Also, pan I am using is the best non-stick pan ever. I own an 8, 10 and 12 inch. for the omelette, I use the 10 in. 8 works as well.
1. Cook bacon to proper done-ness.
1.2 Crack all eggs into bowl and wisk. I use a fork, tends to be easier and less messy.
2. There's typically too much grease left so I set aside a portion leaving about a tsp to TBS in the pan for the eggs.
3. Add half TBS to 1 TBS of butter to melt. Heat on Medium-Low.
4. Add Garlic for about :30 then your choice of veggies. I go with onion and bell pepper.
5. Once it has sauted a bit, I add spinach and seasoning. Go-to, onion powder, cayenne (or paprika... or both) and oregano. Salt and pepper of course.
6. Saute a little till spinach is reduced, the pour while mixing, eggs in. I go with 4 which tends to feel like the max for a good omelette flip.
7. Check the edges to make sure the are not sticking. Once the bottom has set a bit, lift an edge to spill the loose egg under. Repeat on other edges as needed depending on amount of left over liquid egg.
8. Once there is very little liquid on top, FLIP! practice makes perfect.
9. Here you can flip again or immediately add cheese and fold.
10. After a couple seconds, flip one last time to finish melting the cheese and to hit the other side of the omelette.
11. Enjoy with avocado and hot sauce.!
