I have actually tried my marshmallow recipe with allulose. Total disaster. So soft, they don't hold up in any baked goods, they just melt away! Just an FYI to folks. :)
I made some last year and it’s fun for me to line the pan with chopped nuts. My favorite was pistachios. Or add some fruit zest. One can also use crushed /powdered sugar free candy to dust them. I did a peppermint and a butterscotch ❤yummy

I made a similar recipe that called for simple syrup as the sweetener and I used allulose syrup. They were a bit sticky at the start, but after they dried overnight they were really good. I did toast them a bit with a kitchen torch (very quickly!) and it sure reminds you of childhood. Whoever said to melt them with Magic Spoon cereal is a genius.
I used to make a marshmallow type frosting in a very similar technique...bet it could be done keto. Due to my husband and heart issues, we don't do erythritol anymore and bochasweet/xylitol spikes blood sugar, so I appreciate the allulose. Will probably use an allulose monkfruit blend.

@@maidenminnesota1 half allulose and half bocha sweet won't work, they are what we call soft sweeteners and they won't harden, what I meant was you can substitute the bocha sweet for allulose but you still need the erythritol as well, and yes Carolyn is from Canada but now lives in the States

I'm going to try divinity myself. Victoria's keto kitchen channel (which Wes has highlighted before in the biscuit challenge) has a keto corn syrup. I didn't get to it for Christmas candy this year but I'm definitely going to try subbing that in a regular recipe for Divinity. My grandmother made it and I loved it. Can't imagine eating the 'full octane' version now!

You've raised an interesting question. It would be awesome, if you could compare cost per serving, based on the different ingredients in addition to your netcarbs comparison, it might influence our recipe decisions. I mean (hypothetically), if you are spending a dollar per serving vs. three dollars per serving, I may slog through some texture issues. It's another important factor.
One of my first videos was Peep’s and I used allulose in it. They turned out amazing but I did go through about 10 bags of allulose.😂 That was not because the Allulose failed, I just had to find the right technique to make peeps work without the inverted sugar.

Can these marshmallows get mixed into melted white chocolate and peanut butter with rice Krispies and peanuts treats without melting? My challenge is to make a keto alternative for candies that my grandmother made, the ingredients required marshmallow, peanut butter, white chocolate, rice Krispies and peanuts all mixed together then scooped out and placed on a cookie sheet then put in the refrigerator and allowed to cool and set up firm. If these marshmallows work, all I would need is to look up a Rice krispie substitute that is grain free.

I used to love making marshmallows before going low carb, all different flavors! Most of the recipes that turned out the best were the ones that had both sugar and corn syrup in the recipe. I'd be very curious to see how adding a keto corn syrup replacement would change either recipe, but I'd be very curious about the allulose version. I wonder if adding the corn syrup substitute would help it or not make any difference at all. I know Victoria's Keto Kitchen has a recipe for a keto corn syrup replacement that uses allulose. It's on my list of things to try. I might have to experiment with this and try making some marshmallows. It's not something I've done since going low carb. However, I do plan to try All Day I Dream About Food's marshmallow. I've held off for a while, but I guess I'm ordering some Boca Sweet.

Marshmallows are not my thing, never were, BUT my special needs daughter who is also keto loves to have smores in the summer❤ I found Carolyn when I was looking for keto graham crackers. Love her. Bocha sweet is amazing BUT it CAN affect some people's blood sugar. I had to stop using it in my tea. I would, however, use it for a treat like this. Also, you mentioned you had a cookbook in a video I watched not so long ago. I did not know that and got it immediately. While the family was home over Thanksgiving I made your Salisbury steak recipe. What a hit with EVERYONE, so delicious. Thank you, that was my favorite go to, cheap freezer meal for many years. Haha. I bet the ones with allulose would toast well since allulose can caramelize like regular sugar. I’ve done it by accident making my own sweetened condensed milk lol. Even mixing allulose and erythritol would probably get you a nice toasty brown marshmallow before it completely melts in heat.
I only discovered candy cane pie the Xmas before I got diabetes... I'm thinking one of these could be a good step in making the pie one day again...idk if you can get low-carb candy canes, though

Wes Looking good! I have a question for you ....do you have to use Beef Gelatin in ANY recipes, mainly these that call for gelatin (in your opinion/experience) Is there just a plain version of gelatin Keto safe/friendly?
Hi! Good question! You can absolutely use plain, unflavored Knox gelatin from the grocery store. (Carolyn from All Day I Dream About Food does mention that the Knox gelatin has more "jelling" power, so she recommends using a smaller amount, like 1.5 Tablespoons versus the 2.5 Tablespoons of the beef gelatin in this particular recipe.) Knox and other grocery-store brands of gelatin are generally pork-based, and though there's nothing "wrong" with that, lots of people on Keto like the additional health benefits of using grass-fed beef gelatin. But don't be shy to just use "regular, ol' gelatin" from the grocery store. Hope that helps! :-)

