    Having to go to Davao City several times in a year, one of my must-go-to places are always these hole-in-a-wall grilling places that serve fresh and delicious sinugba (grilled) Tuna collars.     Ingredients:
    1 large Tuna panga
    1 c soy sauce
    1 head garlic, minced
    1/4 c calamansi juice
    1/2 c lemon lime soda (7 up)
    1 tsp ground black pepper
    3 tbs brown sugar
    1/2 c banana catsup
    1/4 tsp liquid seasoning
    Pinch of white pepper
    For the papaya radish:
    Salt
    Patis
    Sugar
    Onion
    Chili
    Ginger
    Calamansi juice
    Sliced papaya

    Mmmm...can you use an electric grill..foreman grill or broil to oven?

      Yes you can! You can use electric or gas grillers, or even broil in an oven. Just make sure to let it charr and toast a bit to get that grilled and smokey flavor! Of course charcoal is the best to really give you that deep flavor, but you can definitely do this even without!

    how long should you grill it? wait after 15 mins then flip it?

      You can keep on turning it every 5 minutes or so! It will vary depending on how hot your coals are and how big the tuna is! The one I had in the video were a bit large so it took me a while but I would turn in as often as needed. Its a great way to keep on basting the fish as well to really build the flavor!
      Just keep in mind a few things: you want to give it a bit of a good char on the outside to give it some flavor, but don't let it burn. Periodically check the meat using a fork or a small knife. The meat should be flaky but still nice, shiny and moist when its done! Thanks for watching!

      @@genegonzalezthekitchenscou3765 i get this Chef. You want to flip in every 5 minutes because you don't want to burn it as the marinade had sugar in it, which will easily burn?

      @@abcartagena19 yes too many nooks n crannies in the jaw but alsonprotects the escape of juices so flip it often to even out caramelization

      @@genegonzalezthekitchenscou3765 Thank you, Chef. Did this over the weekend and it was perfect. There was a little bit undercooked section inside that deep section of the bone but hey, tuna sashimi :) so all is good.
