    Becky, I found your channel only recently when I got to wanting to cook some of the recipes my granny used to make. I have lived in England for years and years now (married a Brit) and watching your channel inspired me to start cooking your recipes for my neighbours. It has become a wonderful ministry for meeting people's needs and witnessing as I share your cooking. No one here has ever had any of these lovely recipes and it has opened up so much fellowship. A few days ago I shared the Gospel for several hours with some neighbours around one of your cakes. I am sure we will see people being saved! There will be people in heaven from England because of your recipes! So thank you for all your hard work and dedication to this channel. It is a blessing far beyond your lovely kitchen. Look forward to meeting you in Glory! 💗

Yes, we are finding fellowship around a cake, or a BBQ, or any thing Becky teaches us, makes it so much more relaxed when we get an opening from the Spirit to share the Gospel, or any thing about God and how He works in our lives. I hope more people will give it a try. It's so easy to do and really does make a difference. Even if it takes a while to get around to Spiritual things, it is a great way to get to know your neighbours. Recently, I had a lady on our street share a prayer request. She's not born again, so this is a big step!

    My mom used to make this as a side when I was a kid. It's delicious with steak! When I got back from deployment, she made this for me for my first home cooked meal back. Good stuff.

    I cook squash like that and add tomatoes and cut up Hillshire beef sausage links cook it in it,and put it over rice. It’s also good without rice. You’re so right about our nation and to keep praying. Becky I love your channel. I love the scriptures you share with a little message. I pray God’s blessings over you and your family!

    Such a beautiful heart felt message! You are precious and you are adored. We all will keep praying! Funny but I sat down to eat lunch today and guess what I cooked? Zucchini, eggplant, onion, tomato and a little hamburger all sautéed in my cast iron pan. I just didn’t add the sugar! Sooo good!

      You are an encourager to us with seasoning not only food but our spirits.My sister bought me your cookbook but of have yet to learn how to go back to other recipes you have had on previously because although I 've been cooking since I was 9 & now 76 you usually give a helpful hint I don't know or fogot.Also growing up in a Italian family we used up everything especially leftover veggies scrambled with eggs and if we had it throw any kind of cheese.Didn't know it when I was young I had healthier lunches than my financially better off classmates ie veg & eggs or eggplant sandwiches

    My wife had an aunt that would make zucchini squash, summer squash and tomatoes, onions and would put it all in a casserole dish and then sprinkling parmesan cheese liberally over all of it. Then bake it until done. It was delicious.

    I did not know about the pre salting and drying before you sauté. Also,Becky, thanks for letting us know to let breaded meat or veggies sit for 15 min and to have your pan and oil hot. You have inspired me many times to be thankful even when I am down in the valley. You are a strong woman and yes, you are in my prayers🙏🏻❤️🙏🏻

      Hello Becky, I have always fried my eggplants in a similar manner. I salt them on both sides; lay out on paper towels allow the salt to draw the water out. To prevent them from being too salty, I rinse and dry them. This method works great for me. I enjoy your shows and feel that you are an inspiration to so many. May God continue to bless you.

    For two years I baked bread for myself and my neighbors especially the elderly ones. I make all my own bread anyway, so it was something I could do to help out over the extended flu season. Word spread, and I was given a 50 pound bag of flour. It’s amazing how a simple loaf of bread can make people so happy.

    Fried zucchini and yellow squash with bacon, onions, and garlic. Is one of my favorite things to eat! Also sliced and tossed in olive oil, parmasan cheese and bread crumbs then baked on a sheet in the oven. God bless you and your family

      My mother in law would halve the big zucchini, hollow it out a little and then bake with bread stuffing in the oven. One time she v also put sausage meat in it.

    One year when we had zucchini growing everywhere we tried grating it like hash browns and then frying it up in little cakes or fritters. It was good that way.

      They can be used in chilli. With or without meat and/or beans. Cook based on how chewy or mushy you like.

    Two words for my squash. White pepper. It's like sugar and pepper all at once. I actually hide extra white pepper around here...I hear that it dries up zombies.

