@@ashleylee7523 I'm not either, I use great value organic coconut flour and it tastes the least like coconut out of all the brands I've tried. But you can usually use 3x the amount of almond flour for the coconut. Your rectangle will be bigger though with the extra amount of ingredients.
I like that you avoid nut flour. Having kidney stone problems, I’ve been advised to avoid high oxalate foods. Almonds (and nuts in general) rank high on that list

You can put this on a big sheet of parchment paper and fold it in half and then fold the other three edges until you have an "enclosed" rectangle. Then use the roller. You'll get perfect edges.

Just made these. Mine were about 1/16 inch thick. Pretty thin. Baked 350 for 7min, cause edges were pretty brown. Let them cool. Taste so good. I do live in Colorado and altitude here is 4830. Maybe that's why they baked faster. Thank you for this recipe.

I finally got around to making these today. Mine didn't turn out as large as yours. I couldn't get them to stick together to make then the size of yours, so they were about 1/4 inch thick. I didn't have oat fiber, not sure what that does exactly, so I used a tablespoon of acacia fiber instead since that's what I have. I used brown sugar sweetener. Overall , they have a good taste but I didn't get the texture right.
Hubby's mom's fudge recipe calls for marshmallow creme. I made some yesterday with hwc, & it's not bad but now I'm thinking your creme might work! Have to get cellulose. Have to try monkfruit sweetener too. You've given me a new list of ingredients to shop for. Thanks & Blessings!

Thank you!! I only brought it to 140, the normal recipe I found online said 160, I'm guessing because you are technically suppose to bring eggs to 160 to be safe to eat. But for the recipe to work you only have to bring it to 120. Hope you enjoy!!!

If we add gelatin to the marshmallow fluff. Put in the refrigerator for a couple hours. Would we be able to cut it and eat it like a marshmallow? I would love to know your thoughts on this. The liquid allows to make ice cream Because softens the ice cream can’t seem to find it or it won’t ship to where I am which is in Toronto, Ontario Canada, and when you said you found powdered cellulose in Walmart, I was thinking it’s got to be Walmart in America because you guys have a lot more availability on stuff than what we have here I think people are just getting started here with Keto ‼️‼️💜 in some areas of availability. Like Costco there’s More and more products coming out in Costco then these expensive health food stores. Anyways, I just want to know if you’re here in Canada or in America. I'm not sure. I've heard that's the case for regular meringues but keto desserts are a different animal, the sweeteners act very differently. It wouldn't hurt anything to throw in cream of tarter though.
God I haven't had one in years. I feel like that cream is more just a whipped buttercream, don't remember it tasting like marshmellow. This tastes like marshmellow.

Egg white protein makes it crispy, other proteins made out of whey make soft baked goods. So I don't believe you would have the same outcome of a crispy Graham cracker.

Hi there, can the swiss meringue be put on top of a berry pie and then baked in the oven? Will it form a brownish crisp crust? Or will the meringue melt off completely?
I'm not sure, I actually didn't try that. It doesn't melt when you hit it with the torch. It may burn a lot faster though. I have to do more experimenting with meringues and such.

Hi if I'm using this recipe to make a pie crust, is it worth keeping the egg white powder in it? Because the texture will be a bit soft from creme filling anyway?
I need to find a universal flour that is not nut or bean ,can sunflowers be used. My grand is allergic to EVERY nut and bean except peanuts and sunflowers. He is also allergic to coconut.
You could try sunflower I've never worked with it personally though. If you are able to do just low carb cassava and tapioca flours are good for baking but I haven't used them much because they are too high for keto.

Does allulose have that fake sugar taste? I can taste that, really dislike it, and am hesitant to use any but monkfruit sweetener, which tastes like regular white sugar to me. No off flavors.

I'm so sad about Allulose. If I have more than two cookies or whatever that has Allulose, it gives me viscious intestinal problems. AND I just bought a 3lb bag that I'm now scared to use.
I'm the same way, it sucks because I love my ice cream. I have to eat it in moderation but I've heard you can increase little by little, I can have more than I use to be able to.

To stabilize it add a tsp gelatin and a tbsp of water to dissolve it then add to your meringue and it won't melt on you 😊

You can dehydrate your own, you don't need a lot for this recipe. There isn't really a substitute that I have found.

Egg white protein makes it crispy, other proteins made out of whey make soft baked goods. So I don't believe you would have the same outcome of a crispy Graham cracker.
I currently don't have oat fiber on hand. How do you think bamboo fiber would do as a substitute?

Hi there, can the swiss meringue be put on top of a berry pie and then baked in the oven? Will it form a brownish crisp crust? Or will the meringue melt off completely?
I'm not sure, I actually didn't try that. It doesn't melt when you hit it with the torch. It may burn a lot faster though. I have to do more experimenting with meringues and such.

Can I use food processor to mix up dough for the graham crackers?
I suppose you could, haven't tried it, but I wouldn't blitz it too much. I don't like cleaning appliances if I don't have to, lol.

Is there a substitute that I could use for egg white powder? I don't eat chicken eggs only duck eggs
I'm not completely sure but maybe a starch like tapioca starch or arrowroot powder will help make it crispy.
What can I replace the oat fiber with? Psyllium?
I haven't tried psyllium but it is very absorbent so I wouldn't use very much. You can just replace the oat fiber with 10 more grams of coconut flour.
Hi if I'm using this recipe to make a pie crust, is it worth keeping the egg white powder in it? Because the texture will be a bit soft from creme filling anyway?
I guess not but I would add some other "flour" in place of it.

I need to find a universal flour that is not nut or bean ,can sunflowers be used. My grand is allergic to EVERY nut and bean except peanuts and sunflowers. He is also allergic to coconut.
You could try sunflower I've never worked with it personally though. If you are able to do just low carb cassava and tapioca flours are good for baking but I haven't used them much because they are too high for keto.

Not sure, it may crystalize in the egg whites.
Does allulose have that fake sugar taste? I can taste that, really dislike it, and am hesitant to use any but monkfruit sweetener, which tastes like regular white sugar to me. No off flavors.

Rats! Allulose raises my blood sugar too much so I don't use it in anything. Looks so good though.
Your body isn't even suppose to recognize it as sugar, so that's the first I've heard that. Have you tested it on it's own and not in something else?

I'm not sure it would work the same. Maybe just add another tablespoon or 2 of coconut flour until you get a wet sand consistency.

I'm so sad about Allulose. If I have more than two cookies or whatever that has Allulose, it gives me viscious intestinal problems. AND I just bought a 3lb bag that I'm now scared to use.
I'm the same way, it sucks because I love my ice cream. I have to eat it in moderation but I've heard you can increase little by little, I can have more than I use to be able to.
