- Today I’m sharing with you 3 easy and delicious vegan potato meals for weight loss - that are free from oil and will help you reach to your health and weight loss goals.
I lost 50 lbs of weight by eating lots of potatoes. Potatoes are very low on the calorie density scale and full of vitamins and nutrients. Aside from that, they are the most satiating food on the planet. So eating them helps keep you not only full but very satisfied so you aren’t wanting to reach for food all the time.

RECIPES IN THE VIDEO:
Cajun Potatoes:
1/2 tsp cajun seasoning
1/2 tsp garlic powder
1 tsp paprika
1/2 -1 bag of two bite potatoes
cook and cut in half. Add seasoning and cook in over at 350 degrees for 25-30 mins

Potato Curry
2 cloves of garlic
1/2 large onion
3-4 large potatoes
1 tsbp curry powder
1 tsp garam masala
1 tsp turmeric
1 can light coconut milk
1 tbsp tomato paste
5 oz fresh or canned tomatoes
1/2 - 1 C peas
large handfuls of spinach
cook in the instant pot on high pressure for 15 minutes. Manual release
on stove top cook until potatoes are soft
Potato and White Bean chili/soup
1 tsp chili powder
1/2 tsp chili flakes
1/2 cilantro
1 -2 cups corn
2 cloves garlic
1 onion diced
1/2 tsp oregano
3-4 Yukon gold potatoes
1/2 tsp thyme
32 ounces veggies broth
1 tsp smoked paprika
1 tsp cumin
1-2 cans of white beans
Put in the instant pot and cook on high pressure for 15 minutes. Manual release
on stovetop cook until potatoes are

I'm into my second decade of WFPB no O and feeling great. Still, we all need to constantly remember the goals and not give in to so much societal pressure or those old food addictions. When I'm adding leafy greens to my soups/stews I like stirring them in once the dish is cooked. For my liking, the residual heat wilts the greens beautifully.

Just made plant based potato soup two days ago. With mixed veggies and hominy.. And better then bouillon broth. Some cashew milk. It's so good? Hot or cold. White bean potato chili sounds yummy.Need to try that one.

Delicious. Can’t wait to try! Question - Which recipe is it wise to remove potato skins ? I have been peeling in most cooked dishes.
So soup? Curry you said keep skins.
You could wash them to remove any pesticide residue on store bought potatoes but the skin is where a lot of the nutrients are found so I don't remove the skins. If you have the space to grow your own and grow them organically you don't need to worry about pesticide residues so that would be even better and they taste better. I grow my own potatoes and store bought potatoes just don't taste the same.

Tia, you should not cook the spinach together with the potatoes and peas. Just add the spinach at the end, when the dish is ready. Otherwise great recipes, thank you!
Because you only need to wilt it a bit and for that the residual heat is more than enough. No need to completely destroy it by pressure cooking.
HVM, when you say no oil, does it mean no oil at all? Not even an occasional spritz of olive oil. Thanks for all the great info you provide.
Yes I do no added oil at all. Sometimes it’ll sneak in foods from the grocery store, like pizza crusts, tortillas and I try to buy without oil, but sometimes you can’t help it and that’s okay for me. But again, I try to avoid as much as possible.

I like to used regular plant milk and add coconut extract. But not everyone is okay with extracts. Whatever floats your boat, right 😜
