    Cauliflower Recipe
    For the minced meat:
    180 gr minced meat (~0,4 lb.) ( brisket, plate or ribs)
    1 onion
    1 tablespoon olive oil
    half teaspoon salt
    a pinch of black pepper
    1/3 of nutmeg
    For the cauliflower:
    half cauliflower
    2 tablespoons olive oil
    6 cloves of garlic
    Half teaspoon salt
    For the tomato sauce:
    1 tablespoon butter
    1 tablespoon pepper paste
    6-7 tablespoons water
    a pinch of Black pepper
    a pinch of oregano
    For the yogurt sauce:
    3 cloves of garlic (which cooked with cauliflower)
    4 tablespoons yogurt
    a pinch of black pepper
    a pinch of salt
    For garnish:
    Fresh oregano
    A pinch of black pepper
    If you want to cook the vegetarian version, you can skip the first three steps.
    First we are going to start with the perfectly cooked minced meat. Heat the steel pan very well. Put 1 tablespoon of oil to the pan just to cover the bottom. Put 180 gr of minced meat to the pan and spread with the wooden spoon until they get brown. But do not stir all the time. Let one side to brown then stir again. You can also use pork, veal or lamb.
    -Add one chopped onion, around 200 gr. Turn the heat to lowest and continue to cook. Stir time to time about 8-10 minutes. Minced meat will get perfectly brown and onions will almost disappear in the pan.
    While cooking, add half of a teaspoon salt. If minced meat stick to the pan, add a couple of tablespoon hot water and scrub the bottom with a spatula so you won’t waste that amazing flavor. At the end of the cooking add a pinch of black pepper and grate 1/3 of a nutmeg.
    Cut half of a cauliflower into chunks. Heat a wok pan and add 2 tablespoons of olive oil. Add the cauliflower and to increase the taste add 6 cloves of garlic. Mash 2 of them before adding. Cook around 5 minutes on high heat until they get a brown crisp.
    For the tomato sauce add 1 tablespoon of butter for two people in a sauce pan. When the butter melts and gets brown it has really great taste. Add 1 tablespoon of pepper paste and stir very well. Add 5-6 tablespoons of water to make it like sauce. Add a pinch of black pepper and a pinch of dried oregano. Simmer for a couple minutes. You can use tomato paste, puree or juice. If you have juice you need to reduce it by cooking a little longer.
    For the yogurt sauce take the 3 sautéed garlic from the cauliflower pan. Mash them with the side of your knife and add them to a bowl. In the same bowl add 4 tablespoons of yogurt, a pinch of salt and a pinch of black pepper and mix them well. You can add the ‘kaymak’ of your yogurt also which is top fatty part of yogurt.
    Time for serving, get a big plate and put the cauliflower. Spread the yogurt sauce and please dirt the plate as well with yogurt. Add tomato sauce in the same way. Add some fresh oregano so you have the vegetarian version.
    For the meat version, put the cooked minced meat on top. Sprinkle a pinch of black pepper and fresh oregano. All done and ready, cauliflower made to take you heaven, enjoy at home, stay safe!

    I made this recipe!...it’s so good! Don’t be a fool like me. I decided to halve the recipe thinking it would be enough for hubby and I with a nice salad on the side...I was so wrong! We devoured it in minutes! The good thing I did after testing the sauce I decided to make a second portion (because we both love gravies and sauces) and I was so happy I did. As we ate we kept adding the sauce. It was even good on the salad. :). Instead of yogurt we use tzatziki (because it’s a staple in our diet and what we always have in the fridge). To bad UA-cam does not let us post photos. Make it! You won’t be disappointed!

    isn't cauliflower amazing? especially in the right hands, like yours! update: I finally made this today (instead of meat, I added a cubed eggplant that I tossed with a bit of olive oil, brown butter, salt & pepper and air-fried at 400 F for 15 minutes) and this is AMAZING! the cauliflower and the sauces are so delicious! I could eat 5 heads of cauliflower prepared this way!

    I love Iskender Kebab!! I spent a year, a month, and a day in Turkey in the 70s, and Iskender kebab was my favorite food. I first had it in Bursa on my way to go skiing. Soooo good.

    Most ingredients you use we get in my country, India.
    You should read about our cuisine too. It is the most diverse, in the world !
    It has many things in common with yours... Especially the use of curds. Yogurt.
    Your ayran too. We call it lassi.

    Thanks Refika for this recipe. It has become staple in our home. My turkish husband and I love it. We cook the cauliflower in the oven which makes the dish much less super easy and less time consuming. We have replaced all yughurt with skyr in our home. This dish goes well with skyr. Skyr is protein rich and low fat islandic diary product.

    That looks wonderful, sure I had a very similar plate of food down in Konya in Turkey.. The wonderful bitter/sweet taste of the cauliflower mixed with the unctuous meat and the tang of the yogurt so well. Sure there was some cumin in the cauliflower which went with the nutmeg and pepper so well..

    Hello from Canada. Was made today in our kitchen. It is so good. It is now going to be cooked in our kitchen at least 1 time a month (depending on price of Cauliflower).     I'm learning so much about Turkish food and I love your personality. I eat a plant based diet and I'm so excited to try this! There is some in my fridge now, and fresh tomatoes too for some sauce, and homemade plain soy milk yogurt 😍 I was going to make pita tonight for some Greek food I made but I think this is the ticket first.