Just be careful with BochaSweet. While I love it, it DOES cause gastric distress. Since the only thing I use marshmallows for is marshmallow treats, I wonder how they'd be with a Magic Spoon cereal instead of Rice Krispies? 🤔 I'd bet the fruity flavor would be dynamite with these!
"Magic treats" are actually why I'm here... looking for marshmallow recipes to make my own! I bought the Magic spoon treats and they were so disappointing. Bland, dry and crumbly... No gooieness or chewyiness... So sad.
These did as well. They were almost completely gone after about 5 minutes. I was mainly testing to make sure they didn’t immediately disintegrate as I had feared they might. I talked a bit about this while testing them… but I sped it up because the video was getting so long! LOL! :-)

Pre-keto, I put crushed candy canes on top of my homemade marshmallows for hot cocoa. I bet I can put peppermint extract in these recipes instead.

boccasweet is pretty much xylitol. As xylitol is deadly for dogs, it doesn't have a place in our kitchen.

Can these marshmallows get mixed into melted white chocolate and peanut butter with rice Krispies and peanuts treats without melting? My challenge is to make a keto alternative for candies that my grandmother made, the ingredients required marshmallow, peanut butter, white chocolate, rice Krispies and peanuts all mixed together then scooped out and placed on a cookie sheet then put in the refrigerator and allowed to cool and set up firm. If these marshmallows work, all I would need is to look up a Rice krispie substitute that is grain free.

I used to love making marshmallows before going low carb, all different flavors! Most of the recipes that turned out the best were the ones that had both sugar and corn syrup in the recipe. I'd be very curious to see how adding a keto corn syrup replacement would change either recipe, but I'd be very curious about the allulose version. I wonder if adding the corn syrup substitute would help it or not make any difference at all. I know Victoria's Keto Kitchen has a recipe for a keto corn syrup replacement that uses allulose. It's on my list of things to try. I might have to experiment with this and try making some marshmallows. It's not something I've done since going low carb.
However, I do plan to try All Day I Dream About Food's marshmallow. I've held off for a while, but I guess I'm ordering some Boca Sweet.
You could use a little potatoflour, resistent starch, and good to use with marshmallows when handling them.

What if instead of sprinkling them with the powdered sugar you dip them in it? Bocha Sweet is a form of xylitol so be careful, I think.
Boca Sweet is $43 here in Canada. That's a pricey marshmallow! Anyway, wondering if making it in a 9x13 so the marshmallows aren't so high. Also, thought I might dust with toasted coconut since I love those things or drizzle chocolate on them? Good video Wes-as always.
Currently their international price on a 1lb. bag of granulated sweetener is $20.50 US, so you'd have to do the conversion (as of today it's $27.40 Canadian). Unfortunately, it's sold out, so they're saying to shop "Healthy Family Foods" in Winnipeg. Is that who is overcharging you?

Yuck. Use a keto cereal replacement, instead. I recommend Magic Spoon. It's sold in most grocery stores. I'd recommend the fruity flavor.

Bocha sweet is amazing BUT it CAN affect some people's blood sugar. I had to stop using it in my tea. I would, however, use it for a treat like this.
Also, you mentioned you had a cookbook in a video I watched not so long ago. I did not know that and got it immediately. While the family was home over Thanksgiving I made your Salisbury steak recipe. What a hit with EVERYONE, so delicious. Thank you, that was my favorite go to, cheap freezer meal for many years. Haha. I bet the ones with allulose would toast well since allulose can caramelize like regular sugar. I’ve done it by accident making my own sweetened condensed milk lol. Even mixing allulose and erythritol would probably get you a nice toasty brown marshmallow before it completely melts in heat.
Since the recipe for the allulose said not to stir, I wonder if stirring it made a difference in the texture?

Wes Looking good! I have a question for you ....do you have to use Beef Gelatin in ANY recipes, mainly these that call for gelatin (in your opinion/experience) Is there just a plain version of gelatin Keto safe/friendly?
Hi! Good question! You can absolutely use plain, unflavored Knox gelatin from the grocery store. (Carolyn from All Day I Dream About Food does mention that the Knox gelatin has more "jelling" power, so she recommends using a smaller amount, like 1.5 Tablespoons versus the 2.5 Tablespoons of the beef gelatin in this particular recipe.) Knox and other grocery-store brands of gelatin are generally pork-based, and though there's nothing "wrong" with that, lots of people on Keto like the additional health benefits of using grass-fed beef gelatin. But don't be shy to just use "regular, ol' gelatin" from the grocery store. Hope that helps! :-)

Burnt black on the outside and completely melting off the stick in the center!❤❤❤ Someone else commented that the first recipe didn't toast. 😢 In that case, I would eat these with a spoon as fluff and skip all the setting and cutting.

Just be careful with BochaSweet. While I love it, it DOES cause gastric distress. Since the only thing I use marshmallows for is marshmallow treats, I wonder how they'd be with a Magic Spoon cereal instead of Rice Krispies? 🤔 I'd bet the fruity flavor would be dynamite with these!

These did as well. They were almost completely gone after about 5 minutes. I was mainly testing to make sure they didn’t immediately disintegrate as I had feared they might. I talked a bit about this while testing them… but I sped it up because the video was getting so long! LOL! :-)
