OLD SCHOOL GERMAN CHOCOLATE CAKE

- 2 all-purpose flour, plus more for the pans
1 teaspoon baking soda
1/2 teaspoon salt
4 ounces German's Sweet Chocolate, chopped into 1/2-inch pieces
1/2 cup boiling water
2 cups sugar
1 cup (2 sticks) unsalted butter (see note), plus more for the pans
4 large eggs, separated
1 teaspoon vanilla
1 cup buttermilk
Coconut and Pecan Filling
1 (12-ounce) can evaporated milk (about 1 1/2 cups)
1 1/2 cups sugar
4 large egg yolks, slightly beaten
3/4 cup (1 1/2 sticks) unsalted butter, cut into 12 pieces
1 1/2 teaspoons vanilla
1/4 teaspoon salt
2 1/3 cups unsweetened flaked coconut (about 7 ounces
1 1/2 cups chopped toasted pecans
Instructions
To make the cake: Place a rack in the center of the oven, and heat the oven to 350 degrees. Lightly grease and flour three 9-inch cake pans, and shake out the excess flour.
In a large bowl, sift together the flour, baking soda and salt. In a small bowl, cover the chocolate with the boiling water. Stir to melt the chocolate.
In a second large bowl, cream together the sugar and butter using an electric mixer on medium spead. Continue to beat until light and fluffy, about 2 minutes. Add the egg yolks, one at a time, beating well after each addition. Beat in the vanilla. Alternately add the flour mixture and buttermilk to the batter, blending on low speed, and beginning and ending with the flour mixture. Fold in the melted chocolate.
In a third large bowl, beat the egg white with clean beaters on high speed until almost-stiff peaks form, about 4 minutes. Fold the egg whites into the batter. Divide the batter between the three reserved pans.
Bake the cakes until they spring back with lightly pressed in the center, 28 to 32 minutes.
Let the cakes cool in the pans for 15 minutes. Run a knife around the edges of the pans, and gently shake to loosen the cakes. Invert the cakes once and then again onto the racks to cool completely right-side up, about 45 minutes.

To make the filling: In a large saucepan, combine the evaporated milk, sugar, egg yolks, butter, vanilla and salt. Place over medium heat and cook, stirring constantly, until the mixture thickens and is caramel in color, about 15 minutes. Remove from the heat and stir in the coconut and pecans. Let the mixture cool until it is thick enough to spread. (You can refrigerate the filling while the cake layers cool. Or to speed the process along, you can make the filling before you bake the cake.)
To assemble, place one cake layer on a serving plate and cover with 1 cup of filling, spreading it to the edges. Top with the second layer and repeat. Top with the third layer, and pile the remaining filling on top, leaving the sides bare. Refrigerate for 1 hour before serving. - Навчання та стиль
Hello all. A little late to the game, but I made this cake for Thanksgiving 2022.
I paused and played the video and made it right alongside you. Keep up the good work. I love the old-school recipes.
I always look for videos like this when I'm trying new recipes out.
There are 2 different types of chefs on UA-cam.
The ones that spend all their money on fancy camera equipment and none on the ingredients.
And the real MVPs that just throw a camera up and invest in really good quality ingredients.
This brought tears to my eyes for so many reasons. My mother-in-law used to make German Chocolate Cake that was out of this world. She passed away 8 years ago and I can still smell her food and hear her say, "There ain't nothing to this!" when she was showing me how to cook. This tutorial really made me miss her even more!!

8 years ago, my aunt passed, and she who was the queen of huge, layered German Chocolate Cakes. I found her partial recipe but couldn't come close. This recipe hit! If she was here, she'd wink and say, you got it, girl!

I finally made this cake. Oh my goodness! This is the best cake I’ve ever made! I can’t believe how soft and fluffy the cake part is! I made a couple of mistakes, but it still worked out. My frosting got too thick in the pan, so it didn’t flow like yours did. Also, I got sweetened coconut by mistake. But it still was delicious. I think every dish in my kitchen is dirty, but it’s worth it! Thank you!

I love how you told the history of the German chocolate cake 🍰. You are absolutely right. My grandfather was German and I lived in Germany for 3 years. Americans when visiting had to learn that concept real quick because they couldn't figure out why they couldn't find German chocolate cake in the bakeries. Germany's popular German chocolate cake is the Black Forest Cake. A type of Cherry Torte. If you never have had it you need to try it Chef Jeffery. It's my favorite German chocolate cake. It's sehr gute! (It's very good!)

I was confused when I was younger because my step-grandparents were Texas Germans and she made German Chocolate cake. I thought it was German because she was German. It was years later that I realized it wasn’t German. But at least it is Texan-and she was a Native born Texan, so I was half right.

No dessert holds the memories, especially of Christmas, as the German Chocolate cake. It wasn't Christmas without this cake. I was probably 8 when my Mom first made it for us. She is in her heavenly kitchen now, I'll be 68 in January and I'm the one who's made them for the last 25-30 years. Thank you for bringing a wonderful dessert to everyone. God Bless.

You remind me of my youngest brother who was taken by Covid-19 two years ago. The way you talk, your movements around the kitchen and some of your funny phrases are so reminiscent of him. Hello Mr. Jeffery, I’m a new subscriber (November 14, 2021) and I never knew the history of a “German Chocolate Cake” thank you so much for the history lesson. My Godmother used to make one for me every year during the Christmas Holiday Season. This brought back such beautiful memories. She could not read the recipe but she made the best cake ever. To this day, I make one every year in her honor. Thank you for sharing your love for baking and people in your videos. I’m also happy that you came through COVID safely. I too love to bake, especially in the winter. I could spend all day in the kitchen baking when it's cold outside, and German Chocolate cake is my all time favorite. You are right, it is important that you separate the yokes from the whites and beat the whites until they are fluffy before you fold them into the mixture. I enjoyed watching you make this cake. Hey Grandad! I just made TWO of these cakes for the first time today and it came out soo well! Well actually I made a mistake on the first cake batter and forgot to mix the buttermilk in and had to do it after I folded the whites in.. I think that cake came out a little stiff.. but the other cake was on point! Thanks soo much, I’m going to save this recipe for future reference! Have a blessed day!
My Mom used to make sour cream pound cakes which was one of her favorite cakes. She had a cook book she got in the early '80's with this recipe. The only difference was separating the yokes and egg whites. You put in the yokes as normal, but at the end before putting in the pan, whisk the egg whites to form stiff peaks and fold them in by hand. I can't remember the cake you made, but I remember you said folding in egg whites makes cakes lighter if I'm not mistaken. Great video 👍🏾

I'm not one on chocolate cake but a family friend's mother made a German chocolate cake from scratch and I just LOVED it so much I had to tell her she was the first person to EVER get me to eat chocolate cake EVER. Since this is also made from scratch I would most likely eat a piece of this cake. 👍
