I'm not a fan of grapes and apples in any of my chicken salads, so I leave them out. Dude, the addition of the balsamic vinegar is masterful! I used just a touch; enough to lie in the background. So good! TY!
I add red grapes cut in half, chopped walnuts a bit of dijon and fresh dill weed. It's one of my family's favorites! I'd really like for you to make a Savarin, Religieuse & puff pastry. These aren't difficult & it really makes a difference when you make puff pastry as well as Choux pastry. For those who love to bake, being able to explore the unbelievable items that are made in kitchens elsewhere as easily as we make cakes here. It's wonderful to learn different things and your family will enjoy reaping the benefits!
I wanted to share that I have made this repeatedly for years. I had never had tarragon before but gave it a chance and this has become one of my favorites. I always look forward to this. Thank you so much for sharing this recipe.
I like how you give a recipe with precise measurements - and for almost every single ingredient go "do what you like!"... Because that's how cooking should work; do what you like, make what you like to eat. But obviously a precise recipe is probably a good starting point for people who want a bit of guidance or are perhaps not too comfortable just winging everything in a kitchen. And this sounds like a tasty recipe. (And salads are always so easy, especially because they are normally so forgiving, time-wise. No "if you don't eat it within the next 5 minutes it will be ruined!"...) I'll need to try the mayo-balsamico combo. Sounds brilliant!
I made this recipe exactly as listed, and it came out so delicious! It tasted like a fancy chicken salad you would be $20 at a hipster cafe! "Husband-approved!" this will be our go to chicken salad recipe!
I just made this last week with my own recipe. I put half sour cream and half mayo to lighten the heavy taste of mayo. I am going to put balsamic in next time. What a great idea. I also like the Harvest Chicken salad at Mcallister deli (chain restaurant) and the tarragon chicken salad at Publix (grocery store) So good.

I make my own mayo and have done so for years. It’s not as bland as the store bought stuff. It’s very easy and quick to make especially if you have an immersion blender.
I made your chicken salad with my Thanksgiving turkey leftovers! I don’t like green onions and didn’t have balsamic vinegar this time. But it was delicious! Love the Tarragon like you said! The salad is delicious on Brioche Bread or a red leaf and romaine lettuce salad. Thank you!!

I am from texas so sometimes i use Whataburger jalepeno sauce , usually in devil eggs though . My mothers usual add ins were pinapple , pecans , raisins tarragon ( lol i typed it as you said it ) cranberries are my favourite add in .
Looks like a very yummy recipe I need to try soon. Your balsamic vinegar looks more like a balsamic vinegar reduction. Thicker then regular balsamic vinegar and so good.

@@smileytow1925 What you're looking for in the ingredients is "grape must" and ALL grape must. You don't want to see thickeners, colorings ("caramel color") or red wine vinegar. Be prepared though, good balsamic is EXPENSIVE. I just made this salad and it was amazing! The balsamic...unbelievable!! I did sub out the mayo and used plain yogurt though (I hate mayo) and I think it worked really well. Thanks for the amazing recipe! Absolutely love your videos and your sense of humor!!
Yogurt 👍 yes!! I've been tummy sensitive to Mayo after turning 50. Eggs issue but plain yogurt sub works. What a refreshing salad & thanks for dried cranberries idea, John as the tartness sounds aaaaamazing! Cheers!!

Made a version of this today- however being from the UK some items arent common so had to make alterations depending on that and what i had in the fridge. (Spring onions, carrots, cucumber, sweetcorn, apple and mixed herbs from the garden. Thats also quite alot of mayo by UK standards as so i swapped about 2/3rd of it for fat free yoghurt. It was amazing. Would definitely make again!

Im more than just not a fan of mayo but i hate mayo so I tried making it one time using sour cream, onions, celery, salt & pepper instead but it was to bland. I love the idea of using Almonds & other ingredients so hopefully I can finally enjoy chicken salad. Thanks ❤

Dear Chef John, I just had to come back on to thank you for this extremely delicious Chicken Salad recipe! I made it yesterday for some of my girlfriends yesterday for lunch. I’ve been making Chicken Salad probably before you were born... Never in a million years, would I have thought to add Balsamic Vinegar! I honestly can’t believe the huge difference it makes! It’s mind blowing deliciousness is incredibly! The only thing that l did differently was, l pouched my children with a onion, celery and salt and pepper. I did however use breasts and thighs, l enjoy dark meat too. ♥️👍🏼👏🏼👏🏼👏🏼👏🏼

Actually, good balsamic vinegar IS thick like that. The crap balsamic you see in supermarkets is balsamic mixed with red wine vinegar.

What is the make of the balsamic vinegar you used? It looks thicker than the one I use.
