i love veganising different dishes from different cultures main reason i started my new series about my little vegan cafe grand opening where i experiment with different cuisines
The strawberry crumble bars are to DIE for. I made it with a few adjustments. I used coconut sugar and coconut oil for the crust and made 50% more of it because I like more of a sandwich sort of fruit crumble. Incorporating pepitas and almond slivers on top of both oat layers added extra crunch. I doubled up the amount of fruit with half of it being coarsely puréed strawberry (important so all the juice doesn't sink into the crust) and the other half being a mix of peach and nectarine slices. I forgot to add the cornstarch but my fruit thankfully didn't budge after baking for 35 minutes.
The frozen yogurt bites are legit SO good! They taste like peanut butter cup ice cream. I'm addicted lol. We don't have any thick soy yogurt here so I used a little regular soy yogurt and mixed it with lactose free greek yogurt (I'm not vegan) and the consistency was perfect. I think I also might have added a little vanilla. Once frozen, leave one to sit for a few minutes before you eat it and the texture is really creamy. Definitely not "snickers" but a really good chocolate peanut butter "ice cream" treat/snack! Thank you for sharing. I will be making these often!

Part of being healthy is also having a good relationship with food. It's amazing that you are trying to consume more nutritious meals, but getting offended by someone saying that you can eat more indulgent meals is not the best attitude to have.

I added caramel latte-flavoured protein powder to the tiramisu cream and it was DIVINE! Could have easily eaten the entire bowl as is
