  • Learn how I get the sharp edges on cake with buttercream. You can follow exactly the same method for ganache. You just need less time for ganache to set in the fridge unlike buttercream.

    Thank you for such a thorough tutorial. I would like to suggest something for you. They're called cake strips. They will help your cakes to be flat across the top so you don't have to cut the dome off and then have to deal with crumbs. Just soak them in water, squeeze them out and put them around your cake pan before baking.

      I have PME baking strips but as I bake at low temperatures my cakes mostly come out almost flat I don’t get many off cuts. 😊

    Wonderful tutorial!!! I know there are acrylic disks that can be used to get sharp edges, but I am amazed at how you do it with a simple white cake board piece. You are truly good at what you do.

      Judy Fleming thank you so much for the positive feedback. I know about the acrylic disc they are expensive aren’t they? Plus when you have to do same size cake cake in multiple quantity you need more than one set. I am absolutely against paying extra £s when I know the result can be achieved in cheaper ways ☺️and you know how addictive this cake making is lol my kitchen is short of space.

    I would suggest putting a non-skid mat down on the turntable to keep the cake board from sliding around while working on it.

      I had this same issue. The cake card held the cake but the card kept moving around on the turn table😞

      I have seen many of them (other cake decorators & cooks) use the bumpy sort of liner for shelves, bins, and drawers, that is like a fat mesh. They cut a square of it that sits under their cake board, and it stops the sliding issue better than tape of any kind. Plus, just wash it and reuse it tons of times, so a little 10 ft²/.9m² roll of it could last most people quite awhile!

    I see so many decorators put their crumb-coat cakes in the refrigerator. I was instructed to put in in the freezer - just 10-15 minutes does the trick without drying out the cake (as the moisture in the cake quick-freezes in the freezer and then "re-moisturizes" during thawing. It really works well!

      I don’t prefer putting the cake in the freezer. Because as soon as you will bring it out of the freezer it will start sweating really badly. The sudden extreme temperature change messes up so many things. Hence I don’t freeze, I refrigerate.

    If you used cake pan strips, you wouldn't have to shave off the top of each layer to be flat. Also, piping the icing, using a large tip, in a spiral between layers and on top greatly decreases the chance that crumbs get into you icing while spreading.
