How to Make a Striped Buttercream Cake

- We made this video for MyCakeSchool.com's member section a few years ago, but the striped buttercream trend using this technique is EVERYWHERE now! So, we decided to move it to our free tutorials section as well as here on UA-cam. Find all of the details in the posts linked below!
I love the clean look of striped buttercream, and this method is so great because it uses a tool that many cake decorators already have in their cake supplies- a cake comb!
Depending on the spacing of your cake comb, you can create cakes with wide stripes, thin stripes, and so on. The cake in this tutorial has thin stripes, and I love the look- but I later bought a comb that creates wider stripes which is nice because the process it is faster! ;0)
Have fun experimenting! If your stripes aren't perfect from the beginning, don't worry! With just a little practice, you will have your perfect stripes in no time. One of the most important steps for me is to chill the combed cake before filling in the stripes. It helps things to stay where they belong as you sweep around the cake with your bench scraper. Thanks, I'm happy that you liked it! Ours was the first tutorial that I'm aware of, it was just one of those things that I wondered about and it worked ;o)-- I'm sorry that we didn't show the bead border. When we first made this video a few years ago, it was in our member section on our site and we had a separate video for bead borders that members could refer to. However, I'm sure you can find some good tutorials if you do a quick search on bead borders. We may start posting more free videos on borders, etc. here also!

Hi there. When you say chill the cake. Do you chill it in the fridge or freezer?
Hi there, I like to chill it in the freezer after combing the frosting for about 15-20 minutes so that it gets nice and firm. (If you don't have the freezer space, you can refrigerate--it just may take a bit longer to get really firm). I'm wondering if my cake comb would do the trick it's rather smaller than the one you used but want the same cake size for this effect. My son has requested a striped Christmas cake and I want to make him happy
Hi Susan, it's worth a try! If it's just a matter of the comb not being as tall as the cake, you should be able to comb the bottom half of the cake, and then move the comb to the top half, using the combed stripes as a guide for where to place the comb as you turn it once again for the top half of the cake. Once that part is done, the rest should be pretty easy. Just chill until firm, pipe in your stripes, and scrape away the excess with a hot bench scraper. Good luck!

Is it possible with whipped cream?
You can use stabilized whipped cream. Normal whipped cream would not be easy to pipe and keep it's shape. I have a similar video on my channel making rainbow stripes on a change cake using swiss meringue buttercream but I believe you can use any icing/buttercream or even stabilized whipped cream and the technique would be the same :)

Hello, I haven't tried but I don't see why not! The combed frosted will become nice and firm when chilled due to the butter in the recipe which makes adding the stripes much simpler. Let us know how it goes!

Hello- It was an Ateco 869, but any large star tip or french star tip would work well! A Wilton 6B is another good option.
