As fall approaches, I think about cool nights and warm bonfires. So I wanted something I could make to enjoy that gives me the smores vibe without all the guilt. So I got to testing and finally got a crispy keto coconut flour graham cracker and paired it with a delicious keto marshmallow crème to dip them in. There is a keto marshmallow on the market that is pretty decent, I will link below. Have not tried toasting them though, just bought my torch, also linked below.

Keto Graham Cracker Ingredients
45 g Coconut flour (6 Tbs.)
10 g Oat Fiber (2 Tbs.)
16 g Egg white protein powder (2 Tbs.)
48 g Golden Monkfruit sweetener (my preferred can use anything granular) (1/4 Cup)
1/2 tsp. Ground cinnamon
1/4 tsp. Xanthan gum
70 g Salted Butter (5 Tbs.) (melted)
1 tsp. Vanilla extract
Pinch of salt if using unsalted butter

I'm not really a fan of coconut. Are you able to taste it in this?
@@ashleylee7523 I'm not either, I use great value organic coconut flour and it tastes the least like coconut out of all the brands I've tried. But you can usually use 3x the amount of almond flour for the coconut. Your rectangle will be bigger though with the extra amount of ingredients.

You can put this on a big sheet of parchment paper and fold it in half and then fold the other three edges until you have an "enclosed" rectangle. Then use the roller. You'll get perfect edges.

I like that you avoid nut flour. Having kidney stone problems, I’ve been advised to avoid high oxalate foods. Almonds (and nuts in general) rank high on that list

Thanks do much for your recipes Alicia! I also have a sweet tooth and found most sweeteners just didn't cut it. Since finding allulose, and then your channel, I am enjoying desserts again. It's harder to find some of the ingredients a a reasonable price here in Canada but I am definitely going to try these graham crackers because cookies is one of the things I miss most. And I just can't tolerate any more almond flour! I have made your sour cream cake, lava cake recipes, delicious! Thanks so much and please keep creating.

Just made these. Mine were about 1/16 inch thick. Pretty thin. Baked 350 for 7min, cause edges were pretty brown. Let them cool. Taste so good. I do live in Colorado and altitude here is 4830. Maybe that's why they baked faster. Thank you for this recipe.

Been missing graham crackers
To stabilize it add a tsp gelatin and a tbsp of water to dissolve it then add to your meringue and it won't melt on you 😊

I finally got around to making these today. Mine didn't turn out as large as yours. I couldn't get them to stick together to make then the size of yours, so they were about 1/4 inch thick. I didn't have oat fiber, not sure what that does exactly, so I used a tablespoon of acacia fiber instead since that's what I have. I used brown sugar sweetener. Overall , they have a good taste but I didn't get the texture right.
Hubby's mom's fudge recipe calls for marshmallow creme. I made some yesterday with hwc, & it's not bad but now I'm thinking your creme might work! Have to get cellulose. Have to try monkfruit sweetener too. You've given me a new list of ingredients to shop for. Thanks & Blessings!

@@KetoUpgrade do you think you could do a keto sex in a pan???! I don't think the marshmallow creme would be ideal as a chocolate pudding but you're certainly on the right path! I'd be tempted to eat a whole pan of that!

I'm so absolutely excited for this recipe! Before going keto. This more is where my absolute favorite in the summertime especially Camping or by the pool! Quick question. If we add gelatin to the marshmallow fluff. Put in the refrigerator for a couple hours. Would we be able to cut it and eat it like a marshmallow? I would love to know your thoughts on this. I can't wait to make it this weekend!

You can dehydrate your own, you don't need a lot for this recipe. There isn't really a substitute that I have found.
This looks so awesome! Quick clarification...is the goal temperature 130 degrees or 160? Can't wait to try this!
Thank you!! I only brought it to 140, the normal recipe I found online said 160, I'm guessing because you are technically suppose to bring eggs to 160 to be safe to eat. But for the recipe to work you only have to bring it to 120. Hope you enjoy!!!

