. Here is a recipe i worked out, see if yoy like it!
    Instead of buying TVP soy mince, I tried to make the bean mince myself, since I had boiled soy beans and frozen them for soy milk. I cooked it like bolognese, it came out like it was tvp, try it if you want. You, as a chef, will improved it
    (I'm sorry, I don't remember from which kind person I found the recipe for the milk. But it is 1/2 cup of boiled soybeans with 2-4 cups of water, depending on how smooth someone wants the milk and without straining it. With rolled oats or nuts 1/ 2 cups with 1 liter of water whithout any waste). My love from Greece🥰

    So, you DE-hydrate and then RE-hydrate? Wouldn’t starting with frozen and thawed tofu give you the same texture results?

    I love the burger dude. The yuba beef n cheddar sandwich is amazing.
    I have a triple batch of this tofu beef crumbles in the oven right now. I decreased the oil to 1 tbs for the whole batch as I know I will be using some to sauté the onions and garlic before adding the tofu. Going to make some tacos, and the rest is going into a bolognaise sauce.

    Thanks for sharing. However, because so many of these numerous additives contain high amounts of sodium, it would be interesting to know how much salt this mixture contains per 100g. Would you know?

    Why? I eat vegan meals to avoid meat. I like tofu. I want my tofu to taste and look like tofu. Making it resemble ground beef is an insult to the tofu. It should shine on its own merit. It's fine to crumble and saute and add it to a casserole or something, but it should still be recognizable as tofu. Celebrate the tofu for itself and make it shine, not try and make it pretend to be meat for those vegans who secretly still want to consume meat, but don't for whatever reason. If you are truly vegan, the sight, smell and taste of meat is repulsive. Only carnivores who are delusional and eating fake meats and think they are doing good, buy fake meats and make them. Plants have consciousness too. They scream at the approach of a harvesting machine. To them it's a massacre. Someone talking to them and harvesting gently and prayerfully and thanking them for their sacrifice is OK. They just exit stage left and leave their body. They expect to die. Science has proven that plants have consciousness back in the 60's a bunch of hippies played music and hooked up monitoring equipment to plants. Since too. A life is a life. Plant, rock or animal.

      Get off your high horse. She could have called it tofu meat but used a term identifiable to non vegans, this makes it easier for those who wish to cross over to a vegan lifestyle some sort of idea of the flavor. The flavor of vegetables is wonderful and adding spices, herbs and flavor enhancers only adds to the wonderful flavors that are available to people. As for vegies having feelings, they are plants, created for man to eat. Don't overdo it, unless you want to starve. Comments like that is what gives veganism a bad name. Lighten up.

      @@shaza6547 Good idea. You can also add some cooked green lentils to your ground beef recipes to make the meat go further. They're a great source of protein and fibre so will make the dish healthier.
