- 4 steak catfish (or any other type) ~ 600g
- 1 tbsp minced garlic & shallot
- 3 tbsp sugar
- 4 tbsp fish sauce
- 2 tbsp vegetable oil
- 1/2 tsp pepper
- chopped spring onion to garnish
- ginger, hot pepper (optional)

Chị toàn muối xổi ko hà, chứ muối kiểu truyền thống toàn bị hỏng hehe
1 kg cải rửa sạch cắt bỏ vô hũ, thêm hành lá. Pha
- 4 cups nước
-1/2 cup dấm
-1/3 cup đường
-2 muổng cà phê muối .
Cho lên bếp nấu sôi. Rồi đổ nồi nước sôi này vô hũ dưa cải. Để nguội rồi đậy nắp. Hôm sau ăn được lun :D

đun nước vừa sôi đổ vào hũ lun nên cải nó cũng chín sơ sơ rồi ấy em ah. Cách này chị ko biết có phản khoa học ko, hehe, nhưng mà ăn cũng ok lắm :D
Tuna is not a good choice for this recipe as it will become too chewy. You can sub with other white fish

I put the sugar in the oil and waited for it to caramelize but then later on it started to turn hard... Im so terrible! What did I do wrong?! Everyone on here could do it and I couldn't even do that! Haha
Julie Nguyen the caramelize could harden when it meets the fish, but that's ok. Just continue cooking and it will melt again

I think you can add just a bit of lemon/lime to prevent it from hardening.
You should make some Canh Chua to go with Ca Kho. I like you're way you cook very easy to follow. Cam on you nhe.

I'm Chinese born in Vietnam and had a lot of Vietnamese dishes growing up. This dish in particular, has brought back a lot of great memories of family vacations to Vung Tau when my siblings and I were young. I've made this twice and it's absolutely heavenly! Helen's recipes are very easy to follow - tried many of your recipes and they're all great. Thanks for sharing!

I love your videos! One thing I do is make the sauce with 3 tablespoons soy sauce and 2 tablespoons fish sauce. I don't know how I ended up doing this. I don't know how authentic it is (even though I'm Viet)...but it does add complexity!

I have to look up dictionary to answer your question, Sophia! hihi Seriously I don't know the English name for many types of fish. You can make ca kho with many other kinds of fish, eg. snakehead fish: cá lóc, Goby / sleeper: cá bống; Carp: cá chép, Amur: cá trắm, Silurus/ yellow walking catfish: cá trê; keo fish (?? lol) cá kèo etc.

Hey Helen, love your cooking. I used a version of your dau sot ca tomato sauce to make my snack house soup. It makes a brilliant soup broth. Have a great day!
-You should melt the sugar under low heat. Take off the heat if you see the color turning dark.
-Tuna tends to turn chewy when you cook too long. If you use tuna, I suggest you put pineapple slices to make it tender (and also great flavor)
you are welcome! It 's ok if the caramel turns hard. It will melt again when we cook with the fish anyway :)

Cam on nhieu, em oi! Tat ca ngon qua! But one question - even after marinating for 1hr and cooking nearly an hour too - the color of my fish and eggs (i did both Ca Kho & Trung Kho in one go heh) got darker as expected outside - but both the fish and eggs are still quite light colored inside. Just curious why? Every time i make this dish it always comes out like that. Tastes great, just curious about the color, i can never get it the same like restaurants in VN...

just made this... i used twice the sugar and fish sauce to have more of the sauce left after simmer. It tasted amazing after an hour of marinating. My gf is very picky when it comes to food, especially fish, and she loved this one. Thanks Helen.

For all the kho food, can we use the nuoc mau(coconut caramel dye? i think that's what it's called) instead of putting the sugar in the pan/pot? for the caramel.

The table spoon looks like a dessert spoon. In Australia, a tablespoon is larger than that. So tea spoon holds 5ml/g dessert spoon 10ml/g and table spoon 15ml/g Will 5ml/g effect difference effect this recipe?

it's great. I would defroze and dry the fish with kitchen papers,then pickle first ,caramelize,wrap them evenly and simmer.

Just tried this recipe for my husband and he loved it. It had the right amount of sweetness and saltiness. The steps were clear and easy to follow. Will definitely be trying your other recipes! This is the first time I've seen the ngoc mau made with oil and sugar, instead of oil and water. Does that different combination characterize a kho braise, compared to water-based caramel sauce bases? Thanks for spearheading the preservation of Vietnamese culinary traditions!

Used mackerel, it worked out okay, quality of Pangasius catfish in Singapore is poor. I would use less sugar for myself.

You can use any kinds of fish as you wish to. I just use whatever kind of fish I have at home, it doesn't really make much of a difference.