    I LOVE your idea of bacon grease!!!! I'm Italian, we make this just like you did with olive oil, onions, butter, lots of real garlic AND then put on pasta, makes a huge dinner.

    I make this often in the summer. Just before I serve it, I add some roasted peanuts (out of the shell of course!) and melt about a teaspoon of peanut butter in it. Delicious! Thanks for your videos, I love them,!

      Wonder what that tastes like? I always was told if you burn something on the pot, you remove what’s not stuck, then add a tablespoon of peanut butter and it’ll take the burnt flavor out of it! I did try it once and it was surprisingly working for me!!
      Only once though I try not to burn food

    This looks so good I love anything with squash. I like the tips on getting all of the water out of the squash. As I watch the video, I love the second chronicles that you read. We all need to hear that. And we need to pray for our country this 4th of July because our country is just not what it used to be.     It is delicious. I made this recipe a couple days ago using zucchini and yellow squash someone had brought in to work. I supplied the onion and bacon grease from a jar we had in the fridge. I think the KEY STEP is to marinate the vegetables in salt for about half an hour and then rinse thoroughly and let drain in a sieve for a few minutes. I sautéed the onion in the bacon grease until soft then added the squash and zucchini. As it came close to being done I added a little sugar and white pepper. It is really good. I am having it for lunch all this week.
    PS: I forgot to mention that I PEELED the zucchini and the yellow squash before slicing it up into bite-sized chunks.

    My mother also breaded egg plant and fried like you mentioned your squash recipe. She salted the egg plant before frying, and was delicious. I use grapeseed oil a lot because of your recommendation. Thank you for all your recent postings!

    I enjoyed this episode. My mom used to fry squash similar to this. I don't remember her adding sugar. She probably never learned that trick. But she would usually "bread" it with corn meal just a little but it never actually stuck like a truly breaded squash would do. She would also make fried okra the same way and I've never tasted anything better lol. Something about a mother's cooking, I guess. But I'm looking forward to trying this one out. It looks so yummy!
    On another note, I just want to let you know, Becky, that I count you as family too and a heavenly sister. I remember you and your family in my prayers often. I love watching you and am always encouraged by your heartfelt messages. Keep doing what you do. I know it is helpful for so many whenever they come across your videos. You never know when something is going to touch someone's heart at just the right moment, maybe months or even years after you have recorded it. Love you, sister Becky! Blessings! ❤
    P.S. I just went and found your earlier video on fried squash and it is probably more similar to mom's after seeing the ingredients you used there (going back to watch the whole video in a sec). She still didn't know your trick about making the batter adhere to it though. It's funny, I never complained because it tasted so yummy either way, lol.

    Hi there, first let me say that this was a great video - I do love me some good squash! Additionally, I appreciate you mentioning this dish doesn't really elevate your glucose level too much. I've watched your recipe videos for quite a long time now and have used many of them. However, I was recently diagnosed with type 2 diabetes, so the food options have been reduced to basically - nothing. At least, in comparison to what I've been accustomed to eating over the past 50+ years. That said, I'd like to see you touch more on recipes, perhaps specifically designed with diabetics in mind, because you have a great arsenal of ideas and an easy-to-follow approach with explaining how to prepare them. Meanwhile, keep up the great work, ma'am, and thanks for doing what ya do!

    Versatility is key to being creative in the kitchen. It will all work out, especially when you're hungry. I remember my granny cooking simple things: a little bacon grease, a dab of sugar and going to the flower bed and pinching off a pepper and tasting it raw. I was little and still remember. Little things make a difference in all aspects of life. God is good!

    My mom always dredged her squash with flour sugar makes the squash stick to the skillet. I saw your video of kool-aid pie so I made it but I used 2 packets of lemonade kool-aid it is very lemony I love it

    Squash and onions are delicious. I grew up eating this and still fix it quite often. I like alot of black pepper in mine. Add dried baby limas and corn bread and that's a great meal.
