Finally got these baked after mixing dough over a week ago. This is the BEST graham substitute I've found. Though mine were not "crispy," they were very firm (I used golden monk fruit so that may have made a difference). The most amazing thing is the taste. I always notice a slight hint of lupin and bamboo flours (even though I use cinnamon and/or mace to hide them), these had no hint of any off flavors. I did have to bake mine about 10 minutes. Thank you for creating this perfect gem!
These were FANTASTIC! Thanks so much for this recipe. Bonus: These seem to keep you full. I made mine on a tortilla press and cut each circle into 4ths, so I got 16 total cookies.
Janet, I love this recipe‼️ To make chocolate graham crackers, how much Hersheys cocoa should I add? Should I add more Swerve to compensate for the added ‘bitter’ taste of the cocoa?🧐🙏🏻🧐thank you so much…I love graham crackers
You're welcome. To make these chocolate reduce the flour to 100 grams (1 cup) and add 20 grams (1/4 cup) cocoa powder. You can add a couple tablespoons more of sweetener to balance the taste.

What is ur experience on defatted almonds . I am in therapeutic weight loss where entire calories to be clocked in below 25gms carbs & 500kcalories daily meals . So almond does not fit the bill . Defatted almonds does . Can I experiment ? If yes ,with which recipes of yours ? Thank you ,have a great rest of the day 🙏🏽

Although the recipe looks awesome, it's complicated to use lupin flour and the label "nut-free". Alhough you're technically correct that it's nut-free, people who are allergic to peanuts are also allergic to lupin flour.
Sometimes yes. I have a coconut flour graham cracker recipe or you can try substituting the lupin flour for sunflower seed flour. You can also try a mix of sunflower seed flour and bamboo or oat fiber.

You can try almond flour or oat fiber. If you use oat fiber you will have to adjust the liquid ratio