I like the science behind what you’re giving us with Keto ‼️‼️💜 dues and don’ts and all that for now question for you are you in America or are you in Canada? The reason why I ask is finding Elios on Amazon. The liquid allows to make ice cream Because softens the ice cream can’t seem to find it or it won’t ship to where I am which is in Toronto, Ontario Canada, and when you said you found powdered cellulose in Walmart, I was thinking it’s got to be Walmart in America because you guys have a lot more availability on stuff than what we have here I think people are just getting started here with Keto ‼️‼️💜 in some areas of availability. Like Costco there’s More and more products coming out in Costco then these expensive health food stores. Anyways, I just want to know if you’re here in Canada or in America. LOL, I haven't tried egg white powder for this recipe. I've been researching royal icing and they seem interchangeable for that, but not sure about this particular recipe.

The egg white protein make it crunchy, whey would make it soft. Maybe take out a Tablespoon of butter and add an egg white. Not sure if it will work though, never tested it.
Is this marshmallow creme similar to the creme in hostess cupcakes or Twinkies(of course the keto version)?
God I haven't had one in years. I feel like that cream is more just a whipped buttercream, don't remember it tasting like marshmellow. This tastes like marshmellow.

Hi if I'm using this recipe to make a pie crust, is it worth keeping the egg white powder in it? Because the texture will be a bit soft from creme filling anyway?
I guess not but I would add some other "flour" in place of it.

I'm not sure. I've heard that's the case for regular meringues but keto desserts are a different animal, the sweeteners act very differently. It wouldn't hurt anything to throw in cream of tarter though.
I currently don't have oat fiber on hand. How do you think bamboo fiber would do as a substitute?

Hi there, can the swiss meringue be put on top of a berry pie and then baked in the oven? Will it form a brownish crisp crust? Or will the meringue melt off completely?
I'm not sure, I actually didn't try that. It doesn't melt when you hit it with the torch. It may burn a lot faster though. I have to do more experimenting with meringues and such.

I heard the closest keto thing is psyllium husk but I've never tried it.
Rats! Allulose raises my blood sugar too much so I don't use it in anything. Looks so good though.
Your body isn't even suppose to recognize it as sugar, so that's the first I've heard that. Have you tested it on it's own and not in something else?

I'm not completely sure but maybe a starch like tapioca starch or arrowroot powder will help make it crispy.

I have regular protein powder. Would that work?
Egg white protein makes it crispy, other proteins made out of whey make soft baked goods. So I don't believe you would have the same outcome of a crispy Graham cracker.
What can I replace the oat fiber with? Psyllium?
I haven't tried psyllium but it is very absorbent so I wouldn't use very much. You can just replace the oat fiber with 10 more grams of coconut flour.
I need to find a universal flour that is not nut or bean ,can sunflowers be used. My grand is allergic to EVERY nut and bean except peanuts and sunflowers. He is also allergic to coconut.
You could try sunflower I've never worked with it personally though. If you are able to do just low carb cassava and tapioca flours are good for baking but I haven't used them much because they are too high for keto.
Can this be made with xylitol? Allulose isn't availeble in Europe.
Not sure, it may crystalize in the egg whites.

It for all the marshmallow. All it is, is 2 egg whites.

Didn't know what that was until looking it up. I'm not sure, I thought yes until I saw that it doesn't get baked or anything. Allulose tends to keep things soft, so I'm not sure they would dry completely.

I suppose you could, haven't tried it, but I wouldn't blitz it too much. I don't like cleaning appliances if I don't have to, lol.

How would I use egg white protein powder instead of fresh egg whites?
1 tbs. Egg white powder 3 tbs. Water for an egg white, is what one package says on Google.

I'm not sure it would work the same. Maybe just add another tablespoon or 2 of coconut flour until you get a wet sand consistency.

Does allulose have that fake sugar taste? I can taste that, really dislike it, and am hesitant to use any but monkfruit sweetener, which tastes like regular white sugar to me. No off flavors.
I think it tastes just like regular sugar. And it's not a sugar alcohol, it's a type of sugar your body doesn't recognize as sugar and it passes right through the body. ua-cam.com/video/rb1QUMqY4g0/v-deo.html

Haha I had to bring home all the ingredients to make a cake for a work banquet, on my day off. I took everything back I didn't use except a few teaspoons of vanilla. 😉
