@@jaredbaker5887 The size of the pieces of chicken, oil temps, size of the cooking vessel, etc will all play a part in how quickly the chicken gets finished. If the thermometer is reading 165 after 5-7 minutes then you are good.

The key to keeping the crispness is using hot oil. It should be hot enough that it sputters and pops when coming in contact with the seasoning. Dunk immediately and serve immediately.

@@watervillegangmember If you dunk the chicken in cold or even just warm spicy oil mixture it will get soggy. The spicy oil mixture needs to be ripping hot. Notice I dip hot oil straight out of the Dutch oven.
Very tasty recipe. My only recommendation is to scale back on the salt. 1tbsp of salt to 1 cup of flour is WAY too much. I was guzzling water all through the night and felt so bloated. Maybe 1 tsp instead.
MSG is mono sodium glutamate. It’s a seasoning that’s packed withs a salty umami flavor. In the US you will see it labeled Ajinomoto or Acccent in the supermarket.

I've always disliked chicken breast and my favourite pieces are thigh and drumstick. But when it comes to a chicken burger it's breast every time imo. I've gotten used to the bite and thigh fillets just don't have it.

Try shaking some of the excess marinade off before it hits the flour and see if that helps.
